V-8 Spaghetti image

This is one of those recipes that came about during the Depression. My Grandma and Mom have been making this for me for as long as I can remember. To this day it it my favorite foods, and I make it by the bowl and eat it a few times a week.

Number Of Ingredients 5

1 (16 ounce) can tomato juice (I like V-8, but any will do)
0.125 (16 ounce) box angel hair pasta (you can use any size, but I like angel hair the best, use up to 1/4 of the box)
1 tablespoon butter or 1 tablespoon margarine
1/2 cup sour cream
salt

Steps:

  • Boil pasta and drain.
  • Place pasta back in pot on warm burner.
  • Add just enough tomato juice so your noodles won't stick to the pot.
  • Add salt and butter, stir until butter is melted.
  • In a separate bowl mix sour cream with tomato juice by adding a few tablespoons of tomato juice at a time until sour cream and tomato juice mixture is runny and well mixed through (this is done so the sour cream does not curtle when mixed with the hot pasta).
  • Add mixture and remaining tomato juice to pasta, stir and serve immediately (when left to sit, the pasta will soak up the juice and it will taste slightly different). I like mine best fresh, that's why I make it a bowl at a time. I also never measure anything for this recipe. All amounts can be adjusted to suit your personal preference. These measurements are simply a baseline.

This is a soup my grandmother made during the great depression. We love it on those cold wintry days. Keeps for days in fridge, just microwave to heat up and add cheese.

Number Of Ingredients 10

5 quarts water
1 -2 tablespoon salt
1 tablespoon pepper
1 tablespoon oleo
1 tablespoon italian seasoning
1/2 tablespoon garlic powder
1 (6 ounce) can tomato paste
3 cups potatoes
1 lb spaghetti noodles
1/8 cup mozzarella cheese

Steps:

  • Fill 5 qt pot with water to 1 inch from top.
  • Add diced potatoes to water, with oleo, and spices. Bring to a boil.
  • Add can of tomato paste.
  • Add spaghetti noodles broken in half. Boil till done.
  • Ladle into bowls add grated cheese or mozzarella cheese to bowl.
  • It melts, oh so good.

8 oz spaghetti cooked and drained
3 slices of bacon cut in 1" pieces
2 med onions diced
1 large can tomatoes, crushed by hand (I use 28 oz cans)
or canned tomato sauce
1-2 Tbl sugar

Steps:

  • Cook the bacon and remove from the pan. Add the onion and cook till wilted, add the tomatoes or the sauce and the sugar. Reduce the heat and simmer about 15 min. Add the cooked pasta to the pan, and the reserved bacon. Heat thru, tossing then serve.
