3 tbsp white vinegar
1 cup all-purpose flour
2 tbsp white sugar
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 whole egg
2 tbsp melted butter
cooking spray
or any pancake syrup maple syrup

Steps:

  • Mix milk and vinegar in a medium bowl and allow to sour for 5 minutes.
  • Sift together flour, sugar, baking powder, salt and baking soda in large mixing bowl.
  • Whisk egg and butter into soured milk.
  • Fold flour mixture into soured milk and whisk until clumps are gone. Do not overmix.
  • Allow batter to rest in a chilled area for at least 4 hours, preferably overnight.
  • Heat large skillet over medium heat and coat with cooking spray.
  • Pour ¼ cup of batter onto the skillet and cook until surface is bubbly.
  • Flip with spatula and cook until browned on other side.
  • Serve with maple syrup (if using) and butter.

2 tablespoon granulated sugar (($0.01))
2 teaspoons baking powder (($0.04))
1/4 teaspoon salt (($0.02))
1/2 teaspoon baking soda (($0.01))
1 large egg, slightly beaten (($0.08))
3 tablespoons canola oil (vegetable oil works too) (($0.09))
1 1/2 cups buttermilk (($1.18))

Steps:

  • In a large mixing bowl, combine the flour, sugar, baking powder, salt, and baking soda until well mixed.
  • In another bowl whisk together the egg, oil, and buttermilk until blended.
  • Add the egg mixture to the dry mixture and whisk until combined and no flour streaks remain. Do not overmix. The batter will be lumpy and thick.
  • Let the batter rest for about 5 minutes while you preheat your skillet to medium heat (about 350 degrees F).
  • Scoop the batter by the 1/4 cup measures and round out into circles. Cook for about 1-2 minutes per side or until both sides are golden in color.

2 Cups flour
2 Eggs
1 Tablespoon baking powder
1/3 Cup granulated sugar
1/3 Teaspoon salt
1 1/2 Cup buttermilk
1/3 Cup butter (melted)
1 Teaspoon vanilla extract

Steps:

  • In a bowl whisk together the flour, baking powder, granulated sugar, and salt. Set aside.
  • In a separate bowl whisk the buttermilk, melted butter and eggs until combined.
  • Pour the wet ingredients over the dry ingredients and with the help of spatula stir until just barely incorporated. Let the batter rest for 30 minutes if you have the time.
  • Heat a skillet over medium heat. Once it's hot bring the heat down to low. Spread with butter or a bit of oil.
  • Pour around 1/2 cup batter on the hot skillet and cook for 1 to 2 minutes or until small bubbles form on top. Flip the pancake and cook for 1 more minute or until golden. Repeat the process with the rest of the batter.

Substitute 1/4 cup malt powder for 2 Tbsp sugar.

Steps:

  • Sift together whole wheat flour, sugar, baking powder, and salt. In separate bowl, beat together milk, egg and oil Pour wet mixture into dry mixture. Stir just enough to blend Let pancake mix rest in refrigerator at least 10-15 minutes. Pour 1/4 cup onto prepared skillet.
