DENISE'S LOUISIANA HUSH PUPPIES & FRIED CATFISH
These hush puppies have a cake like consistency (not your little ball of dry cornmeal). This is my base recipe, but it can be altered to your own taste, such as less sugar and more jalapeño. The catfish recipe is my husband's, and is more of an ingredient than a recipe, but this is our most requested meal when we're having friends over, so I thought I'd add it. I usually also serve with french fries, onion rings and fried mushrooms. Not the most healthy meal in the world...but oh, so good.

Steps:
- HUSH PUPPIES:.
- Heat oil to 350°F.
- Stir together all ingredients.
- Drop by tablespoon into hot oil (Hint: drop close to oil to prevent getting a bunch of little hush puppies).
- When hush puppies float and are golden on one side, flip and brown other side.
- Remove from oil and place on a paper towel lined cookie sheet, in a low oven.
- FRIED CATFISH.
- Rinse catfish fillets in cold water.
- Drain well.
- Salt and pepper the fish. (At this point other seasonings can be added, such as garlic, Old Bay Tony's, etc).
- Dredge fish in Seasoned Fish Fry.
- Deep fry in hot oil.
CAJUN HUSH PUPPIES
Deep fried cajun hush puppies make the perfect appetizer or side dish. This recipe has the perfect amount of flavor.

Steps:
- First, start by heating up enough oil in a pot to submerge the hush puppies. The oil temperature should reach 365 degrees F before you can start frying.
- In a bowl, combine the flour, corn meal, salt, granulated garlic, cajun seasoning, baking powder, baking soda and sugar. Whisk together to mix.
- Add the egg to the corn meal mixture and pour in the buttermilk and oil. Whisk together to combine.
- Finely grate or mince the onion.
- Fold the onion into the batter with a spatula so you don't over mix.
- Scoop 2 tbsp of the batter using a cookie scoop and drop it into the hot oil. Do not over crowd the pan, otherwise the temperature of the oil will drop. I usually fry about 5 at a time but this could vary depending on the size of your pot.
- Fry the cajun hush puppies for 3-4 minutes or until you achieve a golden brown color on all sides. Flip them throughout the process so that all sides cook evenly.
- Transfer them to a paper towel lined plate to soak up the excess oil.
- Finally, garnish with fresh parsley if desired and serve.

FRIED CATFISH
This recipe is from Paul Prudhomme's Louisiana Kitchen, published back in the early '80s. Serve it with his hushpuppies, also being submitted. Fry the hushpuppies first, and set aside while frying the catfish,

- Thoroughly combine seasoning mix ingredients in a small bowl and set aside.
- In a cake pan, combine 1-1/2 Tsp of the mix with 1 cup flour.
- In another pan, combine 2 Tbsp seasoning mix with the remaining 1-1/2 cups flour and the cornmeal and corn flour.
- In a third pan, beat together the milk, eggs, and mustard.
- Reheat the oil used for the hushpuppies to 350 degrees F.
- Meanwhile, sprinkle the remaining seasoning mix on both sides of the fish fillets, and let set for at least 5 minutes.
- Dredge in flour first, then coat with egg mixture.
- Dredge in cornmeal mixture, pressing the mixture firmly into the fish with your fingers.
- Shake off excess coating.
- Fry the fish in hot oil until browned and crisp.
- Do not crowd while cooking.
- Drain on paper towels.
- Let oil reheat to 350 degrees F before cooking next batch.
- Serve immediately with hushpuppies.

SOUTHERN FRIED CATFISH WITH HUSH PUPPIES
Southern hospitality just wouldn't be the same with this delicious dish. Every southern woman knows how to fry up a "mess" of good catfish and though there are several recipes for the batter it all boils down to deep frying those babies a deep golden brown. And you can't have fried catfish with the hush puppies to go with it....

- 1. HUSH PUPPY BATTER: Combine cornmeal, flour, baking powder and salt in medium bowl. Add milk, onion and egg. Stir until well combined. Set aside. Mixture will be a little thick.
- 2. Rinse catfish and pat dry with paper towels. Combine cornmeal, flour, salt and red pepper in shallow dish. Dip fish in cornmeal mixture. Heat 1" of oil in large, heavy saucepan over medium heat until oil registers 375 degrees.
- 3. Fry fish, a few pieces at a time, 4 to 5 minutes or until golden brown and fish flakes easily when tested with fork. Adjust heat to maintain temperature. Drain fish on paper towels.
- 4. TO MAKE HUSH PUPPIES: Drop batter by tablespoonfuls into hot oil. Fry, a few pieces at a time, 2 minutes or until golden brown. Makes about 24 hush puppies.
CATFISH PARLOUR HUSH PUPPIES
In Austin, Texas, Catfish Parlour is the place for all-you-can-eat fried catfish. But before you get to the fish, you recieve a bowl of freshly fried hush puppies on your table with two dipping sauces: tartar sauce, and jalapeno tartar sauce. I can usually eat a bowl all by myself, and love both the regular and jalapeno tartar sauce. Recipe posted by request in the Austin American-Statesman a million years ago. The recipe is cut down from the restaurant proportion. The recipe makes a large number determined by how big the little puppies are rolled out. Instead of being round, Catfish Parlour's hush puppies are rolled out like cigarettes in little tubes.

- Place one gallon of water in a large pot.
- Add the sugar,slat, garlic and onion.
- Bring to a rolling boil.
- Turn the flame off and stir in the corn meal. The mush will be very stiff, so stiff that it is difficult to stir.
- When mixed, scrape the mush out in a dishpan, flatten out on top and allow to cool.
- Later, if a skin has formed on top, peel it off and discard it.
- Knead the mush until pliable and easy to work with.
- Pinch off whatever size pieces you want the hugh puppies to be and form them by hand just as you would do with modeling clay. Make each hush puppy out of a rope or tube you've rolled between your palms. I like mine the length of about 4 inches, and the diameter of a kindergartner's chunky pencil.
- Deep fry at 350 degrees until they are hard on the outside.
- Do not put too many in the fryer at once because the oil will get too cool.
- Prep time includes the time for the mush to cool.
