AMERICAN CHOP SUEY
Based on a recipe from Guy Fieri�s book, Diners, Drive-ins and Dives: an All-American Road Trip�With Recipes! This celebrates Red Arrow Diner in Manchester, New Hampshire, a landmark diner established in 1922.

Steps:
- In large pot over medium heat melt butter. Add onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic for about 1 minute. Stir in ground beef and cook, stirring and breaking up meat chunks with a spoon. Cook until meat is done, about 7 minutes until no longer pink. Toss herbs and pepper over the meat mixture, add salt to taste, and stir until well mixed.
- Add canned tomatoes with their juices, tomato sauce, tomato paste, and tomato juice. Add sugar to taste. Simmer gently while you prepare the pasta.
- Bring a large pot of salted water to the boil over high heat. Add macaroni and cook until al dente, stirring occasionally. Drain the macaroni and add to the chop suey.
- Serve hot.
MIMI'S AMERICAN CHOP SUEY
When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper.

- In a medium pot (large pot if you double the recipe)add the onion and cook until translucent.
- Add the bacon and cook until the bacon is slightly browned, DO NOT DRAIN, that is where the flavor comes from.
- Add the ground beef and cook until browned.
- Add the crushed tomatoes along with one equal can of water and mix very well gently.
- Allow to come to a slight boil then turn heat down to medium low.
- Cook for 3 hours, stirring every 20 to 30 minutes uncovered.

- Boil elbow macaroni until just under cooked or al dente and drain.
- Chop onion and green pepper.
- Brown ground beef in a skillet with chopped onion and green pepper. Do not drain all of the grease. It brings out a lot of flavor.
- Combine macaroni, beef mixture, tomato soup, tomato sauce, and diced tomatoes in large pot.
- Simmer on very low heat and add salt, pepper, and other spices to taste. I add a little bit of garlic powder and italian seasoning for more flavor.
- Serve immediately or store for later.

- Drain mushrooms and reserve about 1/4 cup of juice.
- Heat oil in a large skillet.
- Add beef, onion and celery, and saute until lightly browned.

- 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. - Cook macaroni according to package directions.
- Spray a large skillet with a cooking spray like pam.
- Add about two tablespoons Olive Oil.
- Brown the ground beef.
- Add the peppers, onions, celery, garlic and mushrooms and continue to cook till vegetable are almost tender.
- Add the tomato soup, diced tomatoes, wine and the spices.

- Fill a large stock pot with water, salt it and set it to boil
- Heat a medium stock pot on medium heat, add olive oil and heat that up
- Add onion and pepper and sauté for 10 minutes, stirring every few minutes, add garlic and sauté for 2 additional minutes. Take off heat and set aside
- Add elbows to boiling water and cook for 8 minutes (or until they are done), but as you're doing that. . .
- Heat a large sauté pan on medium, add 1 tablespoon olive oil and add ground beef and break up to little pieces. Add oregano, basil, parsley, salt and Worcestershire sauce. Sauté for 5 - 8 minutes
- Add the tomatoes to vegetable mixture
- Add ground beef to tomato mixture
- Drain elbows and dump them in a large stock pan
- Add the tomato-meat mixture in with the elbows and mix until incorporated
- Serve

- In a large pan with olive oil, saute onions and red peppers until tender.
- Crumble ground beef, add to pan, cook until done.
- Once done, drain any excess fat using a colander.
- Once drained, place back in pan.
- Crush whole tomatoes and add to ground beef mixture.
