Cheese-Stuffed Burgers image

A few special touches turn these burgers into a memorable meal. Don't forget the sauteed mushrooms.

3 pounds ground beef chuck
2 tablespoons plus 2 teaspoons Worcestershire sauce
Coarse salt and ground pepper
4 ounces blue cheese (or other soft cheese, such as Brie)
Oil, for grates
8 rolls or buns, split
2 cups packed baby spinach
2 beefsteak tomatoes, cut into 8 slices
Sauteed mushrooms
Grainy mustard (optional)
Roasted Red-Pepper Sauce

Steps:

  • Heat grill to medium-high. In a large bowl, gently fold together beef, Worcestershire sauce, 1 tablespoon salt, and 1 teaspoon pepper. Form into 8 equal-size mounds.
  • Shape cheese into 8 equal-size disks. Press a small well in the center of each beef mound. Place cheese in well; wrap beef around cheese, pinching to seal.
  • Lightly oil grates. Place burgers on grill; cover. Cook until grill marks are visible on first side, 4 to 6 minutes. Turn burgers with a spatula; cook until grill marks are visible on other side and meat is just slightly pink in the middle, 4 to 6 minutes more for medium-rare.
  • To serve, layer bottom roll halves with spinach, burgers, tomato, and mushrooms, if using, dividing evenly. Spreadtop roll half with mustard and Roasted Red-Pepper Sauce, as desired.

Cheese-stuffed burgers (a.k.a., Juicy Lucy or Jucy Lucy) are an iconic burger invented in a Minneapolis bar in the 1950s. Here is our version of this cheesy goodness.

Number Of Ingredients 8

2 pounds ground chuck or ground beef
1 tablespoon Worcestershire sauce
1 teaspoon seasoning salt
6 (3/4-ounce) slices * Land O Lakes® Deli American
6 hamburger buns, split
Land O Lakes® Butter with Canola Oil
6 tomato slices
1 ripe avocado, pitted, peeled, sliced

Steps:

  • Combine ground chuck, Worcestershire sauce and seasoning salt in bowl. Shape mixture into 12 (4-inch) square patties. Place patties onto waxed paper.
  • For each burger, place 1 slice cheese on top of 1 patty; top with another patty. Using fork, crimp edges of patties together to seal. Refrigerate 30 minutes or until firm.
  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Place patties onto grill. Grill 6 minutes. Turn burgers; continue grilling 4-5 minutes or until internal temperature reaches 160°F or desired doneness.
  • Meanwhile, spread cut bun surfaces with Butter with Canola Oil. Grill, cut-side down, 2-3 minutes or until buns are golden brown.
  • Top bottom half of bun with 1 slice tomato, burger, avocado slices and top half of bun.

2 1/2 lb 1.14 kg (1.135 kg) 90% extra lean ground beef
1 1/4 cups 310 mL bread crumbs
1 egg
1 tsp 5 mL onion salt
1/2 tsp 3 mL Worcestershire sauce
1/2 tsp 3 mL black pepper (optional)
1 1/4 cups 310 mL shredded Cheddar cheese
1 can (284 mL) CAMPBELL'S® Condensed Cream of Bacon Soup
10 hamburger buns, split and toasted

Steps:

  • Mix beef with 1 cup (250 mL) of the bread crumbs, eggs, onion salt, Worcestershire sauce and pepper, if using. Shape into 20 1/4-inch (5 mm) thick patties.
  • Combine half of the soup, 3/4 cup (185 mL) of the cheese and remaining bread crumbs. Spoon onto centres of 10 patties. Top each with second patty, carefully pinching edges and any cracks together to seal. Cover loosely and refrigerate 15 minutes.
  • Meanwhile, preheat grill to medium heat. Grill, covered, 7 minutes per side until cooked through (170°F/77°C). Spoon remaining soup onto patties; sprinkle with remaining cheese. Close lid and grill 1 minute until cheese is melted. Serve burgers in buns with your favourite burger toppings.

Wonderful stuffed burger that can be easily changed to suit different tastes. My kids who normally don't have onions on their burgers REALLY enjoyed these. We served with french fries and root beer floats!

3 pounds ground beef
¼ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons barbeque sauce
½ teaspoon garlic powder
½ pound bacon, cut into 1/4 inch pieces
1 medium onion, finely chopped
¾ cup shredded Cheddar cheese
6 hamburger buns, split

Steps:

  • In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
  • Prepare a grill or large skillet for medium heat.
  • As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
  • Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

Enjoy the end of summer with a burger with kick with The Labor Day Burger, my own creation. The bacon grease acts as a 'glue' and will cook out on the grill, leaving the flavor in the beef. Excellent with grilled portobello caps! Note: this is a flammable burger due to the grease. It requires constant attention when grilling due to flare-ups.

6 slices bacon
1 tablespoon bacon drippings
1 pound ground beef
1 cup dry bread crumbs
1 tablespoon red pepper flakes
1 pinch freshly ground black pepper
½ cup shredded Colby-Jack cheese, or more to taste
cooking spray
2 slices Colby-Jack cheese
2 thin tomato slices
2 slices avocado
2 hamburger buns, split

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned but not totally crisp, about 8 minutes. Drain on paper towels. Retain 1 tablespoon bacon drippings.
  • Mix ground beef, bread crumbs, red pepper flakes, black pepper, and retained bacon drippings in a bowl until thoroughly combined; divide meat mixture into 4 equal portions. Form each portion into a large patty, making them as thin as possible. Sprinkle shredded Colby-Jack cheese onto 2 of the patties, leaving an edge about 3/4 inch wide uncovered. Place second patty onto the cheese and press the edges of the patties together to create 2 cheese-stuffed burgers. Place stuffed patties into freezer to chill slightly, about 10 minutes.
  • Preheat an outdoor grill for high heat.
  • Spray the grill grate with cooking spray and place burgers onto grill; turn heat to low, place lid over grill, and cook until outsides of burgers are lightly charred and cheese has melted, about 10 minutes per side. Maintain grill temperature at about 300 degrees F (150 degrees C). Use a spray bottle of water to control flames; flames should just lightly contact the bottoms of the burgers to create a slight char. After the first flip, place 3 partially-cooked bacon slices onto each burger.
  • About 2 minutes before burgers are done, place a Colby-Jack cheese slice onto each burger; top with tomato and avocado slices and transfer burgers to plate to rest for 1 or 2 minutes. Serve burgers on hamburger buns.
