QUICK & EASY TOFFEE BARS
These toffee bars are scrumptious for those who need a nut-free and gluten-free treat. They resemble toffee candy but have a cookie-like texture. YUM! These bars are covered in chocolate and topped with English toffee bits, making them the perfect sweet for family and friends to enjoy this holiday season.

- 1. Preheat oven to Bake at 325 degrees F. ( 165C). 2. In one medium-size mixing bowl. Blend butter, sugar, egg yolk, vanilla, and salt until creamy and well combined. 3. Gradually add in the gluten-free flour, and use your fingers to finish blending the flour into the butter mixture. the dough will be crumbly. 4. Spread the dough on the bottom of your 11 x 9 baking dish and into one single layer. Use your fingers to pat it down evenly and into the corners. 5. Bake for 15 to 18 minutes, until the edges are golden brown. When it's ready, turn off the oven. 6. Remove and scatter with chocolate chips on top. Next, return the baking dish back into the oven for at least 1 minute, or until the chocolate chips are glossy in appearance. Remove from oven, and use a spatula or the back of a spoon to spread the melted chocolate evenly in one single layer. 7. Sprinkle with English toffee bits on top. Place the baking dish aside on your counter to cool completely before cutting into bars. Or, to speed the cooling process, transfer into your refrigerator to chill for at least 20 to 30 minutes. 8. Store in a sealed container. Best served at room temperature. Yields: 24 to 28 toffee bars

DELICIOUSLY EASY TOFFEE-NUT BARS
I found this in a Hershey's cook book and decided to try it not knowing if i really liked toffee- they were amazing. I was so suprised how easy this recipe was. My dad told me that i wasn't allowed to make them anymore because they were so good. =] I used a half cup of walnuts and a half cup of pecan and it turned out great!

Steps:
- Heat oven to 350 degrees (F).
- Combine flour, brown sugar, and butter in a large bowl; mix until fine crumbs form, though a few large crumbs may remain. Press into an ungreased 13x9-inch baking pan. Sprinkle nuts over crust and set aside to prepare toffee topping.
- In a small saucepan, combine brown sugar and butter. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir 30 seconds. Pour over crust immediately.
- Bake 20 to 22 minutes or until topping is bubbly and golden. Remove from oven and sprinkle chocolate chips over top, if needed, press gently onto surface.
- Cool completely and cut into bars. Enjoy!

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

- Preheat the oven to 350°F. Grease a 9x13 inch baking dish with cooking spray, set aside. With a hand mixer and a large bowl or in the body of a stand mixer with the paddle attachment, mix the butter, brown sugar, and egg yolk together until fluffy, about 3 minutes on medium speed. Add in the flour, vanilla, and salt, mix until just combined, scrape down the sides as needed.
- Press the dough into the greased baking dish. To make this easier, lightly wet your fingertips and press the dough into an even layer. Bake for 20-25 minutes, the crust will puff up and it is ready when it is golden brown along the edges. Let sit 5 minutes so the crust can deflate. Add the chocolate chips on top and wait until they are melted, you know they are ready when the chocolate turns glossy, about 5 minutes.
- Smooth out the chocolate with a spatula to coat the crust, I like to leave a border of crust for presentation, but that is optional. Sprinkle the toffee bits on top evenly. Let cool completely and cut into portions.
