Steps:
- In small bowl, combine the salsa, mayo, and green onions; mix well.
- Evenly divide the turkey over 4 slices of bread, then place a slice of cheese over each.
- Spread salsa mixture evenly over the cheese, then distribute sliced jalapeno peppers over the salsa mixture; top with remaining bread.
- In a large skillet, melt 2 T butter over low heat.
- Place the sandwiches in the skillet and cook for 2-3 minutes.
- Add more butter if needed, turn the sandwiches over and cook another 2-3 minutes, or until cheese is melted and bread is golden brown.
- Serve immediately.
OVEN LOADED TURKEY MELTS
This is a delicious recipe to use up any leftover turkey from the holidays! You can also make this using deli-sliced turkey. I have use provolone cheese in place of the mozza cheese. You can prepare these melts hours in advance, cover with plastic wrap and refrigerate until ready to bake.

Steps:
- In a bowl stir together the avacado with mayonnaise and garlic until well combined; season lightly with salt and pepper to taste.
- Divide and spread the mixture onto one side of the 4 bread slices.
- Top evenly with turkey slices, 1-2 tomato slices, 1-2 onion slices/rings, 2-3 bacon slices and lastly the mozza cheese slices (1 or 2 slices).
- Top with remaining bread slices.
- Carefully spread soft butter onto the outside of each sandwich.
- Place the buttered sandwiches on a baking sheet, then place a second baking sheet on top of the sandwiches.
- Bake at 400 degrees for about 20 minutes or until golden.
- Slice in half or into fourths.
- Delicious!

LEFTOVER DELI TURKEY MELT
We often on the weekends get some fresh deli meats, cheeses and fresh rolls. Its a great meal. But the nest day no-one wants the leftovers. But, this they like! This is so simple! The next day this is what we do. The measurements are not exact since it depends upon how thick/large the slices are and how large the rolls are. I like fluffy water rolls or soft rolls for this. This is the simple version which I like best but you can add tomato, lettuce, pickles etc...

Steps:
- 1. Slice the roll in half then very lightly brown in the toaster oven ( set the oven on "toast" and watch).
- 2. Place one slice of swiss on top of each roll half then put back in the toaster oven. Toast until the cheese is just melting and bubbly.
- 3. Remove the halves and fold 2 slices of turkey onto each side.
- 4. Top turkey with mayo and any other fixings. Place the two halves together to form a sandwich.
- 5. Squash down sandwich and cut into 2 pieces.

- In a large cast-iron or other heavy skillet, saute onions in 1 tablespoon butter until tender; remove and set aside. Spread barbecue sauce on 4 slices of bread. Layer each with 1 slice of cheese, 2 slices each of bacon and turkey, pickle slices, onions and another slice of cheese. Cover with remaining slices of bread. , In the same skillet over medium-low heat, melt remaining butter. Cook sandwiches on both sides until golden brown and cheese is melted. Cover the skillet during the last few minutes to help melt cheese if necessary.
