HOMEMADE ITALIAN MEATBALLS
Here's a recipe for classic, Homemade Italian Meatballs. Serve them for dinner topping a plate of spaghetti and send the leftovers with your kids for lunch to make a meatball sub sandwich.

Steps:
- In a large bowl, mix all of the ingredients together.
- Roll into 1 1/2" balls and place them closely together in 9x13 pans that have been sprayed with cooking spray. **You can place a wire rack on the baking sheet and bake the meatballs on the rack so that the fat drips down if you'd like.**
- Bake at 350 degrees for 35 minutes, or until the meatballs are cooked through.
- Serve the meatballs immediately with sauce and spaghetti, put them in the slow cooker along with sauce to have them simmer, or freeze the meatballs in Ziploc bags to use another time.
- If you freeze the meatballs, allow them to cool completely before packaging them.

CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

- In a large skillet, heat oil over medium heat. Add onion and saute for 5 minutes. Add garlic and stir. Remove from heat.
- In a large bowl combine the egg, parmesan cheese, ground beef, tomato sauce and parsley. Add the onion garlic mixture and mix until the ingredients are blended.
- Roll the mixture into small balls, about 1 1/2" in diameter. Fry in a bit of oil or, if you prefer to bake them, place them on a baking sheet and bake in preheated 350ºF (180ºC) oven for 20 minutes or until cooked through.
- Add them to Italian tomato sauce and heat through to serve.

- Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
- Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.

- Place cubed white bread and evaporated milk into a large mixing bowl, tossing to combine. Allow to sit while you prepare other ingredients. Bread will start to disintegrate.
- Add micro grated onion and garlic to bread, mix well. Add parsley through ground beef bouillon, mixing until combined.
- Working in 3 rounds, add 1/3 of each type of meat, blending with your fingers until it just comes together until everything is combined.
- Preheat oven to 400 degrees.
- Take a good amount of meat and toss back and forth between your hands to pack. Meatballs should be approximately 2-3 inches wide (I like big meatballs!)
- Place onto a broiler pan, make sure meatballs are not touching. Bake for 20 minutes, placing on broil for the last 2 minutes of cooking.
- Remove and either allow to cool. Freeze or simmer in your favorite marinara sauce.

- Heat the oven to 180°C.
- Soak the breadcrumbs in the milk.
- Lightly fry the shallots, garlic and chilli. When they have sweated down add the white wine and reduce for a minute or 2 until it has almost evaporated. Add the tomatoes along with the basil, oregano and finally the olives. Simmer to reduce (this should take 5-10 mins).
- While the tomato sauce is cooking, make up the meatballs: Into the mince add the parsley, parmesan, garlic and add soaked breadcrumbs, mix well. Season with a little salt and pepper.
- Shape into walnut sized balls and lightly coat the meatballs in the flour and fry in hot olive oil until golden. Add the meatballs to the tomato sauce and bake in the oven for 10 minutes.
- Serve with basmati rice, or choice of pasta.

- Preheat your oven on BROIL to 300* F.
- First, you start off by getting your ingredients ready to go.
- Take the ground beef ( or whatever you are using), and put it in a medium size mixing bowl.
- Then, add your bread crumbs, thyme, and parsley with your ground meat and mix together with your hands.(it gets messy).
- Now, mince your garlic and add that to the meat as well as add your salt and pepper (if you desire).
- Last, add 1 teaspoons of EVOO (Extra-Virgin olive oil) and mix all together.
- Make sure your oven is ready to go and make sure the temp (300 degrees) and your broiler is on.

- In a large bowl mix together the ground beef, egg, bread crumbs, parmesan cheese, minced garlic, chopped parsley, salt and pepper. Slowly add the milk until you have a soft compact mixture. Form the mixture into small balls.
- In a large pan add the olive oil and the meatballs, brown on all sides turning often. Cook for approximately 5-6 minutes. - In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
- In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it).
