CHEF JOHN'S ITALIAN MEATBALLS

Chef John's Italian Meatballs image

Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

Provided by Chef John

2 tablespoons grated Parmesan cheese

DELICIOUS MEATBALLS

Delicious Meatballs image

This delicious meatball recipe comes from my Italian grandfather. Serve with your favorite marinara sauce, freshly grated Parmesan cheese, and a side of veggies for a carb-conscious meal!

Provided by stefychefy

Categories     World Cuisine Recipes     European     Italian

Time 1h5m

Yield 8

Number Of Ingredients 12

3 tablespoons olive oil, divided
1 onion, minced
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 pound medium ground beef
1 pound lean ground pork
2 eggs, beaten
1 cup bread crumbs
1 cup freshly grated Parmesan cheese
1 cup milk
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
  • Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.
  • Combine beef, pork, bread crumbs, Parmesan cheese, milk, onion mixture, salt, and pepper in a large bowl. Mix together using your hands as quickly as possible as overmixing can produce a tough meatball.
  • Form 1 1/2-inch meatballs and place on the prepared sheet.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes, turning them over after 15 minutes.

BEST ITALIAN MEATBALL RECIPE

Best Italian Meatball Recipe image

Best Italian Meatballs uses a blend of meat, spices and one special ingredient to make the tastiest, fork-tender meatballs you've ever seen!

Provided by Jessica Formicola

Categories     Main Course     Main Dish

Time 45m

Number Of Ingredients 12

1 1/2 cups white bread (crusts removed and cut into 1/2 inch cubes)
2/3 cup evaporated milk
1/2 white onion (micrograted)
4 large garlic cloves (micrograted)
2 tablespoons flat leaf parsley (minced)
2 eggs (lightly beaten)
2 teaspoons coarse salt
1 teaspoon freshly ground pepper
1 teaspoon ground beef bouillon
1 pound ground beef (broken into 1 inch pieces, minimum of 80/20 mix)
1 pound ground pork (broken into 1 inch pieces)
1 pound ground veal (broken into 1 inch pieces)

Steps:

  • Place cubed white bread and evaporated milk into a large mixing bowl, tossing to combine. Allow to sit while you prepare other ingredients. Bread will start to disintegrate.
  • Add micro grated onion and garlic to bread, mix well. Add parsley through ground beef bouillon, mixing until combined.
  • Working in 3 rounds, add 1/3 of each type of meat, blending with your fingers until it just comes together until everything is combined.
  • Preheat oven to 400 degrees.
  • Take a good amount of meat and toss back and forth between your hands to pack. Meatballs should be approximately 2-3 inches wide (I like big meatballs!)
  • Place onto a broiler pan, make sure meatballs are not touching. Bake for 20 minutes, placing on broil for the last 2 minutes of cooking.
  • Remove and either allow to cool. Freeze or simmer in your favorite marinara sauce.
  • If you've tried this recipe, come back and let us know how it was!

Provided by Chef Punchin

Categories     One Dish Meal

Time 50m

Yield 3-4 serving(s)

Number Of Ingredients 17

200 g minced beef
200 g ground pork
1/2 bunch flat leaf parsley
2 tablespoons grated parmesan cheese
2 garlic cloves, chopped
3 tablespoons fine breadcrumbs
milk, enough to cover breadcrumbs
plain flour
2 (400 g) cans chopped tomatoes
3 garlic cloves, halved
1/2 red chili pepper, finely sliced

1 tablespoon chopped fresh oregano
sea salt
fresh ground black pepper
olive oil

Steps:

  • Heat the oven to 180°C.

  • Lightly fry the shallots, garlic and chilli. When they have sweated down add the white wine and reduce for a minute or 2 until it has almost evaporated. Add the tomatoes along with the basil, oregano and finally the olives. Simmer to reduce (this should take 5-10 mins).
  • While the tomato sauce is cooking, make up the meatballs: Into the mince add the parsley, parmesan, garlic and add soaked breadcrumbs, mix well. Season with a little salt and pepper.
  • Shape into walnut sized balls and lightly coat the meatballs in the flour and fry in hot olive oil until golden. Add the meatballs to the tomato sauce and bake in the oven for 10 minutes.
  • Serve with basmati rice, or choice of pasta.

  • In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
  • In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( I form the meatballs into the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides.
  • While meatballs are browning, in a separate, large deep pan add the olive oil, the tomato puree (or peeled tomatoes), spices and water, stir until well combined. Add the browned meatballs. Over medium heat, heat to boiling, then lower heat to medium low and simmer for approximately 20 minutes (covered), then raise the heat to medium, (leave pan slightly uncovered 1/3 uncovered) and cook an additional 20 minutes, until sauce has thickened and meatballs are cooked through. Serve immediately, top with freshly grated parmesan cheese if desired. Don't forget some crusty Italian bread to soak up the delicious sauce. Enjoy!
