Decadent Healthy Chocolate Truffles image

These easy 4-ingredient chocolate truffles are loaded with sweet coconut, crunchy hazelnuts, and warm cinnamon for a rich and indulgent holiday treat.

10 oz ghiradelli chocolate chips (60% cocoa)
7 tablespoons full fat coconut milk
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 cup unsweetened coconut flakes, finely chopped
1/4 cup hazelnuts
3 tablespoons cocoa powder

Steps:

  • Add chocolate chips, coconut milk, vanilla extract, and ground cinnamon to a bowl.
  • Put in microwave and heat up for 30 seconds. Remove and stir. Microwave another 30 seconds, stir until smooth and chips are melted.
  • Cover and place in refrigerator for 2-3 hours.
  • Using a cookie scoop or a tablespoon, scoop out small balls and try to form into smooth balls. Place on parchment paper lined baking sheet.
  • Add hazelnuts to a pan, heat over medium high heat and toast for 2-3 minutes minutes.
  • Add hazelnuts to a food processor and blend until finely chopped. Remove and place in a small bowl.
  • Roll individual truffles in cocoa powder, coconut flakes, or hazelnuts.
  • Serve!

½ cup smooth peanut butter
¼ cup cocoa powder
¼ cup honey
¼ cup coconut oil
1 teaspoon butter
1 teaspoon vanilla bean paste
¼ cup unsweetened coconut flakes, or more as needed

Steps:

  • Combine peanut butter, cocoa powder, honey, coconut oil, butter, and vanilla bean paste in a saucepan over low heat; cook, stirring constantly, until melted and smooth, 3 to 5 minutes. Remove saucepan from heat and transfer peanut butter mixture to a bowl.
  • Refrigerate mixture, stirring every 5 minutes, until truffle mixture is firm yet sticky and soft enough to shape, about 15 minutes.
  • Pour coconut flakes into a bowl. Drop truffle mixture, about 1 teaspoon per truffle, into coconut and roll to coat. Refrigerate until firm, about 15 minutes.

1/4 cup chia seeds
1/4 cup flaxseed meal
1/4 cup cacao powder
1/4 cup agave syrup or maple syrup
2 tbsp almond milk
Coatings:
Cacao powder
Chia seeds
Almond flour
Unsweetened shredded coconut

Steps:

  • Place all the truffle ingredients in your food processor and pulse until the mixture comes together. Transfer the mixture to a small bowl.
  • Roll the mixture into small balls and coat them with either almond flour, cacao powder, chia seeds, or shredded coconut.
  • Store in an airtight container for up to 5 days.

  • Add oats, dates, banana, almonds, and coconut flakes to food processor and blend until a sticky and mold-able dough forms. If dough is too dry or crumbly, add more banana.
  • Roll dough into balls with an almond on the inside, and refrigerate for 1-2 hours.
  • Melt vegan chocolate chips in the microwave or in a double-boiler. Roll balls in chocolate using two forks and top with coconut flakes and almonds. Refrigerate until chocolate hardens. #Spoontip: For chocolate coating that won't melt on your fingers, temper the chocolate by heating it to 125°F in a double boiler, then cooling to 85°F by adding more chocolate chips and stirring.

  • Chop dates and prunes into small pieces, then squish together with a fork (use a sturdy, large bowl).
  • Add peanut butter and maple syrup and mix together.
  • Add cocoa and mix thoroughly.

14 Medjool dates (about 1 1/2 cups)
6 tablespoons dark cocoa powder
4 tablespoons refined coconut oil (softened)
1 teaspoon vanilla extract
1/2 cup vegan chocolate chips
1 tablespoon refined coconut oil
flake salt (for topping)
chocolate jimmies (for topping)
cocoa powder
chocolate jimmies

Steps:

  • Place the dates in a medium bowl and pour hot water over them. Let sit about 5 minutes until softened, then drain. Remove pits and stems.
  • Place dates in the bowl of a food processor, along with cocoa powder, coconut oil, and vanilla extract. Secure lid and process until a completely smooth paste. Continue processing until mixture forms a ball. Scrape out of food processor with a spatula into a medium bowl.
  • Scoop out rounded teaspoons of the truffle mixture and place balls, without rolling, on a parchment-lined plate. Repeat until all mixture has been divided. Keep a small bowl of warm water near your workstation. Dip your fingers in the water to help remove the mixture from the teaspoon.
  • Place truffle balls in the freezer for about 5-10 minutes to firm up. Remove from the freezer then roll all pieces between your palms to create even spheres.
