CHEESY COUNTRY HAM GRIT BALLS

Steps:
- Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360 degrees F.
- Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the ham and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add the grits and cheese to the bowl and stir until combined. Using wet hands, scoop 1/4 cup of the grit mixture, roll it into a ball and place on a platter or large plate. Repeat until all the grit mixture is used.
- Whisk together the flour, paprika and cayenne in a shallow bowl. In a separate shallow bowl, add the eggs. Add the panko to another separate shallow bowl. Dip each grit ball into the flour mixture and shake to remove any excess before dipping into the eggs and then into the panko, spinning to coat completely.
- Add the grit balls to the Dutch oven in batches, frying until brown on all sides, about 5 minutes. Remove to a sheet pan lined with a wire rack and immediately sprinkle with salt.
HAM BALLS
This is my newest, favorite meatball recipe. If you like a sweet twist, you'll like this one. The meatballs will be slightly pink inside when done because of the pork, so do not overbake them!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
- In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
- Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

- Add cream cheese, ham, green onions and seasoned salt to a mixing bowl and mix well.
- Form into a ball and place onto a piece of plastic wrap.
- Cover entire cheeseball with chopped pecans.
- Wrap ball up with plastic wrap.

- Cook onion in butter for 5-6 minutes or until tender. Cool completely.
- Combine all sauce ingredients in a bowl.
- Combine ham ball ingredients in a bowl and mix well. Form into 1" meatballs and place in a 9x13 pan.

- Uncover, flip meatballs over and cook an additional 20-25 minutes or until sauce is thickened and meatballs are cooked through.

- Set your cream cheese out for about an hour before you mix this cheese ball together. It is much easier to make this recipe if your cream cheese is soft.
- Place cream cheese, ham, cheddar cheese, garlic salt, onion powder, green onions in a mixing bowl. (I like to add mine to my kitchen aide and mix with the paddle, It makes this recipe so easy!)
- Beat together until ingredients are mixed.
- Using a spatula, shape into a round ball. (You can use your hands if you'd like but the rubber spatula works almost just as well and you don't have to get your hands dirty.)
- Toast the nuts in a pan on medium heat on the stovetop. Roll in toasted pecans until evenly covered.
- Cover with plastic wrap until needed. When you're ready to serve it, lay on a platter with your favorite buttery crackers and veggies. Enjoy!

- Preheat oven to 350 degrees. Grease baking pans.
- Pulse ham in batches in a food processor until finely ground.
- Combine with the next seven ingredients just until mixed.
- Shape into 1 inch balls and place in a single layer on prepared baking pans.
- For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved.
- Brush half of the glaze on ham balls.
