GROUND BEEF RISOTTO

Steps:
- In 12-inch nonstick skillet, cook beef, onion, garlic and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain if desired. Stir in rice; cook 2 minutes, stirring constantly.
- Stir in broth; heat to boiling. Reduce heat to medium-low. Cover; simmer 10 minutes.
- Stir in carrot. Cook uncovered 5 to 7 minutes longer or until liquid is absorbed.
- Remove skillet from heat. Stir in cheese. Cover; let stand 3 minutes. Sprinkle with chives.

- Place ground beef and onion in a large, deep skillet. Cook over medium high heat until evenly brown. Drain excess fat. Stir in water and rice. Season with beef bouillon and black pepper. Simmer 25 to 30 minutes, or until water is absorbed. Stir in diced tomatoes and green peppers. Simmer another 10 minutes, until green pepper is tender. Sprinkle top with cheese.

GROUND BEEF GOULASH
Steps:
- Put oil in a large dutch oven and sauté onions over medium high heat until soft and translucent, about 7-8 minutes. Add the garlic to the onions, stir to combine, and cook for 1-2 minutes.
- Crumble in ground beef and brown until no longer pink, stirring to combine everything well.
- Add in bacon, paprika, salt and pepper, stir to combine and coat everything. Cook for 1-2 minutes.
- Reduce heat to medium, add tomato sauce, diced tomatoes, and beef broth. Reduce heat and simmer uncovered for 15 to 20 minutes, stirring occasionally.
- Stir in uncooked macaroni and corn, simmer uncovered for 20 minutes or until the macaroni is done.
- OPTIONAL: Serve topped with shredded cheddar cheese and/or sour cream.
DELICIOUS GROUND BEEF MEDLEY
This is easy but so good! You don't have to use cream of chicken and cream of mushroom. Any "cream of" soups would probably work just fine. The vegetables are also easily changed to suit your family's taste.

- In a skillet, brown ground beef with onion and celery. Stir to break up meat. Drain.
- Cook macaroni as directed on package. Drain.
- In a 2 1/2-qt. casserole dish, combine the soups, milk, salt and pepper. Stir in the ground beef, macaroni, green pepper and corn.
- Bake at 350 degrees F for 30 minutes.
