This is a family recipe that has been developed only over the last 5 years. In this short time it's made me famous in our close circle, but until now I've never shared it with anyone.

Steps:
- Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
- Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

- Prepare grill. Pat steaks dry and season generously with salt and pepper. Grill steaks on a well-oiled rack set 5 to 6 inches over glowing coals 4 minutes each side for medium-rare. Transfer steaks as cooked to a platter and let stand 10 minutes.
- Serve steaks with chimichurri sauce.

- Put seasonings on steak, using a good amount of the season salt, and the others to you liking.
- Put seasoned side down on medium low flame first and grill for about 4-6 minutes.
- Turn over and add more seasonings.
- Grill for another 4-6 minutes and serve.
- Grilling can go be longer or for a little less time, depending on how you like your steaks!

- Remove the rib eye steaks from the refrigerator. Season the steaks on all sides using the dry rub of your choice. For a rib eye, simpler is better, the meat is so good that you don't need sauce or a marinade.
- Let the steaks sit at room temp for at least 30 minutes before cooking. but no longer than an hour,
- Clean your grill grates and preheat your BBQ to a medium high heat.
- Place the prepared rib eye steaks on the grill . Cook over direct heat for 4-5 minutes on each side for medium rare, but use your meat thermometer to get the right temperature for your desired doneness, not the amount of cooking time.
- Steak doneness temperatures are as follows:120° F = Rare130° F = Medium rare140° F = Medium160° F = Well done
- Remove the steaks from the grill and let the steaks rest for five minutes on a cutting board.. The juices will redistribute and settle throughout the meat, so that when you slice the steaks the juices won't all come out.
- Slice on the cutting board and serve.

DELICIOUS GRILLED STEAK
Plan ahead, for this recipe the steaks need to sit on the counter in the lime/honey mixture until room temperature which might take a couple of hours, do not marinade the steaks in the mixture overnight the acid from the lime will "cook" the beef. The marinade mixture is enough for up to 16-24 ounces in total weight for all beef, for more beef then double the recipe, also the ingredient amounts may be adjusted to taste.

- Remove the steaks from the fridge and place in a shallow dish.
- In a bowl mix together the ginger, fresh garlic, honey and juice of 1 lime.
- Drizzle the mixture over the beef and let sit out on the counter until the beef is room temperature (this might take a couple hours depending on the size of your steak, turning the beef occasionally in the mixture.
- Start a charcoal fire or preheat gas grill (the fire should not be really hot and the rack should be positioned no more than 4-inches away from heat source).
- Remove the room temperature beef from the mixture and season with black pepper (use NO salt at this point you can salt the beef after cooking).
- Place the steak on the grill and spoon any remaining sauce over it.
- For rare (steaks under under 1-inch thick) grill about 3 minutes per side.
- For larger or more well-done steak increase the time slightly.
