CROCK POT CHICKEN CURRY RECIPE
Come home to a flavorful and delicious Crock Pot Chicken Curry. Throw all your ingredients into your slow cooker and enjoy a spice-filled sauce that pairs perfectly with rice!

Steps:
- Place all your spices, plus coconut milk, chicken stock, and fresh garlic in your crock pot. Stir until combined.
- Place your chicken in the crock pot as well as sweet potatoes and onions. Stir to coat with sauce. Now, add the butter.
- Cover your slow cooker and set on low for 6-8 hours or high for 4-6 hours.
- During the last 30 minutes of cooking, remove the chicken from the crock pot and shred it with two forks. Place chicken back into the crock pot for remaining cooking time.
- Turn off your crock pot, mix ingredients, and let rest for about 20 minutes before serving. This will help thicken the sauce.
- Serve over rice and a side of naan.

CROCK POT NEW POTATO CURRY
This is an excellent way to cook new potatoes, as they cook slowly, almost in their own juices, in a curry-flavored sauce. This dish goes well with grilled meat, poultry or fish. If you're cooking for vegetarians, serve it as a main course along with a bowl of dal and green vegetable. It also makes a delicious summer meal, accompanied by a garden salad.

Steps:
- In a skillet, heat butter or oil over medium-high heat.
- Add potatoes and cook just until they begin to brown.
- Transfer to slow cooker stoneware.
- Reduce heat to medium.
- Add onions and cook, stirring, until softened.
- Add garlic, curry powder, salt and pepper.
- Stir and cook for 1 minute.
- Add water or stock, bring to a boil and pour over potatoes.
- Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours, until potatoes are tender.
- Stir in lemon juice and garnish with cilantro.
- TIP: Leave the skins on potatoes, scrub thoroughly and dry on paper towels.

DELICIOUS CROCK POT TURKEY CURRY WITH CURRANTS
Another winner from the Sunset Crockery Cookbook. I'm eating it right now; it's soooo good. It's a very mild curry and a little bit sweet. It's more like a comforting mild turkey stew than what I usually think of when I think of curry.

Steps:
- Combine onion, pepper, garlic, curry powder, red pepper and currants in crock pot.
- Rinse turkey, pat dry and arrange on top of mixture.
- Pour in tomatoes.
- Cook on low for 8 to 10 hours, until meat can easily pull away from bone.
- (If a thick sauce is desired: lift out turkey and let stand. Skim fat from mixture. Blend in cornstarch mixture. Cook on high for 15 minutes, or until sauce is thickened, stirring 2-3 times.) Remove bones and fat from turkey.
- Tear meat into small pieces and stir into sauce.
- Add salt to taste, sprinkle with almonds.
- Serve over rice.

- Place the sweet potatoes and bell peppers in the bottom of a 5-quart or larger slow cooker. Pour the water and lime juice over the top.
- In a small bowl, combine the curry, smoked paprika, cumin, chili powder, and salt. Place the chicken thighs on a large plate or cutting board, and sprinkle both sides with about 2/3 of the spice mix. Rub to coat, then set the remain spice mixture aside.
- Heat the olive oil in a large skillet over medium high. Once the oil is hot and shiny, add the chicken thighs and briefly pan sear on each side, just until brown— about 2 minutes for the first side and 1 minute for the second side. Place the seared chicken in the slow cooker, on top of the vegetables. Sprinkle with the remaining spice mixture. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours, until the chicken is cooked through. It should register 165 degrees F on an instant read thermometer.
- Remove the chicken thighs from the slow cooker and transfer to a cutting board. Once cool enough to handle, cut the chicken into bite-size pieces or shred it with two forks. Set aside.
