DELICIOUS COCONUT CAKE~ JAMAICAN STYLE

Delicious Coconut Cake~ Jamaican Style image

In order to get that authentic coconut taste, this cake is made with fresh coconut. This recipe is from my great grandmother, although I altered it a little, it is a family tradition. So go to your local grocery store and buy a coconut, crack it open with a hammer, drink the water (optional) and pry the coconut from the shell...

Time 3h

Number Of Ingredients 23

3 c all purpose flour
1 3/4 c sugar
1 Tbsp baking powder
1/4 tsp salt
3/4 c butter, unsalted
4 large eggs
1 tsp pure vanilla extract
1 c coconut milk, unsweetened
1 pkg coconut cream pudding & pie filling
2 Tbsp luke warm water
CAKE FILLING (COOKED IN A SAUCEPAN)
1 c heavy whipping cream
3/4 c sugar
2 Tbsp cream of coconut
1 tsp cornstarch
1 Tbsp coconut milk, unsweetened
1 Tbsp unsalted butter
1 c freshly grated coconut
BUTTER CREME ICING
1 stick of unsalted butter (room temperature)
2 1/2 c powdered sugar
1 Tbsp pure vanilla extract
2 c freshly grated coconut

Steps:

  • 1. Preheat oven to 350 degrees. I use pam baking spray to coat 2 8-by-2 or 9 inch pans, however you can use regular butter. In a large bowl mix all cake ingredients (dry and liquids). Bake cakes for 25-30 minutes or until an inserted toothpick comes out clean and dry.
  • 2. While cake is baking prepare cake filling by placing the 1 cup of heavy whipping cream, 3/4 cup of sugar and 2 tablespoons cream of coconut in a saucepan over medium heat; bring to simmer. Add together the cornstarch and coconut milk and mix for 3 minutes. Add the butter and cup of coconut and mix for another 4 minutes. Take the saucepan off the heat and place elsewhere to cool cake filling to room temperature.
  • 3. Prepare butter creme icing by placing butter, sugar, and vanilla extract in a large bowl. Mix together until ingredients are well blended and icing is of spreading consistency. Scrape the sides of the bowl and mix again. Taste the icing to assure that there is no "buttery" taste and icing is sweet.
  • 4. Once cake is completely cooled, take one cake and cut off the top layer (or the top bump of cake). Spread the cake filling all over cake (you will not use all). Place the other cake on top evenly and spread icing all over. Sprinkle top and sides of cake with coconut. Place a cherry on top (optional).

  • Preheat oven to 350 degrees Fahrenheit. Grease a 13 x 9 inch baking pan with butter or spray with non-stick spraying oil.
  • In a large bowl, sift the dry ingredients: all purpose flour, baking powder, baking soda, allspice, salt, ground ginger, nutmeg and cinnamon powder. Whisk together.
  • If you are adding raisins, add a teaspoon of the flour mixture to the raisins and then sift to remove the extra flour. This prevents the raisins from sinking to the bottom of the mixture while baking.
  • Mix together in another large bowl, the brown sugar and melted butter. Add the eggs one at a time. Then add the rum (if you are adding it) coconut milk, vanilla extract, almond extract and mix together.

  • Jamaican Oxtail. Who would’ve thought oxtail could be so tasty? If you’ve never worked with it before, now is the time to try. It has some extra fat, which produces an even richer flavor stock, and when slow-cooked, some argue it’s more tender than other cuts of beef.
  • Jamaican Steamed Cabbage. Cabbage is an inexpensive side that can be found in most countries. But this colorful variation from Jamaica is definitely one of my faves.
  • Jamaican Hot Pepper Shrimp. This fiery dish is not for the faint of heart. Dicing the peppers means the flavor gets all over the shrimp, so there’s no escaping it.
  • Jamaican Jerk Marinade. I know we all look for shortcuts, but marinating your meat goes a long way in terms of great flavor. You can even make up a big batch and freeze down some meat (once it’s sat in the marinade), making the next meal a little quicker.
  • Jamaican Callaloo. Callaloo is similar to spinach and gets cooked with onion, tomatoes, green onions, and, you guessed it, a Scotch bonnet pepper! Collard greens make a great alternative if you can’t find callaloo.
  • Jerk Chicken. When making jerk chicken, it’s always a good idea to use things and legs with the bone in. The dark meat pairs so much better with the powerful spices, and these cuts are always juicier.
  • Jamaican Curry Chicken. Jamaican curry might look similar to some Asian curries you’re used to, and it uses many of the same ingredients, including coconut milk.
  • Jamaican Carrot Juice. You won’t believe me until you try it, but Jamaican carrot juice is unbelievably delicious. Made with condensed milk and spices (cinnamon, ginger, and nutmeg), it’s creamy and can also be made with coconut milk for a nuttier flavor.
  • Rice and Peas. Simple but so effective, this recipe is loaded with flavor and is the perfect pairing for jerk chicken! Though the dish is known as rice and peas, it’s actually made with kidney beans.
  • Jamaican Beef Patties. Much like the empanada or British Cornish pasty, Jamaica has its own version of a beef filled hand pie. Though many of the ingredients are similar to a Cornish pasty – beef, onion, carrot, etc.
