Cincinnati Chili is a classic Midwestern recipe! This chili is nothing like you have ever had before! Slow simmered meat sauce is served over spaghetti noodles.

4 cups water ((OR can do half water, half beef broth))
6 ounce tomato paste
2 pounds ground beef ((80/20))
½ cup onion (finely diced)
3 Tablespoon chili powder
2 Tablespoon worcestershire sauce
1 Tablespoon apple cider vinegar
1 Tablespoon light brown sugar
2 teaspoon salt
1 teaspoon ground cumin
1 teaspoon cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground all spice
¼ teaspoon ground cloves
1 ounce dark chocolate (OR unsweetened cocoa powder)
1 bayleaf
spaghetti noodles (cooked)
beans
onion (diced)
cheddar cheese (shredded)
oyster crackers

Steps:

  • In a large dutch oven combine the water and tomato paste. Whisk together to combine.
  • Crumble the meat with fingers and add to the liquid in the pot.
  • Add all remaining ingredients to the pot and stir to combine.
  • Bring pot of chili to a simmer over medium heat. Cover and lower heat. Let simmer for 2-3 hours stirring occasionally. Skim grease from the top as needed.
  • Remove the chili from the heat and allow to cool to room temperature. Cover and store the chili in the refrigerator overnight.
  • After chili has cooled overnight, using a spoon, breakup the grease on the top of the chili and remove completely.
  • Bring the chili back to a low simmer over medium heat.
  • Serve the chili warm over spagehtti noodles or over a hot dog.

4 minced garlic cloves
1 medium sized white onion, chopped
1 (8 ounce) can diced tomatoes (either Italian seasonings or basil and garlic)
1 teaspoon cinnamon
1 teaspoon allspice
1 tablespoon white vinegar
1 tablespoon chili powder
1 lb hamburger meat (can also use ground Italian sausage, or ground turkey or chicken)
3 bay leaves

Steps:

  • Brown your meat in a pan with olive oil and the garlic and onions.
  • Combine the rest of your ingredients in the crockpot.
  • Add your cooked meat mixture.
  • Set crock pot on low for 4-6 hours, or high for 1-2 hours.
  • Top with your choice of shredded cheese and green onions.

Steps:

  • In a large heavy kettle, cook the onions and the garlic in a little oil over moderate heat, stirring, until the onions are softened. Add the beef, and cook the mixture, stirring and breaking up the lumps, until the beef is no longer pink. Add the chili powder, paprika, cumin, coriander, allspice, oregano, cinnamon, cloves and mace and cook the mixture, stirring, for 1 minute. Add the bay leaf, water, tomato sauce, vinegar, and molasses. Simmer the mixture, uncovered for 2 hours, or until thickened but still soupy, stirring occasionally. Add more water if necessary to keep the beef barely covered.

2 pounds ground beef (80:20 is good)
1 (6-ounce) can tomato paste
4 cups water
1 (8-ounce) can tomato sauce
1 large onion, minced (about 3 cups)
6 cloves garlic, minced
3 tablespoons chili powder
1 teaspoon cumin
1 teaspoon cinnamon
3/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/2 teaspoon cayenne
2 teaspoons kosher salt
2 tablespoons Worcestershire sauce
1 tablespoon apple cider vinegar
1 ounce unsweetened chocolate, optional
Options for serving:
Oyster crackers
Finely shredded mild cheddar cheese
1 (15.5-ounce) can small red kidney beans, drained and warmed

Steps:

  • Cook the tomato paste: Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the tomato paste to the dry pot and cook, constantly scraping the bottom with a wooden spoon or silicone spatula, until the tomato smells rich and toasty and you start to see browned (not burned) patches in the bottom of the pot. This should take 1 to 3 minutes.
  • Simmer gently, uncovered, for 2 to 3 hours: Stir the chili often. You want the volume to reduce a bit. (To be honest, just one hour of cook time is okay, but for optimal chili-ness, go long.)
  • Cool to room temperature, then refrigerate overnight: Refrigerate in an air-tight covered container. (Note: you can eat the chili immediately if you want to.)

This was handed down to me by Mom, a Cincinnati native. Skimming the fat makes this a healthier version than most, and gives it the right consistency. I like mine 4-way, with spaghetti, raw chopped onions, grated mild cheddar, and oyster crackers!

2 pounds lean ground beef
1 quart water, or amount to cover
2 onions, finely chopped
1 (15 ounce) can tomato sauce
2 tablespoons vinegar
2 teaspoons Worcestershire sauce
4 cloves garlic, minced
½ (1 ounce) square unsweetened chocolate
¼ cup chili powder
1 ½ teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground cinnamon
½ teaspoon ground cayenne pepper
5 whole cloves
5 whole allspice berries
1 bay leaf

Steps:

  • Place the ground beef in a large pan, cover with about 1 quart of cold water, and bring to a boil, stirring and breaking up the beef with a fork to a fine texture. Slowly boil until the meat is thoroughly cooked, about 30 minutes, then remove from heat and refrigerate in the pan overnight.
  • The next day, skim the solid fat from the top of the pan, and discard the fat. Place the beef mixture over medium heat, and stir in the onions, tomato sauce, vinegar, Worcestershire sauce, garlic, chocolate, chili powder, salt, cumin, cinnamon, cayenne pepper, cloves, allspice berries, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for 3 hours. Add water if necessary to prevent the chili from burning.

This recipe is an approximation of a famous dish in Cincinnati called "Skyline Chili" or just "Skyline". The original recipe was developed by a Greek who owned several chili parlors, and is very different from what most of us think of as chili. It's very popular in Cincinnati, but the recipe is kept very closely guarded secret. My husband LOVES Skyline, so I found 2 recipes that he declares are the closest to the one made in Cincinnati. This is the first recipe. When serving, you have to serve the chili with the toppings - each person can make their chili "3-way", "4-way" or "5-way" depending on the number of toppings they add.

  • Discard the bay leaves.
  • Serve the chili in flat soup bowls by putting a layer of spagetti, then the chili over top, then passing the remaining toppings at the table for each person to personalize their own.

1 pound ground pork
4 medium onions, chopped
6 garlic cloves, minced
2 cans (16 ounces each) kidney beans, rinsed and drained
1 can (28 ounces) crushed tomatoes
1/4 cup white vinegar
1/4 cup baking cocoa
2 tablespoons Worcestershire sauce
2 teaspoons hot pepper sauce
1 teaspoon sugar
2 tablespoons chili powder
4 teaspoons ground cinnamon
3 teaspoons dried oregano

3 bay leaves
