DELICIOUS BAKED CRANBERRY & APPLE BREAKFAST
Healthy, gluten free and doesn't take long either. Modified out of Recipe #3806. I serve this with plain yogurt on top.

Steps:
- Preheat oven to 350°F.
- Combine all ingredients except yogurt and through into a small baking dish.
- Bake 25 minutes.
- Serve warm or room temperature with plain yogurt on top.
- Enjoy!

BAKED APPLE BREAKFAST TREAT (SUGAR FREE)
I have been making this so long, I don't remember where I got it from. Be careful of the Almond Extract - too much will make it bitter

Steps:
- Cut the apple into 8 even slices, removing the core and seeds.
- Arrange the slices in a microwave safe bowl, sprinkling with 1 Tablespoon Splenda and the apple pie spice.
- Cover and cook 1 1/2 - 2 minutes on high in the microwave.
- While apple is cooking, stir the almond extract and the other tablespoon of Splenda into the cottage cheese.
- After removing apple from the microwave, spoon the cottage cheese on top of the apple. Sprinkle cinnamon on the cottage cheese.

CRANBERRY APPLES
We chose to use a combination of Granny Smith, Gala & Red Delicious apples for this wonderful recipe. The mix was terrific, with the Granny Smiths being the real stand-outs. Try serving them warm atop flaky biscuits... Mmmmm, good!

Steps:
- 1. Wash the apples, halve, and remove the cores and stems.
- 2. Chop the apples (do not remove the skin) into large chunks, approximatley 1/2" to 3/4" in size.
- 3. Place apples, cinnamon, and water in medium size sauce pan and cook on medium low heat for approximately 20 minutes or until fork tender. Do NOT put a lid on the pan as it will make the apples mushy.
- 4. Remove apples from heat. Gently stir in canned whole berry cranberries.
- 5. Apples can be served immediately while hot or chilled and served up to two weeks later. (The dish can be reheated as desired.) Enjoy!!

- Remove a thin slice from the bottom of each apple so it will stand. Remove a 3/4-inch slice from the top. Scoop out the center core of each apple with a melon baller or grapefruit spoon. (Do not cut all the way through the bottom; leave a thick shell on the sides.)
- Stir together cranberries (or currants) and brown sugar in a small bowl. Spoon 1/4 of the mixture into each apple cavity. Set the apples in a small baking dish. Dot the top of each apple with 1/2 teaspoon butter. Pour cider (or juice) around the apples and cover the dish tightly with foil.
- Bake until the apples are almost tender, 30 minutes. Uncover the pan and baste the apples with the pan juices. Bake uncovered until the apples are tender and the juices are slightly reduced, about 10 minutes longer, basting once or twice more. Spoon the juices into the centers of the apples and serve warm.
