Steps:
- Preheat an oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Whisk together the flour and salt in a large mixing bowl. Cut in the softened butter with a knife or pastry blender until the mixture resembles coarse crumbs. Whisk together the egg yolks in a liquid measuring cup, then add enough milk to reach 2/3 cup of liquid. Gradually stir into the flour mixture until moistened. Turn the dough out onto a lightly floured surface and knead briefly. Roll about half of the dough out to fit the prepared baking dish. Place the bottom crust in the baking dish. Sprinkle the oats evenly over the crust. Roll out the top crust, and set aside.
- Mix the cornstarch and lemon juice together until smooth. Heat the cornstarch mixture in a large skillet with the apples, white sugar, brown sugar, cinnamon, and nutmeg over medium heat until the apples are tender, about 15 minutes. Remove from heat, and allow to cool slightly. Spread the apple filling evenly over the oats. Cover the filling with the top crust. Pinch the edges together to seal the crusts, and brush with egg white. Cut a few slits on the top crust to vent.
- Bake in the preheated oven until golden brown and the filling has thickened, about 50 minutes.
- While pie is baking, prepare the glaze by beating the confections' sugar with 1 tablespoon of milk in a small bowl. Stir in the almond extract. Drizzle the glaze over the warm pie. Mix 1 teaspoon of sugar and 1/2 teaspoon of cinnamon together in a small bowl, and sprinkle cinnamon sugar over the glaze. Cool completely before cutting into bars.

- In a medium sauce pan, melt sugar over medium heat
- Use a wooden spoon to stir constantly, this will help achieve an even melt to your sugar and prevent scorching
- Add the butter once the sugar is completely melted
- Continue to stir or several minutes
- Next, slowly add the cream to the butter and sugar mixture
- Adding the cream will cause the sugar mixture to vigorously boil and rise in the pan -Don't be alarmed
- Allow the mixture to boil for another minute
- Now, turn off the heat and add the salt, quickly whisk for about 15 seconds
- Then, add the vanilla and give another quick whisk until combined
- Allow to sit
- The sauce will thicken as it cools
- Drizzle over warm Apple Pie Bars and serve

APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

- In a large bowl, whisk together the flour, salt, and sugar. Cut the butter into the flour using a fork or a pastry cutter. The butter should breakdown to the point where it resembles oat flakes and some may be the size of peas. Add the buttermilk and egg yolk to the mixture until the dough starts to form a ball. Dump the dough out onto a clean surface and form a ball. Place dough in plastic wrap and tightly wrap the dough. Alternately, you can place the dough back into the bowl and cover, refrigerate. Let dough cool for at least 30 minutes. Prepare apple pie filling while you wait.
- Peel, core and dice apples into small, thin pieces. Place apples in a large bowl. Add orange juice, vanilla bean paste, and toss apples to evenly coat. In another bowl, whisk together flour, granulated sugar, light-brown sugar, cinnamon and nutmeg. Pour flour mixture over apple mixture and toss to evenly coat, set aside.
- Divide the dough into 2 equal portions. Roll the dough out on a lightly floured surface into a 14 x 10 rectangle. Fold the dough over the rolling pin gently and transfer to a 13 x 9 baking pan. Toss the apple mixture and then pour it over the top of the prepared pie crust. If you've got access liquid pooling at the bottom, save the liquid, just pour the apples. Using a tablespoon, pour 2-3 tablespoons of the liquid over the apples. Roll the remaining dough into the same 14 x10 rectangle as before and transfer the dough over to the baking dish. Cover the apples and pinch the corners. Using a small pairing knife, prick small holes on the top crust.
