Delicious apple pie in a bar! Apple pie filling sandwiched between two layers of pie crust - like a portable apple pie you can cut up and share and snack on without feeling guilty!

- Preheat an oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Whisk together the flour and salt in a large mixing bowl. Cut in the softened butter with a knife or pastry blender until the mixture resembles coarse crumbs. Whisk together the egg yolks in a liquid measuring cup, then add enough milk to reach 2/3 cup of liquid. Gradually stir into the flour mixture until moistened. Turn the dough out onto a lightly floured surface and knead briefly. Roll about half of the dough out to fit the prepared baking dish. Place the bottom crust in the baking dish. Sprinkle the oats evenly over the crust. Roll out the top crust, and set aside.
- Mix the cornstarch and lemon juice together until smooth. Heat the cornstarch mixture in a large skillet with the apples, white sugar, brown sugar, cinnamon, and nutmeg over medium heat until the apples are tender, about 15 minutes. Remove from heat, and allow to cool slightly. Spread the apple filling evenly over the oats. Cover the filling with the top crust. Pinch the edges together to seal the crusts, and brush with egg white. Cut a few slits on the top crust to vent.
- Bake in the preheated oven until golden brown and the filling has thickened, about 50 minutes.
- While pie is baking, prepare the glaze by beating the confections' sugar with 1 tablespoon of milk in a small bowl. Stir in the almond extract. Drizzle the glaze over the warm pie. Mix 1 teaspoon of sugar and 1/2 teaspoon of cinnamon together in a small bowl, and sprinkle cinnamon sugar over the glaze. Cool completely before cutting into bars.

- In a large saucepan, combine apples, 3/4 cup apple juice, sugar, cinnamon and apple pie spice; bring to a boil over medium heat, stirring occasionally. Combine cornstarch and remaining apple juice; add to saucepan. Return to a boil, stirring constantly. Cook and stir 1 minute more or until thickened. Remove from the heat. Stir in vanilla. - Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
- Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

- Combine the apple juice, 1/2 cup white sugar, and butter in a large saucepan. Cook over medium heat, stirring occasionally, until sugar has melted. Add the apples and cook until fruit is tender, about 10 minutes.
- Whisk remaining 1/2 cup sugar with the cornstarch. Stir into the fruit mixture, bring mixture to a boil, then cook until juices thicken, about 2 minutes. Allow filling to cool (it will continue to thicken as it cools).
- Preheat oven to 350 degrees F (175 degrees C). Place a baking sheet on an oven rack.

- Preheat oven to 425 degrees F (220 degrees C).
- Mix together the sugar, flour, cinnamon, nutmeg and lemon peel.
- Line one crust in a 9-inch deep-dish pie pan. Layer 1/3 of apples into pie crust. Sprinkle with sugar mixture and repeat until done. Sprinkle with lemon juice and dot with butter.

- Place the apples in a large bowl; set aside. In a small saucepan, combine sugar and cornstarch. Stir in apple cider until smooth. Cook and stir over medium-high heat until thickened and bubbly. APPLE HAND PIES WITH PILLSBURY PIE CRUST

- Prepare a large baking (cookie) sheet by lining it with parchment paper. Working with one roll of dough at a time on a lightly floured work surface, and working with one at a time, roll each pie crust out to make a rectangular shape, it doesn't need to be perfect. Trim the outside area of the rectangle to make the edges straight, then cut into six squares, approximately 4" each. Do the same for the second roll of dough.
- Smear the olive oil (or use baking spray) on the parchment lined baking sheet, then put six pie of the dough squares down, placing them several inches apart.
- Spoon 1 tablespoon plus one teaspoon of the apple butter in the center of each square, smoothing it out with the back of a spoon, but leaving 1/4 space around the edges of each pie. In a small bowl, whisk together the egg, salt and water, then brush the outside edges of the dough with the egg mixture (which will act as a glue for the top piece of dough) then top with another dough square and press the edges together with your fingers or the back of a spoon or fork lightly to seal the two pieces of dough together to make six pies. Refrigerate for 30 minutes before baking.
- Preheat the oven to 375 degrees. After removing from the refrigerator, brush the tops of each pie with a little bit of the egg wash, then make a small cut in the middle of the pie so steam can escape. Using the two tablespoons of sugar, sprinkle a teaspoon of sugar on the top of each pie, then bake for 20-25 minutes or until golden brown. Cool on a wire rack.
- Make the glaze by combining the powdered sugar, maple syrup, salt, milk and apple butter in a small bowl. When the pies are completely cooled, drizzle the glaze over the top and sprinkle with a few sliced almonds for serving.

- For the pastry, put the flour in a large mixing bowl with a pinch of salt, add the butter and rub into the flour using your fingertips until the mixture resembles breadcrumbs. Stir through the sugar with a round-bladed knife, then stir in just enough of the water until the dough starts to come together in chunks (it shouldn’t be sticky). To make this in a food processor, whizz the butter and flour together, then pulse through the sugar and water until the dough starts to come together.
- Bring the dough together with your Hands, then tip onto a floured surface and give it a quick knead until smooth. Roll it out to a rough square, fold it in thirds like a letter, give a quarter turn, then repeat twice. Wrap the pastry in cling film and chill for 30-60 minutes (or see make ahead).
- Heat the oven to 190°C/fan170°C/gas 5. Remove the pastry from the fridge, cut off two thirds (chill the remaining third), then roll out on a floured surface to the thickness of a £1 coin. - In a large bowl, toss the apples with the sugar, spices and cornflour, then use to fill the pastry case. Dot the top of the apples with quince jelly. Roll out the remaining pastry until a little bigger than the pie. Cut off a long, thin strip (enough to fit round the pastry case), wet the edge of the baked pastry case and press the strip of pastry on top, gently, all the way around. Brush this with a little water, then loosely roll the pastry for the lid around a rolling pin and unroll on top of the pie, pressing it gently onto the strip to seal. Trim any overhanging pastry, then crimp the edges with your fingers. Shape the trimmings into decorations, if you like. Cut a steam hole in the centre of the pie, brush the top with the beaten egg to glaze, add the pastry decorations, then glaze again and sprinkle with caster sugar.

- Using the food processor add flour to the bowl along with butter and salt. Then turn the processor on for 30 seconds until the butter has been combined. - Slice apples place in a bowl thin sprinkle with brown sugar. Add vanilla, flour, and mix well with a wooden spoon. Fill pre-baked pie shell really full. Add the pie crust lattice by alternating the strips of the pie crust on top. Add cubes of butter in-between each open square. Sprinkle with sugar and bake at 375 for about 45-50 minutes or until apples are tender. Take out and allow to cool completely
