TRADITIONAL BREAD SAUCE
Every Christmas lunch needs a big bowl of bread sauce on the table

Steps:
- Pop the onion in a pan with the milk, cream, peppercorns and bay leaves. Bring to a simmer, then turn off the heat and leave to infuse for 30 mins. Pour the milk through a sieve into a jug, then return it to a cleaned pan.
- Stir in the breadcrumbs, bring back to the simmer and cook for a few mins (add a splash more milk if you like your sauce thinner). Stir in the butter, season with salt, white pepper and nutmeg, then pour into a warm serving jug or bowl. Or leave to cool and chill or freeze for up to 1 month until needed.

- Simmer the milk, butter, onion, cloves, peppercorns, garlic and herbs in a pan for 20 mins. Strain and return the liquid to the pan. Add the breadcrumbs and simmer for 3-4 mins. Stir in the cream or mascarpone. Add nutmeg, season and serve. Can be made up to 3 days in advance and heated up on the hob or microwave on Medium for 3 mins.

DELIA'S BREAD SAUCE
Steps:
- Method Cut the onion in half and stick the cloves in it - how many you use is a personal matter; I happen to like a pronounced flavour of clove. If you don't like them at all, you can use some freshly grated nutmeg instead. Place the onion - studded with cloves - plus the bay leaf and the peppercorns, in a saucepan together with the milk. Add some salt then bring everything up to boiling point. Take off the heat, cover the pan and leave in a warm place for the milk to infuse for two hours or more. When you're ready to make the sauce, remove the onion, bay leaf and peppercorns and keep them on one side. Stir the breadcrumbs into the milk and add 1 oz (25 g) of the butter. Leave the saucepan on a very low heat, stirring now and then, until the crumbs have swollen and thickened the sauce - about 15 minutes. Now replace the clove-studded onion, the bay leaf and the peppercorns and again leave the pan in a warm place until the sauce is needed. Just before serving, remove the onion and spices. Reheat gently then beat in the remaining butter and the cream and taste to check the seasoning. Pour into a warm serving jug.

- First, cut the onion in half along the fat middle part of the onion (rather than end to end). Peel away the outer skin and then stick the cloves into the cut part of the onion. This is not essential but it’s kind of fun to do and it looks pretty!
- Add the milk into a saucepan and then place in the onion and cloves, the peppercorns and the bay leaf. Place over medium heat and bring to a low simmer – don’t let it boil.
- Remove the pan from the heat and cover and put in a warm place for 2 hours (or up to 4). The top of a radiator works well! Remove the onion, peppercorns and bay leaf with a slotted spoon.
- Place the pan back on the hob on low heat. Stir in the breadcrumbs and half the butter and heat for around 15-20 minutes until warmed through and thick. At this stage, you can either cool it and store in the fridge to finish the next day or you can serve the sauce.
