DAUPHINOISE POTATOES

Dauphinoise potatoes image

Thin slices of potato slow cooked in the oven with cream and garlic - the most decadent of side dishes

Provided by Paul Merrett

Categories     Side dish

Time 1h5m

Number Of Ingredients 5

500ml double cream
500ml milk
3 garlic cloves
8 large King Edward or Maris Piper potatoes
100g grated gruyère cheese (optional)

Steps:

  • Heat oven to 190C/170C fan/gas 5.
  • Tip 500ml double cream, 500ml milk and 3 garlic cloves into a large saucepan and bring to a simmer.
  • Slice 8 large potatoes very finely, about 3-4mm, add them to the cream and simmer for 3 mins until just cooked.
  • Gently stir to separate the potato and stop it sinking and catching on the bottom of the pan.
  • Remove the potatoes with a slotted spoon and place in a wide shallow ovenproof dish so that they are about 5cm in depth.
  • Pour over the garlic infused cream (discarding the garlic) - just enough to seep through the layers and leave a little moisture on the surface.
  • Scatter over 100g grated gruyère cheese, if using, then bake for 30 mins until the potatoes are soft and browned - increase the heat for 5 mins if not brown enough.

Provided by Martha Stewart

Categories     Food & Cooking

Number Of Ingredients 9

1 tablespoon unsalted butter, room temperature
2 1/2 pounds Yukon Gold potatoes
2 1/2 cups heavy cream
1 1/2 cups whole milk
1 garlic clove, smashed
1 teaspoon coarse salt
1/4 teaspoon ground white pepper
4 ounces Gruyere cheese
1/8 teaspoon freshly grated nutmeg

Steps:

  • Preheat oven to 400 degrees with rack in middle position. Spread butter across bottom and sides of a 2-quart baking dish.
  • Peel potatoes and slice 1/8 inch thick. Place slices in a large bowl of cold water and drain thoroughly.
  • Bring heavy cream, milk, and garlic to a simmer in a large, wide saucepan. Add potatoes, salt, and pepper and continue to simmer, stirring occasionally, until potatoes are tender, 20 minutes.
  • Using a slotted spoon, transfer half the potatoes to prepared baking dish and sprinkle with half of the cheese. Add remaining potatoes to baking dish and pour enough cream mixture over potatoes to just cover. Sprinkle with remaining cheese, place on a rimmed baking sheet, and bake until bubbly and golden brown on top, 40 to 45 minutes.
  • Remove from oven and grate nutmeg over top just before serving.

POTATO DAUPHINOISE | RIVER COTTAGE
potato-dauphinoise-river-cottage image
Potato dauphinoise. This classic potato dish with its glorious caramelised top and rich, melting interior will always be one of Hugh's favourites. Something magical happens when you bake potatoes, thinly sliced, in garlic-scented cream. Hugh tends to use whichever floury variety he has to hand, but you can also make it with large, new potatoes…

GRATIN DAUPHINOIS | RECIPES | DELIA ONLINE
gratin-dauphinois-recipes-delia-online image
Delia's Gratin Dauphinois recipe. Home-made, straight from the oven, it is truly one of the great classics. I know it does seem extravagant to use 5 fl oz (150 ml) cream for 1 lb (450 g) potatoes, but I would forego a pudding with cream once in a while in order to justify it. And although cheese is sometimes added to this, I think it masks the potato …

  • Melt a knob of butter in a large, deep heavy-based frying pan or sauté pan over a medium heat. Add the onion and gently cook for 15 minutes until very soft and translucent. Remove with a slotted spoon and set aside.
  • Heat the oven to 180°C/160°C fan/gas 4. Add the garlic to the pan and gently cook for 1 minute. Stir in the milk, cream and nutmeg, then season well with salt and black pepper.
  • Meanwhile, peel the potatoes and slice as thinly as possible – about 3mm thick (use a mandoline or an attachment on a food processor). Add the potatoes to the milk and cream mixture, stir gently, then bring to a simmer. Simmer for 20-30 minutes until the potatoes begin to soften. Tip into a deep tray and leave for 15 minutes until cool enough to handle.
  • Layer the potato slices and the onion in the prepared baking dish, packing them down as evenly and as neatly as you can. Pour the creamy liquid from the tray over the potatoes and pack them down with the back of a wooden spoon. Bake for 45-60 minutes until golden and cooked through. Cover with foil if browning too much. Sprinkle over the cheese (if using), then bake for 10-15 minutes until bubbling and golden. Mix the herbs and salt in a bowl, sprinkle on top and serve straightaway (or see Make Ahead; also see our tips below for how to prepare a cheffy make-ahead version). Serve with roast beef, duck or lamb.

POTATOES BOULANGERES WITH ROSEMARY | RECIPES | DELIA ONLINE
Delia's Potatoes Boulangeres with Rosemary recipe. These potatoes are so named because in France they were given to the local baker to place in a bread oven to cook slowly. The nice thing is that you can pop them in your oven and just forget about them until you are ready to serve, and, unlike other potato dishes, they don't mind being kept warm.
