MARY BERRY'S BANOFFEE PIE

Mary Berry's Banoffee Pie image

Mary Berry's ultimate recipe for Banoffee Pie, as seen on her BBC 1 series, Classic, will help you master this famous dessert combining flavours of banana, toffee and chocolate.

Provided by Mary Berry

Categories     Dessert

Number Of Ingredients 1

Banana, Chocolate

Steps:

  • Chilling time: a minimum of 2¼ hours. Cook time: 5 minutes. 1. Line the sides of the tin with strips of cling film (using a little water to help the cling film stick) and then line the base with a disc of baking paper. 2. First make the pie base. Place the biscuits in a freezer bag and finely crush with a rolling pin. Melt the butter in a non-stick saucepan over a low heat, add the biscuits and combine. Spoon into the base of the tin, pressing down with the back of the spoon to level. Chill for 15 minutes. 3. To make the filling, heat the butter and sugar in the same pan and stir over a low heat until combined. Add the condensed milk and bring to the boil and boil, stirring continuously, for 2-3 minutes or until dark golden, taking care that the mixture doesn't catch on the bottom. Do not allow to boil for too long or it will become grainy. Add the vanilla extract and pour into the tin. Chill in the fridge for a minimum of 1 hour or up to 24 hours. 4. Peel and slice the bananas and arrange in neat rounds on top of the caramel. Whip the cream to soft peaks and spoon or pipe it over the bananas, then level the top before chilling in the fridge for an hour. 5. Meanwhile, melt the chocolate in a bowl set over pan of gently simmering water. Remove from the heat and allow to cool. 6. Remove the edges of the tin from the banoffee pie, peel off the cling film and transfer to a serving plate, slipping the baking paper from underneath. Zigzag the melted chocolate over the top (if using), making sure it's cool or it will melt the cream, or dust with cocoa powder. Prepare Ahead: The base and filling can be made up to a day ahead and kept in the fridge. Ideally, the pie should be assembled with the banana and cream on the day. However, it can be assembled a day in advance: as long as the banana is completely covered in the cream, it will not discolour. Mary's Classic Tip: * For a speedier dessert, use a tin of ready-made caramel (bear in mind this doesn't set as firmly).

BANOFFEE CHEESECAKE WITH TOFFEE PECAN SAUCE

Banoffee Cheesecake with Toffee Pecan Sauce image

The magic word 'banoffee' does not, as you might have thought, have exotic origins: it is simply an amalgam of banana and toffee. But it is magic nonetheless - the combination of bananas, cream and toffee is inspired. Here, I have incorporated them all into a cheesecake with the addition of one extra star ingredient, toasted pecan nuts.

Categories     Desserts     Easy Entertaining     Buffet food     Dessert cakes

Yield Serves 6-8

Number Of Ingredients 17

3 oz (75 g) pecan nuts (use half for the base and half for the sauce)
4 oz (110 g) sweet oat biscuits
1½ oz (40 g) melted butter
3 medium-size ripe bananas (8 oz/225 g peeled weight)
1 tablespoon lemon juice
3 large eggs
12 oz (350 g) medium-fat curd cheese
1 x 200 g tub fromage frais (8 per cent fat)
6 oz (175 g) caster sugar
2 oz (50 g) butter
3 oz (75 g) soft brown sugar
2 oz (50 g) granulated sugar
5 oz (150 g) golden syrup
5 fl oz (150 ml) double cream
a few drops vanilla extract
3 medium-size ripe bananas
2 tablespoons lemon juice

Steps:

  • Begin by toasting all the pecan nuts. Place them on a baking tray and bake in the oven for 7 minutes until lightly toasted or, if you watch them like a hawk, you can toast them under a grill. You can also watch how to roast nuts in our Cookery School Video. Then chop them quite small. Put the biscuits in a polythene bag, lay them flat and then roll them with a rolling pin to crush them coarsely. Then tip them into a bowl and add the melted butter and half the nuts. Mix them well then press all this into the bottom of the cake tin and pre-bake the base in the oven for 10 minutes. Then lower the temperature to gas mark 2, 300ºF (150ºC). For the filling, first blend the 3 bananas and lemon juice in a food processor until smooth, then simply add all the rest of the filling ingredients. Blend again then pour it all over the biscuit base and bake on the middle shelf of the oven for 1 hour. Turn off the oven and leave the cheesecake inside to cool slowly until completely cold; this slow cooling will stop the cheesecake cracking. To make the sauce, place the butter, sugars and syrup in a saucepan and, over a very low heat, allow everything to dissolve completely. Let it cook for about 5 minutes. Pour in the cream and vanilla extract and stir until everything is smooth, then add the rest of the chopped pecan nuts. Remove it from the heat and allow it to cool completely before pouring it into a jug ready for serving. When you are ready to assemble the cheesecake put the 2 tablespoons of lemon juice into a bowl. Slice the remaining bananas at an oblique angle into ¼ inch (5 mm) slices, and gently toss them around to get an even coating of juice. If you like you can spoon a small circle of sauce into the centre, then layer the bananas in overlapping circles all round it. Serve the cheesecake cut into slices with the rest of the sauce handed round separately.

BANOFFEE PIE RECIPE BY TASTY

Banoffee Pie Recipe by Tasty image

Here's what you need: sweetened condensed milk, graham crackers, unsalted butter, nonstick cooking spray, heavy cream, sugar, bananas, chocolate shaving

Provided by Chris Salicrup

Categories     Desserts

Time 6h50m

Yield 8 servings

Number Of Ingredients 8

30 oz sweetened condensed milk
14 graham crackers
6 tablespoons unsalted butter, melted
nonstick cooking spray
1 ½ cups heavy cream
1 tablespoon sugar
3 bananas, sliced
chocolate shaving, for garnish

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Pour the sweetened condensed milk into a baking dish. Cover with aluminum foil and set in a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the smaller dish.
  • Place in the oven and cook for 90 minutes. Check the water level occasionally, making sure that it reaches halfway and refilling as necessary.
  • Carefully remove the baking dish from the hot water bath and let cool to room temperature. Whisk the mixture (now it's dulce de leche!) until smooth.
  • Reduce the oven temperature to 350˚F (180˚C).
  • In the bowl of a food processor, combine the graham crackers and melted butter. Pulse until crackers are finely ground and the mixture resembles wet sand.
  • Grease a 9-inch (22 cm) tart pan with nonstick spray. Add the graham cracker mixture to the tin and press evenly to cover pan completely.
  • Bake crust for 5 minutes, until golden and fragrant. Transfer to a wire rack and let cool to room temperature.
  • Spread the dulce de leche in the cooled tart crust, using a flexible spatula to smooth it into an even layer. Cover and refrigerate for at least 4 hours or up to overnight, until set.
  • In a large bowl, beat the heavy cream until soft peaks are just beginning to form. Add the sugar and beat until soft peaks form.
  • Remove the pie from the refrigerator. Scatter the banana slices over the dulce de leche. Top with the whipped cream, spreading evenly to cover bananas, and garnish with chocolate shavings.
  • Enjoy!

3 small bananas , sliced
300ml double cream
1 tbsp icing sugar

BEST-EVER BANOFFEE PIE

Best-ever banoffee pie image

With its fantastic combination of banana and toffee, banoffee pie is hard to beat. This one has a chocolate biscuit base and is made on the hob rather than boiling the condensed milk in the can for hours.

Provided by The Hairy Bikers

Categories     Desserts

Yield Serves 12

Number Of Ingredients 9

75g/2½oz butter
300g/10½oz chocolate oaty biscuits
115g/4oz butter
115g/4oz soft dark brown sugar
397g/14oz can sweetened condensed milk
450ml/16fl oz double cream
5 ripe but firm bananas
1 tsp fresh lemon juice
25g/1oz coarsely grated plain chocolate or chocolate curls

Steps:

  • To make the base, melt the butter in a small saucepan. Break the biscuits into chunky pieces and put in a food processor. Blend into crumbs, then add the melted butter and, with the motor running, blend well. Alternatively, put the biscuits in a strong polythene food bag and bash with a rolling pin. Tip into a bowl and stir in the melted butter.
  • Tip the crumbs into the centre of a deep, 23cm/9in fluted loose-based tart tin or quiche dish and press firmly into the base and sides. Make sure it is evenly distributed, especially where the base meets the sides. Cover and chill in the fridge for 30 minutes, or until set.
  • To make the filling, melt the butter in a medium saucepan, then stir in the sugar. Cook over a low heat, stirring constantly, until the butter and sugar look smooth and no oil floats to the surface. Add the condensed milk and bring to a gentle simmer, stirring constantly. Cook for 3 minutes, stirring, until the mixture turns a deep, creamy caramel brown.
  • Pour the toffee gently onto the biscuit base and quickly smooth the surface. Leave to chill for 1 hour (or up to 8 hours).
  • Just before serving, lightly whip the cream in a bowl. It should stand in soft peaks, any thicker and it will look over-whipped when mixed with the bananas. Peel and diagonally slice four bananas and scatter half of them over the toffee. Fold the rest lightly into the cream and spoon gently on top.
  • Peel and slice the remaining banana and put it in a bowl. Pour the lemon juice over and gently toss (this will stop the banana turning brown). Decorate the top with the lemony banana, poking into the cream randomly, and sprinkle the pie with grated chocolate or decorate with chocolate curls. Serve in fairly thin slices as it is very rich.
