This is a wonderful and very easy recipe to throw in the slow cooker on those really busy days. It can be increased for a large group or downsized for 2 people. It reminds me of summers in Texas.

3 tablespoons smoked paprika
2 tablespoons ground black pepper
2 tablespoons kosher salt
1 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1 ½ pounds beef brisket
¾ cup barbeque sauce
¼ cup water
1 tablespoon Worcestershire sauce
¼ teaspoon liquid smoke flavoring
½ onion, sliced into rings

Steps:

  • Mix paprika, pepper, salt, brown sugar, chili powder, and cumin together in a bowl; rub evenly over the surface of the brisket. Put brisket in a large, resealable plastic bag; refrigerate 30 minutes to overnight.
  • Stir barbeque sauce, water, Worcestershire sauce, and liquid smoke together in the bottom of a slow cooker. Lay brisket into the sauce mixture. Arrange onions atop the brisket.
  • Cook on Low until brisket is very tender, 6 to 7 hours. Rest brisket 10 minutes before slicing or shredding; serve with sauce from the slow cooker.

2 1/2 to 3 1/2 lb fresh beef brisket (not corned beef)
2 tablespoons vegetable oil
2 teaspoons salt
2 teaspoons pepper
2 cups thinly sliced onions
1 cup 1 1/2-inch pieces peeled carrots
5 cloves garlic, chopped
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 cup Progresso™ beef flavored broth (from 32-oz carton)

Steps:

  • Spray 6-quart slow cooker with cooking spray. Rub brisket with 1 tablespoon of the vegetable oil. Rub with salt and pepper. Heat 12-inch skillet over medium-high heat. Cook brisket in skillet 2 minutes on fattiest side, then turn and cook 2 to 3 minutes on other side, until browned. Transfer to slow cooker.
  • Reduce heat to medium; add remaining tablespoon of vegetable oil to skillet. Add onions; cook 5 to 8 minutes, stirring frequently, until beginning to brown. Add carrots and garlic; cook 1 minute. Stir in tomatoes and broth; heat just to simmering. Pour mixture over brisket in slow cooker. Cover and cook on Low heat setting 7 to 8 hours or until brisket is very tender.
  • Transfer brisket to cutting board; cool slightly, cut into slices, and serve with vegetables and cooking juices.

3 tablespoons onion powder
3 tablespoons garlic powder
3 tablespoons paprika
1 tablespoon salt
3/4 teaspoon pepper
1 teaspoon celery salt
1 4-pound brisket
4 tablespoons corn oil
1/2 cup water
3 cups chopped onion
2 tablespoons finely chopped or crushed fresh garlic

Steps:

  • In a bowl, combine onion powder, garlic powder, paprika, salt, pepper, and celery salt; mix thoroughly. Dredge the brisket in this spice mixture making sure every part of it is well covered. Place in a deep dish covered with aluminum foil, and refrigerate for 1 or 2 days. Heat 2 tablespoons of the corn oil in a large skillet, and brown the meat on both sides. Transfer brisket to a Dutch oven, add 1/2 cup water, cover, and simmer for 1 hour.
  • While meat is simmering, heat remaining 2 tablespoons corn oil in a large skillet, and sauté onions, stirring occasionally. When the onions are nicely browned, add garlic, which browns quickly. Add onions and garlic to brisket pot. Cover, and continue simmering for 2 1/2 hours, or until meat is fully cooked. To test for doneness, stick a fork in the leaner end of the brisket; when there is a slight pull on the fork as it is removed from the meat, it is done. Cook longer if necessary.Remove brisket to a plate, and trim all visible fat. Then place the brisket (with what was the fat side down) on a cutting board, and carve thin slices across the grain (the muscle lines of the brisket) with a sharp, thin-bladed knife. Serve hot with gravy from the pot or cold in sandwiches.

Many, many years ago, I worked in Manhattan on the edge of the Garment District, where there were the most wonderful Jewish delis. I enjoyed treating myself to a brisket sandwich every now and then, which was something I had never tasted before. I enjoyed it so much that I had to ask how the brisket was made. This is the approximate recipe I was told. It can be served as a dinner, or sliced and served as sandwiches. Either way, it is a delightful meal. The brisket can be garnished with parsley, cherry tomatoes, pickled peppers, turnips, or stuffed olives.

2 teaspoons salt
1/2 teaspoon black pepper
1 garlic clove, minced
3 medium onions, thinly sliced
1 cup hot water
2 tablespoons cornstarch
1 cup cold water

Steps:

  • Place brisket, fat-side up, in a 13x9-inch roasting pan. Season brisket with salt and pepper, sprinkle with garlic, and place onions on top. Bake in a preheated 350-degree oven for 1 hour, or until the onions turn brown. Add hot water, cover with aluminum foil, and seal tight.

1 tablespoon garlic powder
¼ cup ketchup
1 large onion, thinly sliced
1 tablespoon all-purpose flour

Steps:

  • Place brisket fat side up into slow cooker, sprinkle garlic powder on top and rub ketchup generously into brisket. Add onion slices all around and on top of meat, add enough water to coat the bottom of the cooker.
  • Cook on Low, all day, for the most tender brisket you will ever eat.
  • For gravy, remove brisket from the slow cooker, and increase temperature to High. Mix flour with 1/4 cup water, add to pot, and bring to a boil, stirring constantly.

CROCKPOT BRISKET (LOW CARB, S)

Crockpot Brisket
4 pound trimmed beef brisket
2 tablespoons prepared mustard (that's right just the regular kind)
2 teaspoon beef base (I use Organic Better than Bouillon -regular is available at Wal-Mart and other stores) dissolved in 1/4 cup warm water with the dried onion added in
3 teaspoons dried onion or 1/2 cup chopped onions
Use THM Baking Blend to thicken the gravy or leave it au jus if you prefer. (I left this brothier than my usual gravy and used 2 tablespoons blend per cup of meat juice. *See gravy tips at the end of this post.

Steps:

  • Place the brisket in the crockpot lean side up and pour 2 tablespoons of the beef broth/onion solution over the top then slather it with 1 tablespoon of the mustard and flip it over carefully. (If you're using fresh chopped onion just add them to the top of the fat side of the meat once you get the other ingredients added). Repeat the same process with the top of the brisket on the fat side. Cook on in the crock pot on low overnight (8 hours). Skim the mustard and seasonings from the top of the brisket and mix with the pan juices in the pot. Peel off fat and discard it. *(Note: it is not a lot of fat as shown in the picture and my husband did not want ours discarded so you see how it looks if you leave it on.) Remove the brisket to a separate dish *If you slice it now it will shred a little, I refrigerated it to get it to slice as shown and I used an electric knife to slice it because I didn't have a super sharp knife so it's your choice, it is yummy either way). Drain the juices into a gravy separator and save the meat juices and discard the fat. * (Alternately refrigerate the pan juices and skim off the fat later if you don't own a separator). When you get ready to serve the meat just heat the juices to very hot on the stove and whisk in enough baking blend to thicken (2 tablespoons per cup of liquid) or as I mentioned just pour some of the juice over the top of the meat and let it soak in, the juice is where a lot of the flavor will be but it absorbs back into the meat very easily. *Gravy tips: I love thickening with THM's baking blend! But at higher concentrations, it can get a little grainy. This is easily solved by putting the gravy into a blender or mini processor or using an immersions blender on the sauce. I have used a lower concentration of blend to meat juice in this recipe and had to problems at all. I normally mix some form of cheese into the gravy/sauces and that takes care of it, but I did not want to do that with this gravy so I left it thinner.

4 cloves garlic (minced)
5 carrots (cut into chunks)
1/4 cup ketchup
2 tablespoons red wine vinegar
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon dried marjoram leaves
1/8 teaspoon pepper
3 tablespoons flour
1-1/2 cups water (divided)
1 tablespoon Worcestershire sauce

Steps:

  • Place the onions in the bottom of a 5- to 6-quart slow cooker, then place the brisket, fat side up, on top of the onions.
  • Sprinkle the garlic on top of the beef. Surround the meat with the chunked carrots, and any other root vegetable you'd like.
  • Combine the ketchup, vinegar, brown sugar, salt, marjoram, and pepper in a small bowl and then rub into the beef.
  • Pour 1 cup water into the slow cooker over the vegetables; don't pour over the meat, or you'll wash off the seasoning mixture.
  • Cover the crockpot and cook on low for 8 to 10 hours or until the meat is very tender.
  • To make the gravy, remove the brisket, onions, and carrots and any other vegetables from the slow cooker, place on a serving plate, and cover tightly with foil to keep warm.
  • Pour the liquid from the crockpot into a large saucepan.
  • Mix the flour with 1/2 cup water, add to the saucepan, and bring to a boil, stirring the gravy frequently with a wire whisk. Boil until the gravy is thickened; then add the Worcestershire sauce.
  • Season the gravy with salt as needed until the flavor comes to life.
  • Slice the meat and serve with gravy, onions, and carrots.

2 medium onions, chopped
1 1/2 pound beef roast or brisket
1/2 cup ketchup
2 tablespoons butter

Steps:

  • In a bowl, combine the cola, Worcestershire sauce, vinegar, garlic, beef bouillon granules, dry mustard powder, chili powder, and cayenne pepper. Mix well to combine. Set aside 1/2 cup of the mixture for the sauce. Place the onions in the bottom of the crock pot. Cut the meat to fit the crock pot if necessary and place the meat on top of the onions. Pour the cola mixture over the meat. Cover and cook on low heat for 10 hours or on high heat for 5 hours, or until the meat is tender (cook time may vary by crock pot). For the sauce, combine the reserved cola mixture, ketchup, and butter in a saucepan. Heat over medium heat until it simmers, stirring occasionally. Remove from the heat and let cool.
