BUTTER CHICKEN

Number Of Ingredients 23

28 oz (800g) boneless and skinless chicken thighs or breasts (cut into bite-sized pieces)
1/2 cup plain yogurt
1 1/2 tablespoons minced garlic
1 tablespoon minced ginger ((or finely grated))
2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon red chili powder
1 teaspoon of salt
2 tablespoons olive oil
2 tablespoons ghee ((or 1 tbs butter + 1 tbs oil))
1 large onion, (sliced or chopped)
1 1/2 tablespoons garlic, (minced)
1 tablespoon ginger, (minced or finely grated)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garam masala
1 teaspoon ground coriander
14 oz (400 g) crushed tomatoes
1 teaspoon red chili powder ((adjust to your taste preference))
1 1/4 teaspoons salt ((or to taste))
1 cup of heavy or thickened cream ((or evaporated milk to save calories))
1 tablespoon sugar
1/2 teaspoon kasoori methi ((or dried fenugreek leaves))

Steps:

  • In a bowl, combine chicken with all of the ingredients for the chicken marinade; let marinate for 30 minutes to an hour (or overnight if time allows).
  • Heat oil in a large skillet or pot over medium-high heat. When sizzling, add chicken pieces in batches of two or three, making sure not to crowd the pan. Fry until browned for only 3 minutes on each side. Set aside and keep warm. (You will finish cooking the chicken in the sauce.)
  • Heat butter or ghee in the same pan. Fry the onions until they start to sweat (about 6 minutes) while scraping up any browned bits stuck on the bottom of the pan.
  • Add garlic and ginger and sauté for 1 minute until fragrant, then add ground coriander, cumin and garam masala. Let cook for about 20 seconds until fragrant, while stirring occasionally.
  • Add crushed tomatoes, chili powder and salt. Let simmer for about 10-15 minutes, stirring occasionally until sauce thickens and becomes a deep brown red colour.
  • Remove from heat, scoop mixture into a blender and blend until smooth. You may need to add a couple tablespoons of water to help it blend (up to 1/4 cup). Work in batches depending on the size of your blender.
  • Pour the puréed sauce back into the pan. Stir the cream, sugar and crushed kasoori methi (or fenugreek leaves) through the sauce. Add the chicken with juices back into the pan and cook for an additional 8-10 minutes until chicken is cooked through and the sauce is thick and bubbling.
  • Garnish with chopped cilantro and serve with fresh, hot garlic butter rice and fresh homemade Naan bread!

This recipe is in my book 3. Under Cherry Delight. I made this when I worked at the deli back in Michigan. This was always an big seller. Very rich - oh so sinfully delicious- you will love this easy recipe.

21 oz can cherry pie filling
9 oz tub thawed cool whip
14 oz can sweetened condensed milk (eagle brand)

Steps:

  • 1. Fold all ingredients together in a large bowl. Spoon into individual dessert dishes or in a glass serving bowl or in your favorite pre baked pie crust. Top with a dab of Cool Whip and a maraschino cherry on top if desired. Refrigerate to set up.
  • 2. NOTE: This recipe is so good with all the prepared pie fillings, lemon, blueberry, pineapple, apple, strawberry, peach, chocolate, etc....

¾ cup melted butter
1 ½ tablespoons Dijon mustard
1 ½ teaspoons Worcestershire sauce
1 ½ tablespoons poppy seeds
1 tablespoon dried minced onion
24 mini sandwich rolls
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
  • Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

1 cup reduced-fat graham cracker crumbs (about 5 whole crackers)
3 tablespoons butter, melted
1 package (.3 ounce) sugar-free lemon gelatin
1 cup boiling water
3 cups 1% cottage cheese
Sugar substitute equivalent to 7 teaspoons sugar
2 teaspoons cornstarch
1 tablespoon water
1 can (8 ounces) unsweetened crushed pineapple, undrained

Steps:

  • In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust. Refrigerate until firm. , Meanwhile, in a saucepan, combine cornstarch and water until smooth. Add pineapple. Bring to a boil. Cook and stir for 2 minutes or until thickened. Cool to room temperature. Spread over gelatin layer. Refrigerate for at least 1 hours before serving.

1 (6 ounce) jar marinated artichoke hearts
1 teaspoon minced garlic
1 tablespoon light olive oil
1 tomatoes, thinly sliced

4 slices provlone cheese

Steps:

  • Cut bread in half lengthwise. Drain artichoke marinade into small bowl, beat in garlic and oil until blended. Drizzle 2 tablespoons marinade mixture on cut surface of each bread half.
  • Arrange tomato slices on bottom half of loaf; sprinkle with fresh basil. Top with layers of turkey, salami, onion and artichokes. Drizzle with remaining marinade; top with cheese slices. Place top of loaf on filling; press down lightly. Cut into 6 diagonal slices.
