CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
- Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.

- Form 1 1/2-inch meatballs and place on the prepared sheet.
- Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes, turning them over after 15 minutes.

- Squeeze as much water out of your soaked bread as you can. Add it to your meatball mixture and mix together until combined. You don't need to go too crazy mixing your meatball mixture. Once it all looks fairly evenly distributed (no clumps of dried bread crumbs and such) your good. Sometimes less mixing is better.

- To breadcrumb mixture add beef, pork, eggs, onion, garlic, basil, parsley, oregano, parmesan and season over top of ingredients evenly with salt and pepper (I only use 3/4 tsp salt if I plan on using jar sauce to coat since it can be salty).

- Boil 2½ to 3 quarts of water in a 5-6 quart pan on high heat. Take a large mixing bowl and combine together beef, ½ cup onions, egg white, bread crumbs, ½ tbsp garlic, salt, and pepper. Blend the mixture nicely. Divide the mixture into 12 equal portions and shape each portion into an even ball. Heat oil in a large nonstick frying pan. Drop the meatballs into the pan in small batches and fry until they turn brown on all sides. Transfer into a plate and set aside. Add the remaining 1½ cups onion and ½ tbsp garlic to the pan. Sauté until the onions start browning, for about 5 minutes. Add tomato puree, red wine, beef broth, basil, and sugar. Stir and cook until the mixture starts boiling.
- Add the cooked meatballs into the mixture and allow the sauce to boil. Cover the pan and reduce the heat to low. Simmer for about 8-10 minutes, until the meatballs are no longer pink in the center, stirring occasionally. Meanwhile, add spaghetti to boiling water and cook until almost tender, for about 7-9 minutes. Drain well. Pile the spaghetti in the form of a mountain into a wide serving bowl. Place meatballs over the spaghetti. Pour the sauce over the meatballs, spreading all over the spaghetti as well. Sprinkle parmesan cheese and parsley. Serve hot with more cheese on the side.

- In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
- In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( I form the meatballs into the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides.
- While meatballs are browning, in a separate, large deep pan add the olive oil, the tomato puree (or peeled tomatoes), spices and water, stir until well combined. Add the browned meatballs. Over medium heat, heat to boiling, then lower heat to medium low and simmer for approximately 20 minutes (covered), then raise the heat to medium, (leave pan slightly uncovered 1/3 uncovered) and cook an additional 20 minutes, until sauce has thickened and meatballs are cooked through. Serve immediately, top with freshly grated parmesan cheese if desired. Don't forget some crusty Italian bread to soak up the delicious sauce. Enjoy!
