HOW TO MAKE YOGURT IN A DEHYDRATOR



How to Make Yogurt in a Dehydrator image

Number Of Ingredients 4

1 Gallon of Raw or Regular Milk
2 Cups Raw or Greek Yogurt
Enough Canning Jars to hold 20 cups of liquid
A Dehydrator tall enough to hold whatever size jars you choose. I use a 5 tray Excalibur.

Steps:

  • Pour cold milk into a large pot. Bring to 140° over low-medium heat, stirring constantly.
  • Turn off heat and let milk cool to 120°.
  • Once it reaches 120°, gently stir the yogurt into the milk. You don't want to completely incorporate the yogurt, but you don't want a lot of chunks either.
  • Ladle the mixture into glass jars and fit the lids on.
  • Place jars inside dehydrator and set at 110°.
  • Allow to process for 12-18 hours, depending on how thick you like your yogurt!

- vanilla or flavored thick real yogurt

Steps:

  • Thicker brands of commercial yogurt dry best. Drop flavored yogurt by 1/4 teaspoon onto lightly oiled Fruit Roll Sheet.
  • Optional: for fun sprinkle drops with chopped peanuts or coconut before drying. Dry in your dehydrator 8-16 hours at 135° until chewy. Remove from sheet while warm.
  • Chill and store in refrigerator or freezer.

  • In a stock pot, heat milk gently on medium heat, stirring approximately every 10 minutes, until milk is close to a boil. Cover, remove from burner, and allow to cool until the yogurt is comfortable to the touch, 90-110* F.
  • Make sure the yogurt is not too hot at this stage, or you will kill the good bacteria that are going to make your yogurt into milk. Place yogurt starter in the warm milk and whisk or stir to distribute evenly.
  • Pour milk with starter into the glass jars, if you're using quart sized jars, they do fit in the 5-tray dehydrator you just have to tilt them to get them in there.
  • Cover, and shake to distribute culture even more. Place covered jars in the dehydrator, and turn to 100 degrees for a full 24 hours.

  • Spoon yogurt mixture into a resealable baggie (also pipping bags or even reusable pouches work great here) and cut the very end of the bag off. At any point your yogurt blend becomes too thin or runny, simply put the baggie back into the fridge for a couple of minutes to harden back up.
  • Squirt small round dots into rows onto the baking sheet. When the baking sheet is full, place the baking sheet into the freezer for 2 hours or overnight to harden. Pop the melts off of the parchment paper and store in air-tight container. These melts do melt rather quickly so it's best to only take out a couple at a time.
