I cant actually take credit for this recipe but i have added some additions. It tastes fabulous, is full of really healthy stuff and is the perfect for a breakfast on the go.

Yield Makes Muffins

Number Of Ingredients 17

125g plain flour
75g wholemeal flour
200g rolled oats
75g brown sugar
3 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 bananas, mashed
2 large eggs, separated
3 tbsp sunflower oil
250ml milk
125g blueberries
Other ideas:
Add 50g currents to the mixture for a fruity muffin.
Substitite 50g of the rolled oats for 50g dessiccated coconut.
50g other dried fruit such as cranberries.
50g hazelnuts or other nuts chopped up small.

Steps:

  • In a large mixing bowl, combine the plain flour, wholemeal flour, oats (or oats and coconut if using), brown sugar, baking powder, cinnamon and salt.
  • Create a well in the centre of the dry ingredients and add the mashed bananas, egg yolks, milk and sunflower oil. Mix together gently with a wooden spoon until a wet batter forms but do not overmix.
  • In a separate bowl whisk the egg whites until soft peaks form.
  • Gently fold the egg whites into the muffin batter along with the blueberries and any other additions you wish to include until everything is mixed through evenly.
  • Divide the muffin mixture between 12 individual muffin cases and place in a preheated oven at 200C/fan 180C/gas mark 6 for 25 minutes until well risen and golden brown ontop.
  • The muffins will keep for up to 4-5 days in a sealed tin or plastic container but preferably eaten on the day or day after baking for a fresher muffin. The muffins can also be frozen in a zipped plastic bag, thaw for 1 hour or until defrosted then pop in the oven for 10 minutes to reheat.

Number Of Ingredients 15

2 tablespoons active dry yeast
1 teaspoon white sugar
½ cup warm water
3 ½ cups warm water
¼ cup honey
¼ cup molasses
½ cup vegetable oil
2 eggs
2 tablespoons lemon juice
7 cups whole wheat flour
¼ cup flax seed
¼ cup cracked wheat
¼ cup sunflower seeds
4 teaspoons salt
4 cups bread flour

Steps:

  • In a small bowl, dissolve the yeast and sugar in 1/2 cup warm water. In a large bowl, mix remaining 3 1/2 cups warm water, honey, molasses, oil, eggs and lemon juice. Mix well. Add yeast mixture and stir.
  • Gradually add 5 cups whole wheat flour beating well after each addition. Add the flax, cracked wheat and sunflower seeds, stir well.
  • Let stand for 20 minutes, until mixture is very light. Stir in salt and the rest of the flours until dough pulls away from the sides of the bowl.
  • Knead 10 to 15 minutes until dough is smooth and elastic. Put into a greased bowl and cover, let rise in the oven with light on until doubled, about 1 hour.
  • Punch down and shape into 6 round balls. Cover and let rest for 20 minutes.
  • Form into loaves and let rise covered in oven until doubled. Bake at 375 degrees F (190 degrees C) 25-35 minutes.

Number Of Ingredients 25

CREAM TOGETHER IN BOWL OF STAND MIXER
4 eggs
3-4 medium ripe bananas
1/2 c organic coconut oil
1 c greek yogurt
1/4 c coconut or almond milk to thin batter a little
3/4 c brown sugar or brown sugar substitute
3/4 c stevia in the raw
3 Tbsp pure agave nectar
MIX TOGETHER, SET ASIDE, FOLD INTO WET MIXTURE
1 c gluten free flour, or any combo of gf flours ie: tapioca, brown rice,bean, etc
1/2 c coconut flour
1/2 c almond flour
1 c rolled oats
1/4 c flax seed, ground (about 1/3 cup seeds)
2 Tbsp chia seeds
2 tsp cinnamon
1/2 tsp each allspice and nutmeg
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp sea salt
FOLD IN LAST
1 c sliced almonds or walnuts, plus additional for tops
1 c and ripe or frozen fruit, diced small, apples, berries, peaches, etc if desired
you can add dark chocolate chips, craisins, etc..or add nothing more

Steps:

  • 1. Place all wet ingredients in the bowl of a stand mixer. Let mix while measuring the dry ingredients. Turn mixer to low and add flour mixture. Mix until combined. Add nuts, fruit, chocolate chips, craisins, etc if desired.
  • 2. Scoop into lined muffin tins about 3/4 full. top with sliced almonds, sprinkle with a bit of cinnamon sugar. Spray tops with Pam or coconut non stick spray (found it at Trader Joe's)
  • 3. Bake for 20-25 minutes. Serve warm plain or with low fat cream cheese and cold. We love them both ways. Enjoy!
  • 4. NOTE: If you are not watching your gluten intake, you can substitute gluten free flour for white whole wheat flour or ?. I would still use the almond and coconut flour tho because of the health factor.

1/2 cup almond meal
1/2 cup flaxseed meal
1/2 cup oat bran
1/2 cup spelt flour
1/2 cup whole wheat flour
1/3 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 egg
1 egg white
3/4 cup (plus or minus) buttermilk
1/2 cup Applesauce, recipe follows
2 ripe bananas, mashed
1 cup walnuts, chopped
1/2 cup raisins
6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Thoroughly grease a 12-count muffin pan with butter or cooking spray.
  • In a large bowl, mix together the almond meal, flaxseed meal, oat bran, spelt flour, whole wheat flour, brown sugar, baking soda and baking powder. In a separate bowl, beat the egg and egg white together. Add the egg mixture to the dry ingredients with the buttermilk, Applesauce and bananas. Stir together but avoid over-mixing. Stir in the walnuts and raisins.
  • Scoop the batter into the muffin cups and bake until set, 18 to 20 minutes.
  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

1.5 cups white whole wheat flour
½ cup coconut sugar (or light brown sugar)
1 teaspoon baking soda
1/8 teaspoon salt
2 large eggs
1/2 cup maple syrup
1/2 cup unsweetened almond milk
3 tablespoons melted coconut oil
1 cup pureed fruit*

Steps:

  • First, preheat oven to 350ºF and line a muffin tin with muffin liners. We suggest also spraying your muffin liners with cooking spray just in case.
  • Next, place dry ingredients into a medium bowl and mix.
  • Then, in a large bowl crack 2 eggs and whisk. Add maple syrup, almond milk, and preferred pureed fruit* and mix again.
  • Add dry ingredients into wet ingredients and then mix. Then, add in melted coconut oil and mix again.
  • At this point, add any of the add-ins for one of the 6 muffin recipes in this post and mix again.
  • Fill each muffin about 3/4 of the way full (these are going to be big muffins). Then, place in the oven at 350ºF and bake for 18-22 minutes or until the center is fully cooked.
  • Let cool for 5 minutes and then remove from the muffin tin to continue cooling.

  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean and edges are slightly brown, 17 to 22 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

WET INGREDIENTS
3/4 c plain greek yogurt
1/2 c coconut oil
1/4 c pure maple syrup
1/4 c agave syrup or necter (use 1/4 c more maple syrup if unavailable)
1/4 c granulated honey (or stevia in the raw if unavailable)
2 eggs, room temp
2 tsp vanilla extract
1 tsp butter flavoring
1/2 lb very finely chopped carrots, a 1/2 sm bag or 3 medium
2 apples, peeled and chopped in small pieces
DRY INGREDIENTS
1/2 c coconut flour
1/2 c almond flour
1/2 c tapioca flour
1/2 c gluten free flour, or ww pastry flour(if not making them gluten free)
2/3 c quick oats
1/3 c ground flax seed, about 1/4 c b4 grinding
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp sea salt
2 tsp apple pie spice, or equivilent
1 tsp cinnamon
1/2 tsp each of ground ginger and nutmeg
2/3 c dry fruit ie: raisins, craisins, or even dark chocolate chips
STREUSEL TOPPING
2 Tbsp each of coconut oil(or butter), brown sugar, any flour, & ground flax seed
1/4 c each of quick oats and sliced almonds
1 Tbsp each of sesame, sunflower, or pumpkin seeds (optional)
1/2 tsp apple pie spice & a dash of sea salt

Steps:

  • 1. I use the food processor with the chopping blade to prepare the carrots and apples. Chop until carrots are very finely chopped. remove from FP bowl and set aside. Chop apples to about 1/2 inch dice and set aside. Grind flax seed. Mix streusel topping and set aside. Measure out all dry ingredients, mix well and set aside.
  • 2. Preheat oven to 375 degrees. Cream all wet ingredients in mixer bowl. Make sure eggs and yogurt are not ice cold from the fridge, so they don't solidify the coconut oil. Mix in the dry ingredients just until combined. Fold in dry fruit, nuts, or ?.
  • 3. Scoop the batter into lined muffin tins almost 3/4 full. Top with streusel mixture. Bake for about 25 minutes or until light brown. Enjoy!

Add oatmeal mixture and mix well. Put in wide mouth jars to shoulder, cover and refrigerate. Never stir; spoon into well greased or paper lined muffin tins. Bake at 400 degrees for 15 to 20 minutes. Muffins keep well for 5 to 6 weeks in refrigerator. NOTE: Good mixed with raisins and/or chopped nuts before baking.
