FRIED TURKEY BREAST
Steps:
- One hour before frying, place the turkey breast on a baking sheet, sprinkle liberally with salt and pepper, and let sit at room temperature.
- To figure out how much oil you will need for frying, put the breast in a large pot and cover with water by 3 inches; the pot should be large enough that the water comes no more than halfway up the sides. Remove the breast and check the water level -- that is how much oil you will need.
- Dry the pot and add the oil. Heat to 350 degrees F on a deep-frying thermometer.
- Pat the breast dry with paper towels. Using heat-resistant gloves (to protect yourself from burns), SLOWLY and CAREFULLY lower it into the hot oil.
- Fry until golden brown and the internal temperature reaches 160 degrees F on an instant-read thermometer, 15 to 20 minutes. Remove to a paper towel-lined baking sheet and season with a bit more salt. Let rest for 5 minutes before slicing.
DEEP-FRIED TURKEY MARINADE
This is a great recipe a friend gave to my father two years ago. It is easy, and allows you to have more room in the oven for other holiday favorites. It is also the most tender turkey I've ever made. This rub is appropriate for a 12 to 14 pound turkey.

- In a medium bowl, mix 3/4 Italian dressing, cayenne pepper, black pepper, Creole seasoning, and garlic powder. Rub over turkey, using remaining Italian dressing to fill cavity. Allow turkey to marinate 8 hours, or overnight, before deep-frying as desired.

Steps:
- Mix all ingredients except turkey, pot and peanut oil to make a marinade.
- Let stand overnight in refrigerator.
- Use meat injecting needle to inject all through turkey.
- Put turkey and marinade in a large plastic bag and keep in the refrigerator for 1 to 3 days.
- Remove in time to bring to room temp before cooking.
- Heat oil in a 40-60 quart pot to 325F (Use candy thermometer).
- Immerse turkey completely and cook for 4 minutes per pound.
- Place a pie tin with holes in the bottom, in the bottom of the deep fryer to prevent sticking.

- In a shallow bowl beat eggs, then add salt and pepper.
- Tear strips of turkey off breastbone.
- Dip turkey in eggs, then flour.
- Bring oil to 375 degrees in a Dutch oven or large stock pot, making allowance for the volume of the turkey, and fry turkey on medium-high until browned.
- Cover Dutch oven while frying to prevent splattering.

- Place the hot water, kosher salt and brown sugar into a 5-gallon upright drink cooler and stir until the salt and sugar dissolve completely. Add the ice and stir until the mixture is cool. Gently lower the turkey into the container. If necessary, weigh down the bird to ensure that it is fully immersed in the brine. Cover and set in a cool dry place for 8 to 16 hours.
- Remove the turkey from the brine, rinse and pat dry. Allow to sit at room temperature for at least 30 minutes prior to cooking.
- Place the oil into a 28 to 30-quart pot and set over high heat on an outside propane burner with a sturdy structure. Bring the temperature of the oil to 250 degrees F. Once the temperature has reached 250, slowly lower the bird into the oil and bring the temperature to 350 degrees F. Once it has reached 350, lower the heat in order to maintain 350 degrees F. After 35 minutes, check the temperature of the turkey using a probe thermometer. Once the breast reaches 151 degrees F, gently remove from the oil and allow to rest for a minimum of 30 minutes prior to carving. The bird will reach an internal temperature of 161 degrees F due to carry over cooking. Carve as desired.
FRIED WILD TURKEY FINGERS RECIPE

- To prepare the turkey fingers, fillet out both side of the breast, cutting close on either side of the breast, cutting close on either side of the breastbone. Slice each fillet into fingers, lengthwise. I prefer to leave the skin on the breasts, but suit yourself. For even cooking, the fingers should be about one inch thick in the middle and fairly uniform. I like to cook with tongs so that each piece can be taken out individually when done. Rig for deep frying, heating at least three inches of oil to 375 degrees. While waiting, sprinkle each turkey finger with salt and pepper. Put a little flour in a brown bag. Shake the turkey fingers in the flour, shake off the excess, and fry a few at a time until each piece is golden brown. drain and cook another batch. Serve hot. I like these fried turkey fingers with mashed potatoes and green peas, along with sliced tomatoes and steamed vegetables. This recipe yields ?? servings.

- Mix the flour with the spice mix; I use Cavender's mostly. Mix together the eggs, buttermilk and mustard. Mash the Saltines. I do this by putting them in a heavy freezer bag and crushing them with a rolling pin.
- Dredge about 1/4 of the turkey chunks in the flour, then the egg wash, then put them in the freezer bag with the crushed Saltines and shake well to coat.
