Steps:
- Rinse and peel fresh shrimp, leaving tails on. Devein. Shake off excess water. Heat oil in heavy pot or fryer on stove. Oil should be 3-4 inches below the top of the pot, but still deep enough to immerse shrimp. You'll want oil at about 360 degrees F to fry shrimp. (Oil should have a slight haze over it but not be smoking.) Mix together flour, salt and pepper in one shallow bowl. Scramble the eggs in another bowl. Put the bread crumbs in a third bowl. Dredge shrimp in flour, dip in egg, then in bread crumbs to coat thoroughly. When you have 4-5 breaded, put them in the hot oil. Let them fry, turning if necessary, until golden brown. Remove with a skimmer or slotted spoon. Put on a wire rack with paper towel underneath it to drain. (You also can blot on paper towel, but a wire rack keeps them crisper.) Fry in batches. Serve on a platter with wedges of lemon and parsley sprigs.

Steps:
- Add flour, paprika, garlic powder, salt and pepper to a medium shallow dish and whisk to blend.***
- In a second medium shallow dish whisk eggs until well blended.
- Pour panko into a 3rd shallow dish (a pie plate works well here).
- Preheat oil in a large pot to 350 degrees while you coat shrimp. Note that shrimp should be lightly wet on the exterior, if not rinse with water and drain well otherwise the flour won't stick in the next step.
- Dredge shrimp in flour mixture on both sides. Transfer to egg mixture and coat on both sides. Then finish by coating in panko on both sides, while pressing into panko so it adheres well.
- Fry shrimp in batches (no more than 10 at a time) until cooked through, about 1 minute. Bring oil back to 350 degree temperature between batches.
- Use a large spider to remove shrimp from oil and transfer to a baking sheet lined with two layers of paper towels to drain. Repeat process with remaining shrimp.
- Garnish shrimp with parsley if desired, serve with lemon wedges and your favorite shrimp sauce (such as cocktail sauce, honey mustard, tartar sauce, sriracha dip, creamy herb etc).

- Place the bag of shrimp into cold water until thawed. Or if you are in a hurry put the shrimp into a colander and run cold water on the shrimp until it thaws completely.
- Next I place the flour, beaten egg, and Panko bread crumbs (w/cayenne to taste) into 3 separate containers. The shrimp is then placed, one at a time, into the flour, then the egg, and then into the Panko.
- Set your oven to it's lowest setting. This is to keep the fried shrimp warm while you are finishing them all up.
