FRIED LOBSTER
Steps:
- Mix the flour, salt, black pepper, sugar, onion salt, garlic salt, parsley, celery seed, paprika and cornstarch together in a small bowl.
- In another small mixing bowl combine the milk and eggs, mix well.
- Pour oil into a skillet or deep fat fryer. Heat the oil to high, approximately 400 degrees F (200 degrees C).
- Cut the lobster tails into bite sized pieces. Dip lobster pieces one at a time into the egg mixture and then into the flour mixture. Place the lobster pieces one at a time into the skillet or deep fat fryer. Cook until lobster are golden brown.

Steps:
- Preheat cooking oil to 350 -375 degrees F.
- split lobster tails down the middle and pull the meat out of the shell, but leave the meat attached.
- pat dry lobster tails with paper towels.
- dredge lobster tails in seasoned flour, completely coating meat and shell.
- dip lobster and shell in egg wash completely covering tails, remove and allow to drain briefly.
- coat egg wash lobster tail and shell in seasoned bread crumbs. Lightly pat bread crumbs onto lobster and shell to completely coat both.
- place the breaded lobster tails in prheated oil and fry for 4-5 minutes or until golden brown.
- carefully remove the lobster from the oil and allow to drain on a baking rack for 1 minutes.
- serve lobster with cocktail sauce, tartar sauce or drawn butter

DEEP FRIED LOBSTER BITES
We love lobster and absolutely loved this recipe. The tempura batter is flavorful and not overly heavy. Serve at a New Year's Eve party and impress your guests! Be careful not to over fry your lobster - it will become tough.

- 1. Beat eggs and buttermilk well set aside.
- 2. In a large mixing bowl add all tempura ingredients and mix well. Set aside.
- 3. Cut the lobster tail down the middle and remove meat. Cut the meat into big bite sized chunks. Dip into egg wash coating well. Then dip into the tempura batter coating well. Deep fry a few pieces at a time for 3-4 minutes. Don't over crowd and make sure grease is hot about 350 degrees. Remove to a plate lined with a paper towel.
- 4. Clarifying butter. Cut sticks of butter into pieces. Place the butter in a heavy saucepan and melt slowly over low heat. Remove the pan from the heat and let stand for 5 minutes.Skim the foam from the top, and slowly pour into a container, discarding the milky solids in the bottom of the pan.
- 5. Dip lobster bites into butter and enjoy.
BASIC DEEP-FRIED LOBSTER
Steps:
- 1. Clean and shell lobster. Cut meat in 1/2-inch cubes. 2. Beat egg lightly and blend to a batter with cornstarch, water and salt. Dip lobster cubes in batter to coat. 3. Heat oil. Add lobster cubes, a few at a time, and deep-fry about 1/2 minute. Then reduce heat to medium and deep-fry until golden. Drain on paper toweling. 4. Arrange lobster on a bed of shredded lettuce, sprinkle with pepper and serve. VARIATIONS: 1. After step 1, marinate lobster cubes in a mixture of 2 tablespoons sherry, 1 tablespoon oyster or soy sauce, and 2 slices fresh ginger root, minced. Let stand 30 minutes, tossing cubes occasionally; then drain, discarding marinade. Pick up step 2. 2. After step 1, wrap each lobster cube in half a strip of bacon. Pick up step 2. In step 2, for the cornstarch batter, substitute either of the following: a. 2 eggs, lightly beaten, and 3/4 cup flour. This is actually one of my daddy's recipes. He's a commercial fisherman, but he finds time to make this whenever the family is together. But don't be fooled this simple recipe is one of the best out there.

- In a gallon sized plastic closeable bag combine, cornmeal, flour, salt, pepper, cayenne, garlic powder and onion powder. Shake well. Place one half of a lobster tail at a time in to the bag. Shake to coat the tails completely.
- Heat vegetable oil in a deep fryer or large skilled to 365 degrees F (180 degrees C). Place one coated lobster tail at a time into the oil. Cook until the lobster turns white and the coating is lightly browned. Let the fried tails dry on paper towels.

- Make Sichuan pepper salt: Toast a couple tablespoons green Sichuan peppercorns in an oven or dry skillet until fragrant but not browned. Let cool, then grind to a coarse powder in a spice or coffee grinder. Sift out any large husks that don't break down. Combine 2 teaspoons Sichuan pepper powder with 4 teaspoons fine kosher or sea salt and mix well.
- Prep seafood: Use kitchen shears to cut through the bottom shell of the lobster tails, splitting them open top to bottom but leaving intact. Cut each tail into large chunks. (If using a whole lobster, cut into large pieces or have fish monger do for you, cracking each shell so that sauce can seep in when cooking and so it's not necessary to crack at table.) Use shears to cut shrimp shells along back and remove vein, but leave shell on. Leave scallops whole. Dry all seafood pieces well, then dredge them in a bowl of corn starch to lightly but thoroughly coat each piece.
- Heat oil in a wok or deep saucepan to 375°. Use enough oil to cover or nearly cover the pieces. Working in batches, add shellfish pieces to hot oil and deep fry, moving gently so they don't stick together. The oil will bubble furiously and splatter, so be careful (a deep sauce pan helps with this). Make sure to retain heat at 375°, or a furious bubble, and cook pieces for about 2 to 2 1/2 minutes, until they are crisp and just starting to turn gold. Remove to paper towels.
- Discard frying oil, clean wok, and return to high heat. When hot, add 4 tablespoons oil. Lower heat to medium and add garlic slices. Stir-fry until they are soft, then add ginger and Sichuan ground chilies and cook briefly. Add the whole Sichuan chilies and Sichuan peppercorns and stir-fry briefly. Do not brown. Add back the shellfish and mix thoroughly in the sauce. Drizzle sesame oil around the outside of wok and stir again. Sprinkle lightly with Sichuan pepper salt, stir final time and plate. Garnish with cilantro, and serve with green Sichuan pepper salt as a dip.

- Rinse lobster tails. Cut a slit-down center, carefully. Pull lobster meat up and partially out and place it on top of the shell. Do not detach lobster meat from the end of the tail area so lobster stays in place.
- In a bowl, add buttermilk and hot sauce. Whisk well. Add lobster tail to the mixture. Let soak 5 minutes, room temperature.
