Easy Fried Chinese Chicken Balls image

These pieces of battered chicken are crispy and succulent, and hard to stop eating! They're so good that they will give your local Chinese restaurant a run for their money. Enjoy with rice and sweet and sour sauce.

1 cup all-purpose flour
2 teaspoons baking powder
1 pinch salt
1 teaspoon sesame oil
½ cup water, or more if needed
vegetable oil for frying
5 tablespoons cornstarch
1 pinch ground white pepper
4 boneless skinless chicken breasts, cubed

Steps:

  • Mix flour, baking powder, and salt together in a bowl. Drizzle in sesame oil. Gradually add water, whisking constantly until smooth; batter should be the consistency of cream. Let sit for at least 30 minutes.
  • Fill a deep pan or wok with oil and slowly heat to 375 degrees F (190 degrees C).
  • Mix cornstarch and white pepper together in a large shallow dish. Dust chicken in the cornstarch mixture and dip into the batter, evenly coating each piece. Transfer to the hot oil in batches and fry until golden and no longer pink in the center, 4 to 5 minutes. Scoop fried chicken out with a slotted spoon. Drain on a clean kitchen towel. Repeat with remaining chicken.

2 chicken drumsticks, skin on
2 chicken thighs, skin on, bone in
3 to 4 cups milk
2 1/4 cups solid vegetable shortening, for frying
1 tablespoon plus 1 teaspoon salt
3/4 cup all-purpose flour
1 teaspoon cayenne pepper
1 egg, beaten

Steps:

  • In a medium pan, place chicken and cover with milk. Cover with plastic wrap and refrigerate for 2 hours to overnight. This helps tenderize the meat, but is optional
  • In a large saucepan over a medium-high heat, using tongs, transfer chicken into pot, then pour in the milk. Bring milk to a boil, then reduce heat to medium-low allowing to simmer until the chicken is cooked through entirely, about 20 minutes. Remove the chicken from the milk, and place on a rack to cool. Allow them to sit until warm about 15 minutes, and then pat dry using a kitchen towel.
  • Heat vegetable shortening in a Dutch oven over high heat just until it's nearly at the smoking point around 325 degrees F.
  • In a large zip-lock bag, add salt, flour, cayenne pepper, shake to combine.
  • In a medium bowl, beat 1 egg.
  • Place each piece of chicken, 1 at a time, in the bag and shake to coat the chicken. Then dip chicken into the egg to coat. Place the chicken back into the flour to coat for a second time. Repeat this method on remaining 3 pieces of chicken.
  • Gently drop each piece of chicken into hot oil, allowing the skin to crisp and turn golden brown in color, about 1 minute per side. Remove from the oil and transfer to a paper towel-lined plate. Serve immediately.

1 (2 to 3 pound) whole chicken, cut into pieces

Steps:

  • Heat the shortening in a large, cast iron skillet over medium-high heat.
  • In a brown paper lunch bag, combine the flour, salt, and pepper. Shake two chicken pieces in the bag to coat, and place them in the skillet. Repeat until all of the chicken is coated and in the skillet.
  • Fry the chicken over medium-high heat until all of the pieces have been browned on both sides. Turn the heat to medium-low, cover, and cook for 25 minutes. Remove the lid, and increase heat to medium-high. Continue frying until chicken pieces are a deep golden brown, and the juices run clear.

1/4 cup amber or dark rum
1/4 cup fresh lime juice
1/4 cup soy sauce
1 tablespoon sugar
1 1/2 pounds skinless boneless chicken thighs, cut into 1 1/2-inch pieces
About 2 cups vegetable oil
1/2 cup all-purpose flour
1/2 teaspoon paprika
Accompaniments: lime wedges; hot sauce

Steps:

  • Stir together rum, lime juice, soy sauce, and sugar in a shallow bowl until sugar has dissolved. Add chicken and stir to coat. Marinate at room temperature 25 minutes.
  • While chicken finishes marinating, heat 1 inch oil in a deep 12-inch heavy skillet over medium-high heat until it shimmers.
  • Meanwhile, whisk together flour, paprika, and 1/2 teaspoon salt in a shallow bowl. Drain chicken and pat dry. Dredge in flour, shaking off excess, then transfer to a plate.

For the chicken pieces, make sure that they are not too big: whole drumstick, whole thigh, but the breast part should be chopped into two. Its also helpful to use the fryer cover-it helps the meat cook through properly.

2 teaspoons garlic salt
1 tablespoon celery salt
8 chicken pieces
2 beaten eggs
1 cup breadcrumbs
peanut oil

Steps:

  • Pre heat oil in deep fryer to 350°F.
  • Mix all the ingredients except the oil, breadcrumbs, eggs, and chicken in a large bowl.
  • Dip the chicken pieces in the egg and then turn them over in the breadcrumbs.
  • Roll them in the spicy flour mixture.
  • Heat the oil to 350 degrees F in a deep fryer and drop the chicken pieces in, one at a time with tongs careful not to splash hot oil.
  • Fry the chicken for 12 to 15 minutes, until it is golden brown and cooked through.
  • Drain on racks for 5 minutes.

This is one of our favorite game day recipes for tailgating. Bring on the Buffalo Chicken Bites for Super Bowl or for any time you need a delicious and unique appetizer!

4 ounces cream cheese (softened)
1 cup shredded chicken
¼ cup buffalo sauce ((store-bought or click for recipe))
1 cup shredded mozzarella cheese
½ cup shredded cheddar cheese
¼ ¼ ounce packet dry Ranch dressing mix
1 cup all-purpose flour
4 eggs (beaten)
¼ cup milk
2-4 cups seasoned panko breadcrumbs
Canola oil (for frying)

Steps:

  • Line a 6x6 inch dish with parchment paper. Cut the parchment paper 2 inches longer and wider than the dish, so the parchment paper hangs over the edges.
  • In a large bowl, combine all ingredients up through the ranch dressing mix until smooth and evenly mixed.
  • Press the mixture into the prepared 6x6 inch dish, and smooth the mixture flat with an offset spatula or a rubber spatula.
  • Cover and freeze until solid or at least 1 hour.
  • Remove the mixture from the freezer and cut into 1x1-inch squares.
  • Set up three shallow dishes; one dish for the flour, one for eggs/milk (beaten), and one for the breadcrumbs.
  • Dip each mozzarella bite in the flour (shaking off excess), in the egg/milk mixture, in the breadcrumbs, back in the egg/milk mixture and back in the breadcrumbs. Add more breadcrumbs or egg mixture as needed.
  • Set the prepared mozzarella bite on a small tray until all are ready.
  • While preparing the Mozzarella bites, pour 3 inches of oil in a medium-sized, deep saucepan and bring the temperature to 350°F.
  • When oil is ready, carefully place 4 mozzarella bites in the oil and stir to keep separated. The bites are ready when crispy and dark golden brown, approximately 1 minute. Transfer to a clean tray.
  • Repeat until all mozzarella bites are fried.
  • Serve hot with desired dipping sauces or dips such as Ranch dip, Buffalo Ranch dip, Honey Mustard, BBQ sauce.
  • Enjoy!

For Simmering:
1 pound (450g) chicken feet
1 teaspoon (4g) kosher salt, or to taste
2 tablespoons (30ml) soy sauce
1 tablespoon (15g) sugar
3 cloves garlic, smashed
1 stick cinnamon
For Deep-Frying and to Serve:
2 eggs, beaten
1 cup flour (about 4 1/2 ounces; 128g) mixed with 1 teaspoon (4g) salt
1 quart (900ml) oil for deep-frying
Sea salt, for serving

Steps:

  • Clip the toenails from the chicken feet and wash the feet, removing calluses and any loose-hanging skin.
  • Place the chicken feet in a 2-quart sauté pan and add enough water to cover. Add all simmering ingredients to pan and bring water to a boil, then reduce to a simmer and cook until feet are tender, 1 1/2 to 2 hours.
  • Remove feet from cooking liquid, which can be reserved for another purpose. Allow feet to cool.
  • Whisk eggs and flour/salt mixture in a medium bowl. Dip feet into batter, shaking off excess flour. If needed, dip the feet twice, to ensure they're fully coated.
  • In a wok, bring 1 quart (900ml) oil to 375°F (190°C). Add feet in batches and deep-fry until batter is golden brown, 3 to 5 minutes. Have a lid ready in the event of splattering oil. Serve immediately, adding a sprinkling of sea salt if needed.
