An Irish dish Gammon.A nice sweet and salty dish.Great for St. Patty's Day!Alternate cooking method: Fry ham in butter 3-4 minutes per side then remove ham add onions cooking till translucent, sprinkle with sugar and then with flour mix till blended in, add stock simmering for 5 minutes. Add whiskey season with salt, pepper and dried parsley. Top ham with sauce.

4 ham steaks
1 small onion, finely chopped
1 tablespoon brown sugar
2 tablespoons whiskey
1 teaspoon Dijon mustard
1 teaspoon cider vinegar
2 tablespoons flour
2 tablespoons butter
1 -1 3/4 cup water or 1 -1 3/4 cup stock
salt or pepper

Steps:

  • Brush steaks with melted butter.
  • Trim and cut into fat to prevent curling, and grill for 7-8 minutes each side.
  • --To make sauce, gently fry onions in remainder of butter until cooked.
  • Remove from heat cover with foil then whisk flour gradually into pan.
  • Add water or stock.
  • Return to heat.
  • Add brown sugar, Dijon, and vinegar and bring to the boil.
  • Lower heat and simmer gently for about 3-5 minutes to cook flour.
  • If sauce seems a little thick, add more water.
  • Add whiskey and season to taste.
  • Place ham steaks on a warmed serving platter and pour on sauce.

1/2 cup water
flour, for coating
1/2 lb any cheese, 3/4-inch cubes
oil (for deep frying)

Steps:

  • Dip cheese cubes in water and then dredge with flour.
  • Mix pancake mix and water together.
  • Dip cheese pieces in batter and put in deep fryer at 375°F.
  • Watch carefully until pieces are just browned. If you leave them too long they will melt out of the coating.
  • Drain on paper towels and serve with marinara or any other dipping sauce.

¼ cup milk
1 cup all-purpose flour
¾ cup beer
½ teaspoon salt
2 eggs
2 pounds cheese curds, broken apart

Steps:

  • Heat corn oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk together milk, flour, beer, salt, and eggs to form a smooth, rather thin batter. Place cheese curds, about 6 or 8 at a time, into the batter, stir to coat, and remove with wire strainer. Shake the curds a time or two to remove excess batter. Deep fry the curds until golden brown, 1 or 2 minutes. Drain on paper towels; serve hot.

7 -10 lbs fully cooked spiral cut ham
8 -10 sprigs fresh rosemary
1 large oven roasting bag
1 tablespoon margarine or 1 tablespoon butter
1/4 cup minced onion
12 ounces red currant jelly
1 tablespoon grated orange rind
1/4 cup orange juice
1 tablespoon grated fresh lemon rind
1/4 cup lemon juice
1 tablespoon Dijon mustard
1 cup port wine

Steps:

  • Preheat oven to 275 degrees.
  • Unwrap ham and remove plastic disc that covers the bone.
  • Tuck rosemary sprigs randomly through slice ham (about every 3 to 4 slices).
  • Place ham in cooking bag and tie ends together with enclosed plastic tie.
  • Place on a 13 x 9 inch baking dish.
  • Cut 3 1/2 inch slits on top per directions of cooking bag.
  • Don't let bag touch any part of the oven or it will melt.
  • Cook for 2 1/2 hours or until meat thermometer reads 140 degrees.
  • When ham is done, remove from oven and let sit in bag for 15 minutes before serving.
  • Carefully place ham on cutting board and remove slices to a warm platter.
  • Serve with Cumberland Sauce.
  • To make sauce, melt butter in a small saucepan.
  • Add onions and saute until tender.
  • Add jelly, grated orange rind, orange juice, grated lemon rind, lemon juice and Dijon mustard.
  • Cook over medium heat until jelly melts; stir constantly.
  • Slowly pour in port wine and simmer uncovered for 5 to 10 minutes.
  • Serve warm.
  • Can be kept up to five days in refrigerator.
  • Makes 2 cups.

2 oranges
1 lemon
5 tablespoons port wine
1 (10 ounce) jar red currant jelly
1/2 teaspoon ground ginger
1 teaspoon dry mustard
3/4 cup all-purpose flour
1/2 cup flat beer, at room temperature
1 pinch salt
1 teaspoon canola oil
1 egg, separated
2 (8 ounce) rounds camembert cheese
canola oil (for frying)
mixed salad green (to garnish)

Steps:

  • This dish is best made with a Camembert-style Irish cheese such as St. Killian, from Carrigbyrne Farmhouse Cheese, Enniscorthy, County Wexford. Like other white rind cheeses, this is delicious deep-fried in beer batter and served with tangy Cumberland Sauce, which should be prepared a day in advance to let the flavors meld.
  • To make the Cumberland sauce: With a vegetable peeler, peel strips of zest from the orange and lemon. With a sharp knife, shred the zest as thinly as possible. Put the zest into a small saucepan and cover with cold water. Bring to a boil, then reduce heat to simmer and cook for 5 minutes, or until the zest starts to soften. Drain and set aside.
  • Squeeze the juice from the oranges and lemon into a small saucepan. Add the jelly, ginger, and mustard, and bring to a boil. Cook for 5 minutes, then reduce heat to simmer and cook for 10 minutes, or until the mixture is reduced by half. Transfer the sauce to a small bowl and stir in the reserved zest. Refrigerate for at least 24 hours and up to 3 weeks. Makes about 1 1/2 cups.
  • To make the fried cheese: In a large bowl, whisk together the flour, beer, salt, and oil. There should be a few small lumps. Cover the bowl with plastic wrap and let stand in a warm place for about 3 hours. Stir in the egg yolk. In a small bowl, beat the egg white with an electric mixer until stiff peaks form. Fold into the beer batter.
  • Cut each round of cheese, rind and all, into 8 pie-shaped slices, then cut each slice in half. In an electric skillet or deep fryer, heat the oil to 325°F Dip the cheese pieces, one at a time, into the beer batter. Drop into the hot oil, and cook, turning as necessary with a wooden spoon, for 1 to 2 minutes, or until golden brown. With a slotted spoon, remove each piece as soon as it's browned and drain on paper towels.
  • To serve, spoon the Cumberland sauce into small ramekins or dishes and place in the center of 4 salad plates. Arrange the mixed greens around each ramekin and place 8 pieces of cheese on top. Serves 4.
