1 jar capers, nonpareil or large variety, drained and dried
½ cup extra virgin olive oil, such as Colavita

Steps:

  • 1. Line a plate with several layers of paper towels. 2. Pour evoo in a small sauté pan and place over medium heat until the oil reaches 350°F with a deep fry thermometer. 3. Fry capers in batches for 2 to 3 minutes, until they split and are crispy. Transfer crispy capers to prepared plate. Use them to garnish your favorite meat or veggie dishes like our Chicken Piccata. Jarred capers in brine
vegetable or olive oil to fill small saucepan 1/8 inch deep

Steps:

  • Pour oil into small sauce pan to 1/8 inch deep.
  • Heat oil until shimmering or 350F.
  • Drain capers and dry on paper towels or kitchen towel.
  • Add capers to pan without overcrowding, in batches if making a large quantity.
  • Fry until golden brown, about 2-3 minutes.
  • Carefully remove capers from oil with a slotted spoon and drain on paper towel.
  • Let rest a few minutes before using. If making ahead, they can stay uncovered at room temperature for several hours.
  • To store, keep in covered container at room temperature for several days.

This calamari steak has a zing of flavor from lemon caper sauce. It's dredged in flour and parmesan cheese then sauteed for a golden finish.

2 tbsp olive oil
¼ cup finely grated parmesan cheese
3 tbsp all purpose flour
¼ tsp black pepper
1 large egg
1 tbsp water
4 1 lb total whole calamari steaks
2 tbsp unsalted butter
1½ tbsp freshly squeezed lemon juice
1 tbsp rinsed and drained capers
lemon wedges

Steps:

  • Heat the oil in a large skillet over moderately high heat until hot but not smoking.
  • While the oil heats, stir together the cheese, flour, and pepper in a wide shallow bowl, then lightly beat the egg with water in another wide shallow bowl.
  • Dredge 1 calamari steak into the flour mixture, shaking off the excess, then dip in the egg mixture, letting the excess drip off, and transfer to a plate.
  • Dredge another steak in flour and dip in egg in the same manner, then sauté the coated steaks over moderately high heat, turning over once for about 1½ minutes until golden.
  • Transfer to a platter and keep warm, loosely covered. Dredge, dip and sauté the remaining steaks in the same manner, transferring to a platter.
  • Pour off the fat from the skillet, then add butter, lemon juice to taste, and capers to the skillet and cook over moderate heat for about 45 seconds just until the butter melts.
  • Pour the lemon caper sauce over the calamari steaks and serve immediately. Enjoy!

2 1/2 tablespoons olive oil, divided
2 lbs medium-size asparagus, ends trimmed
salt & freshly ground black pepper
1/4 cup large capers, drained

Steps:

  • Preheat oven to 500°; place asparagus on baking sheet and drizzle with 1/2 T olive oil; roll asparagus around until it and pan are lightly coated; season with salt and pepper.
  • Roast until tender-crisp and bright green, about 5-8 minutes and plate; meanwhile heat the remaining 2 T oil in a small skillet; deep fry the capers in the oil for 1 minute; transfer capers with a slotted spoon and sprinkle over the asparagus.

Canola oil, for deep-frying
1 clove garlic, minced
4 salt-packed anchovy fillets, rinsed, filleted and minced
1 serrano chile, seeded and minced
1/4 cup red wine vinegar
1 tablespoon honey
2 scallions, white and green parts, thinly sliced on the bias
1/2 cup walnut pieces, toasted and coarsely chopped
1/2 cup extra-virgin olive oil
1 pound Brussels sprouts, trimmed and quartered lengthwise
2 cups loosely packed flat-leaf parsley leaves
2 tablespoons salt-packed capers, rinsed and patted dry
Kosher salt and freshly ground black pepper

Steps:

  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 350 degrees.
  • While the oil is heating, whisk together the garlic, anchovies, serrano, red wine vinegar, honey, scallions, walnuts and extra-virgin olive oil in a bowl large enough to toss all of the Brussels sprouts. Keep the bowl near the stovetop.
  • Working in batches, deep-fry the Brussels sprouts until the edges begin to curl and brown, about 3 minutes. To the last batch, add the parsley and capers (stand back-the capers will pop and sputter!). Give the contents of the pot a stir. When the color of the parsley becomes a deeper, more saturated shade of green, about 30 seconds to 1 minute, remove the contents of the pot with a skimmer and place directly in the bowl of dressing. Toss to coat. Add salt and pepper to taste.

1/4 cup large capers, preferably packed in salt*
1 1/2 cups vegetable oil
Special equipment:
Special equipment: a deep-fat thermometer

Steps:

  • Rinse capers in a sieve and transfer to a small bowl. Add enough water to cover capers by 2 inches, then soak 30 minutes. Repeat soaking method.
  • Drain and rinse capers, then pat very dry between paper towels.
  • Heat oil in a 1-quart heavy saucepan over moderately high heat until it registers 375°F on thermometer. Fry capers in 2 batches until golden, 30 to 45 seconds per batch. Transfer with a slotted spoon to paper towels to drain and return oil to 375°F between batches.

2 cups small cooked shrimp, lobster, or lump crabmeat, coarsely chopped (use any 1 of the crustaceans or a mix of all 3)
Enough mayonnaise to bind (about 1/3 to 1/2 cup)
Enough paprika so it doesn't look anemic
At least 1/2 cup chopped red onion
At least 1/2 cup parmesan
Salt and pepper to taste
Small scallop shells for serving
The Capers:
1/4 cup large salt-packed capers
1 1/2 cups vegetable oil

Steps:

  • Turn on broiler.
  • Mix all ingredients and-if this is 1959-put into scallop shells.
  • Run under broiler until brown and shiny, and serve with tiny cocktail forks. If you are less retro, put on any sturdy cracker or black bread.
  • Run under broiler. Invariably devoured.
  • The capers:
  • Rinse capers and soak in fresh water. After 1/2 hour, change water and soak for another 1/2 hour. Remove capers and pat very dry.
  • Heat oil and fry capers in 2 batches, until quite crisp and lightly browned, about 30 seconds each.
  • Drain on paper towels and serve immediately.
  • Garnish the above or just serve in a bowl.
