4 cups Biscuit Baking Mix
1 cup water
1 pound ground beef
1 green pepper (chopped)
1 onion (chopped)
1/8 teaspoon garlic powder
8 ounce can tomato sauce
1.25 ounce package taco seasoning
1 cup shredded Cheddar cheese
1 cup sour cream
1/3 cup mayonnaise
1/4 teaspoon paprika
Garnish: Sour cream and pico de gallo

Steps:

  • Mix biscuit baking mix and water; spread evenly in lightly greased 9 x 13 baking pan.
  • Bake at 375 degrees for 15 minutes; remove from oven and set aside.
  • Brown ground beef; drain.
  • Add green pepper, onion and garlic powder.
  • Stir in tomato sauce and taco seasoning and let simmer for 5 minutes.
  • Spread mixture over crust.
  • Stir together cheese, sour cream and mayonnaise; spoon over beef mixture.
  • Sprinkle with paprika.
  • Bake at 375 degrees for an additional 25 minutes.
  • Cut into squares; garnish with sour cream and pico de gallo.

1 pound lean ground beef (90% lean)
1 cup shredded reduced-fat cheddar cheese
1/3 cup reduced-fat mayonnaise
1/3 cup reduced-fat sour cream
1 tablespoon finely chopped onion
1 cup reduced-fat biscuit/baking mix
1/4 cup cold water
1 small tomato, sliced

Steps:

  • In a nonstick skillet, cook beef over medium heat until no longer pink; drain. Remove from the heat; stir in the cheese, mayonnaise, sour cream and onion. , In a large bowl, combine biscuit mix and water. Spread into an 8-in. square baking dish coated with cooking spray. Top with beef mixture and tomato. Bake, uncovered, at 375° for 20 minutes or until bottom crust is golden brown.

2 cups biscuit mix
1/2 cup cold water
1 lb ground beef
1 green pepper, chopped
1 small onion, chopped (2 T.)
1 (8 ounce) can tomato sauce
1 (8 ounce) carton sour cream
1 cup sharp cheddar cheese, shredded
1/3 cup mayonnaise
paprika

Steps:

  • Combine biscuit mix and water, stirring with a fork until blended.
  • Press mixture in bottom of a lightly greased 12x8x2" baking dish.
  • Bake at 375 degrees for 9 minutes.
  • Cook ground beef, green pepper, and onion in a large skillet until meat is browned, stirring to crumble meat; drain well.
  • Stir in tomato sauce; spoon over crust.
  • Combine sour cream, cheese, and mayonnaise in a medium bowl; spoon over meat mixture.
  • Sprinkle top evenly with paprika.
  • Bake at 375 degrees, uncovered, for 25 minutes or until casserole is lightly browned.
  • Cut into squares to serve.

1 tablespoon onion, finely chopped
1 cup Bisquick
1/4 cup cold water
2 tomatoes, chopped
1 bell pepper, chopped
1/2 cup sour cream
1/3 cup mayonnaise
4 ounces cheddar cheese, shredded

Steps:

  • Grease an 8x8 pan.
  • Brown ground beef and onion, then drain.
  • Mix Bisquick and water until dough forms.
  • Pat in pan, pressing 1/2 inch up sides.
  • Layer beef, tomatoes, and green pepper in pan.
  • Mix last 3 ingredients together.
  • Spoon sour cream mixture over top of peppers.
  • Bake at 375 degrees 25-30 minutes.

This "one-pan" taco combines all the great ingredients of tacos, but is a snap to make and less messy to eat than regular tacos. Time Saver: Cut prep time by using frozen chopped onions. This came from Best Of Betty Crocker 2010. I have not tried it, just posting for safe keeping.

1/2 lb 80% lean ground beef
1/4 cup chopped onion
2 tablespoons old el paso taco seasoning
1 cup Bisquick
1/4 cup cold water
1/2 cup sour cream
1/3 cup mayonnaise or 1/3 cup salad dressing
1/2 cup shredded sharp cheddar cheese (2oz)
1 medium tomatoes, chopped (3/4 cup)
4 1/2 ounces old el paso chopped green chilies

Steps:

  • Heat oven to 375. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 8-inch skillet, cook beef and onion over medium-high heat 5-7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix until blended.
  • In medium bowl, stir Bisquick and water until soft dough forms. Using fingers dipped in Bisquick, pat dough in bottom and 1/2-inch up sides of baking dish.
  • In same bowl, mix sour cream, mayonnaise and cheese until blended.
  • Layer beef mixture, tomato and chilies over dough; spoon sour cream mixture over top.
  • Bake 25-30 minutes or until edges of dough are light golden brown.
