Steps:
- juice over peach slices in large bowl.
- Mix 1 1/4 cup sugar with the salt, nutmeg, cinamon and flour.
- Add to peaches.
- Toss until evenly coated.
- Spread in 1 1/2 quart baking dish.
- Dot with butter.
- Roll out pastry to to cover dish with 1 1/2 inch overhang.
- Press pastry to edge of dish and flute edge.
- Cut 3 vents in top.
- Sprinkle with remaining sugar.
- Bake 10 minutes at 450 degrees, then reduce heat to 350 degrees and bake 30 minutes more.
- Serve with whipped cream.
- Preheat oven to 450 degrees

Delicious-my own recipe- this recipe is designed for the Le Creucet Round Tatin Pan. The Tatin is made of enameled cast iron. It measures approx 9 3/4 " in diameter and about 3" tall.

- Preheat Oven to 400°F.
- Mix peaches, cinnamon, sugar and flour-toss to coat. Set aside.
- Press 1 crust into pan and mold ( with fingers) into pan. Flute edges.
- Pour peach mixture into the crust.
- Dot with butter.
- Cut top crust into strips and lattice the top of the pie . Use extra crust to form small designs that you can put over the lattice( optional).(Or put a top crust on any other way you want).
- Brush with egg white mixed with water.
- Sprinkle additional sugar/cinnamon on the top lightly.
- Bake for 45-55 minutes or until the peaches are bubbly and the top is browned.
- Place hot pan over rack to cool.

CARAMELISED FRUIT TARTE TATIN (UPSIDE DOWN PASTRY PIE)
I originally got this recipe from the Australian Better Homes and Gardens Magazine, but I've since modified it to suit my tastes or to what is available at the time. The recipe will lend itself to all different kinds of fruit, you can also add some nuts. It is a super quick dessert that is perfect to impress your guests with.

Steps:
- Preheat oven to moderate - 200c.
- Cut pastry to size of baking pan or dish.
- Melt butter in a non stick pan. Add sugar and cook over a medium heat until the mixture is a caramel colour and the sugar has dissolved. Careful not to burn it. Remove from heat.
- Mix in brandy or liqueur (careful, it may sizzle and spit). Pour into baking dish. Put the fruit pieces in the dish, cut (flat) side down.
- Place pastry over top of fruit and tuck in the sides.
- Bake for 20 mins or until pastry has risen and is golden and crispy.
- Carefully invert the tarte Tatin onto a plate (fruit side up, with the pastry on the bottom). Serve immediately with a dollop of cream or ice cream, sprinkled with toasted almond flakes.

- Preheat oven to 400 degrees.
- Line a 9-inch pie pan with pastry.
- Combine the 1 cup of sugar, flour and cinnamon, mixing well.
- Lightly mix in the fresh peaches and pour into the pie shell.
- Dot with butter and cover with a top crust.
- Prick the top crust and sprinkle with sugar.
- Put the pie into a 400 degree oven and bake for 40 to 50 minutes.

Steps:
- Combine cream cheese and 1/2 cup sugar in a small bowl. Spread mixture over bottom of baked and cooled piecrust.
- Place remaining sugar, orange juice, 2 tablespoons lemon juice, cornstarch, and 1/2 cup peaches in a blender and blend until smooth. Heat in a saucepan over medium heat until slightly thickened.
- Toss remaining peaches with remaining lemon juice and set aside.
- Add peaches to cooked mixture and stir to coat. Let mixture cool.
- With slotted spoon, scoop up peaches and place in piecrust. Refrigerate for a couple of hours before serving.

- In a small bowl stir together sugar, cornstarch, orange peel, and nutmeg. In 1 1/2-qt casserole combine the peaches and the oranges. Add the sugar mixture; stir till well coated. Dot the fruit mixture with the butter.
- In medium bowl stir together flour and salt. Cut in shortening till pieces are the size of small peas.
- Sprinkle 1 tablespoons water over part of flour mixture; gently toss with fork. Push to side of bowl. Repeat till all is moistened. Form into a ball.
- On lightly floured surface flatten the dough withhands. Roll dough from the center to the edge, forming a 9" circle. Cut slits.
- Roll up the pastry around the rolling pin; transfer to casserole and unroll over the fruit mixture.
- Trim the edge of the pastry. Flute the pastry to the side of the casserole, but not over the edge. To prevent overbrowning, cover the edge of the pastry with foil.
- Place casserole on baking sheet in oven (mixture may bubble over slightly.) Bake in 375 degree oven for 25 minute Remove foil; bake for 30--35 minute longer or till crust is golden brown. Cool the pie on wire rack. Serve warm or cool. Spoon into dessert dishes to serve.

CHEAT'S FRENCH CASSOULET - CROCK POT OR LE CREUSET
This great Cheat's recipe has all the elements of a traditional French Cassoulet - assorted meats, beans, carrots, tomatoes, wine & tomatoes - but is very easy & does not include Confit d'Canard if you find that difficult to obtain. However, you need to get hold of high meat content sausages to give it a more authentic taste. I have given a few variations at the bottom of the recipe; this recipe works extremely well in a Crock pot as well as the more traditional Le Creuset casserole dishes. French comfort food at it's best! Serve with mashed potatoes & crisp Savoy Cabbage. This recipe can be easily doubled for bigger or hungry crowds of diners! NOTE on BEANS: I use tinned/canned beans or pre-soaked and cooked beans in this recipe; for uncooked beans, you will need to soak them overnight and then boil them; then increase the cooking time by about 15 minutes. This was posted as a "Cheat's" recipe, meaning cutting a few corners if you don't have time - i.e. use tinned beans!! P.S. I have a sausage recipe posted: Recipe #190045 that would work well with this recipe.

Steps:
- Heat olive oil in a large skillet - fry the bacon until nearly crisp & then add the onions, garlic, & carrots. Cook over a high heat until they are just soft on the outside & turning a golden colour. Drain well & remove from pan. Add to crock pot or Le Creuset casserole dish.
- Add sausages and brown - remove & add to onion mixture.
- Add pork chop pieces & brown - remove and add to above mixture.
- Make up chicken stock and add wine. Mix tomatoes in with stock & teaspoon of sugar.
- Pour stock and tomatoes over the cassoulet in crock pot or le creuset - add bouquet garni & give everything a good stir!
- Add the beans and stir well again.
- Sprinkle breadcrumbs on top and cook for up to 6 hours on high in crock pot or in le cresuet for 3 hours in a slow oven with the lid on, 150C/300°F.
- Half an hour before serving, take lid of le creuset to brown the top. It's difficult to brown in a crock pot, but it's not that essential to brown the top, as the reason behind the breadcrumbs is to soak up some of the juice & make a crust on top! If your crock pot is the type which you can put under the grill, then do so!
- Serve with mountains of fluffy mashed potatoes & stir-fried Savoy Cabbage.
- NOTE ON SAUSAGES:.
- Try to use very good quality high meat content sausages; in France Toulouse sausages are mainly used - they generally have a meat content of at least 85%. Good quality English style sausages are also good - I have a recipe posted for some English sausages: Recipe #190045.
- However, any kind of sausage can be used and in the past I have used: Choritzo, Italian Style, Chipolatas etc.
- The Pork chops can be replaced with chicken pieces, lamb steaks or Confit D'Canard - preserved duck, if you are lucky enought to have some!

- For crust---------------.
- Blend first 5 ingredients in processor.
- Using on/off turns, cut in butter until coarse meal forms.
- Add 3 tablespoons ice water and vinegar; using on/off turns, blend until moist clumps form, adding more water if dough is dry.
- Gather dough into ball.
- Flatten into disk.
- Wrap in plastic; chill at least 1 hour and up to 1 day.
- Roll out dough on lightly floured surface to 11-inch round.
- Transfer to rimless baking sheet.
- Cover and refrigerate while preparing filling.
- For filling--------------.
- Preheat oven to 425°F.
- Stir sugar and 3 tablespoons water in heavy ovenproof (preferably cast-iron) 9-inch-diameter skillet with 2-inch-high sides over medium heat until sugar dissolves.
- Increase heat to high and boil without stirring until syrup turns light amber color, occasionally swirling pan and brushing down sides of pan with wet pastry brush, about 6 minutes.
- Turn off heat.
- Add butter; stir until melted and smooth.
- Cool 2 minutes.
- Place 1 peach half, rounded side down, in center of pan.
- Arrange peach quarters close together, rounded side down, in concentric circles around peach half.
- Press remaining peach half and quarters, rounded side down, atop first layer.
- Cook over medium heat until caramel is bubbling thickly, about 20 minutes.
- Place chilled pastry atop hot fruit.
- Let stand 3 minutes to soften.
- Tuck dough edges around fruit.
- Bake tart until crust is golden and filling thickens and darkens, about 30 minutes.
- Cool in pan on rack 10 minutes.
- Place platter atop skillet.
- Using oven mitts, invert tart onto platter.
- Serve warm with whipped cream.
