1 tablespoon cornstarch

2 cups fresh or frozen cranberries
1 (9 inch) pastry shell, baked
1 tablespoon unflavored gelatin
1 3/4 cups eggnog
2 tablespoons rum or 1 teaspoon rum extract
1/2 cup heavy whipping cream, whipped
1/8 teaspoon nutmeg, ground

Steps:

  • In a large saucepan, combine the sugar, cornstarch and 2 tablespoons water until smooth. Stir in cranberries. Cook over medium heat for 5 minutes or until thickened, stirring occasionally. Cool for 15 minutes. Pour into baked pastry shell; set aside. In a small saucepan, sprinkle gelatin over remaining 4 tablespoons water> Let stand for 5 minutes. Cook and stir over low heat, stirring until gelatin is completely dissolved. Gradually stir in eggnog and rum. Refrigerate for 5 minutes or until slightly thickened, stirring occasionally. Fold in whipped cream. Pour over cranberry layer. Refrigerate for 2 hours or until set. Sprinkle with nutmeg.

I never go wrong with my favorite chef's recipes during the holidays. This is a wonderful pie by Wolfgang... It is a more complex balanced pumpkin pie, but is sure to impress. Making the homemade crust, a cranberry marmalade and pumpkin filling adding a mixture of spices and a splash of burbon, which adds an extra hint of intriguing flavor without an appreciable amount of alcohol.... makes this an extraordinary holiday pie.

4 tablespoons sugar
1/2 cup water
1 tablespoon grated orange zest
2 tablespoons Grand Marnier
1 vanilla bean, cut lengthwise in half, seeds scraped out and reserved
1 cinnamon stick
1 pinch ground nutmeg
1/2 lb cranberries (fresh or frozen)
1 2/3 cups all-purpose flour
1 2/3 cups cake flour
1/2 cup sugar
1/2 teaspoon salt
1/2 lb unsalted butter, cut into small pieces
2 egg yolks
1 tablespoon whipping cream
6 -8 tablespoons ice water
2 cups canned organic pumpkin puree
1 cup packed dark brown sugar
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 pinch salt
1 pinch white pepper
4 eggs
1 cup heavy cream
1/2 cup half-and-half
3 tablespoons Bourbon

Steps:

  • Up to 2 days ahead, prepare the Sugar Dough and Cranberry Marmalade
  • Marmalada: (Makes about 1 cup).
  • Put the sugar, water, orange zest, Grand Marnier, vanilla bean and seeds, cinnamon, and nutmeg in a saucepan. Bring to a boil over medium-high heat. Stir in the cranberries, reduce the heat, and simmer until the berries have softened, 3 to 5 minutes. Set aside to cool for at least 30 minutes. Remove the vanilla bean and cinnamon stick. If making in advance, transfer to a covered container and refrigerate until ready to use.
  • SUGAR DOUGH: (Makes enough for 2 pies) (Freeze one).
  • Put the flours, sugar, and salt in a food processor fitted with the stainless-steel blade. Pulse to combine.
  • Add the butter and pulse 10 to 15 times, until the mixture resembles coarse cornmeal. Add the egg yolks and cream and pulse twice. Pulse in enough of the ice water to form a smooth but not wet dough.
  • Gather the dough into a ball and divide it into 2 equal pieces. Flatten each piece into a disk, wrap it individually in plastic wrap, and seal in an airtight freezer bag. Refrigerate 1 piece until ready to make the pie; freeze the other piece for another use.
  • Assembly:.
  • On a lightly floured work surface, use a rolling pin to roll out the dough into a 13-inch circle. Transfer to a 10-inch deep-dish pie plate. Gently press the dough into the plate and trim the edges with a small, sharp knife. Refrigerate for 30 minutes.
  • Meanwhile, preheat the oven to 375 degrees F.
  • Line the chilled pie shell with parchment paper or aluminum foil. Fill it with pie weights or dried beans. Bake for 15 minutes. Carefully remove the paper or foil and weights; bake for 10 minutes more. Set aside on a wire rack to cool.
  • Spread the Cranberry Marmalade evenly on the bottom of the pie shell.
  • For the Pumpkin Filling, in a large mixing bowl combine the canned pumpkin, brown sugar, spices, salt, and pepper. With a wire whisk, thoroughly stir in the eggs, cream, half-and-half, and bourbon. Pour into the pie shell and smooth its surface with a rubber spatula.
  • Bake the pie until a wooden toothpick inserted into the center comes out clean, 50 to 60 minutes. Remove to a wire rack and leave to cool to room temperature. Chill in the refrigerator before cutting into wedges and serving.

1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the sugar and flour together in a mixing bowl. Beat in the eggnog, eggs, and vanilla to make a smooth mixture. Stir in the butter. Pour into the prepared pie crust.

FOR COOKIE CRUST
1 1/4 c all purpose flour
1/4 c sugar
1/2 tsp salt
7 Tbsp unsalted butter, softened
1 large egg
FOR FILLING
1 1/2 pkg (8 oz.) packages of cream cheese, softened
2 Tbsp creme fraiche or heavy cream
1/2 c plus 2 tbsp sugar
2 large eggs
2 large egg yolks
3 Tbsp bourbon
1 tsp vanilla
1/3 tsp freshly grated nutmeg
1/4 tsp salt
2 c cranberry jam
1/4 c water
CRANBERRY JAM
12 oz bag fresh or frozen cranberries (not thawed; 3 1/2 cups)
1 c sugar
1/2 c fresh orange juice
1 c water
CANDIED ORANGE & CRANBERRY COMPOTE
3/4 c water
3/4 c sugar
1 large orange, navel quartered lengthwise & sliced crosswise paper thin (including peel)
1/4 c fresh or frozen, sliced cranberries
1 - 2 Tbsp grand marnier or any orange flavored liqueur

Steps:

  • 1. Special equipment: a 10-inch fluted metal quiche pan (2 inches deep) with a removable bottom; about 3 cups pie weights or raw rice; a pie shield (optional); a small offset spatula. (I didn't have 3 cups of rice, so I just put another pie dish made of glass or maybe it was Pyrex down inside the other. It worked out in a pinch.)
  • 2. Make crust: Pulse together all crust ingredients in a food processor just until a dough forms. Press dough evenly onto bottom and up side of quiche pan with floured fingers. Chill shell until firm, about 30 minutes. Put oven rack in middle position and preheat oven to 350°F. Line shell with foil and fill with pie weights, then bake until edge is pale golden, 20 to 25 minutes. Carefully remove foil and pie weights and bake shell until edge is golden and bottom is pale golden, 15 to 20 minutes more. Cool completely in pan on a rack. Reduce oven temperature to 300°F.
  • 3. Make filling: Blend cream cheese, crème fraîche, and sugar in cleaned food processor until creamy, about 1 minute. Add whole eggs, yolks, bourbon, vanilla, nutmeg, and salt and process until smooth.
  • 4. Melt jam with water in a small heavy saucepan over moderately low heat, stirring until smooth. Spread half of jam evenly over bottom of shell(reserving remaining jam in saucepan). Let layer of jam stand until set, about 5 minutes,
  • 5. ....then gently pour cream cheese mixture over it.
  • 6. Bake tart: Cover edge of tart shell with pie shield or foil and bake until filling is set but still trembles slightly in center, 35 to 40 minutes (filling will continue to set as it cools).
  • 7. Cool tart completely in pan on a rack. Reheat remaining jam over low heat, stirring, until pourable, then pour over filling and spread evenly with offset spatula. Chill tart, uncovered, until cold, at least 2 hours. Just before serving, remove side of pan.
  • 8. FOR HOMEMADE CRANBERRY JAM: Bring all ingredients to a boil in a 2-quart heavy saucepan over moderate heat, stirring occasionally. Reduce heat and simmer, uncovered, stirring occasionally, until slightly thickened, about 20 minutes (jam will continue to thicken as it cools). Force jam through a fine-mesh sieve into a bowl, discarding skins and seeds. Cool, stirring occasionally. Cooks' note: Jam can be made 4 days ahead and chilled, covered. 1 package refrigerated pie crust, 9-inch
1 (12-ounce) package fresh cranberries
1 1/4 cups sugar or honey
2 tablespoons flour
1 (8-ounce) package cream cheese, softened
1 1/2 cups eggnog
3 eggs, well beaten

Steps:

  • Have the package of pie crusts at room temperature before you start. Take the two crusts out of the package and work them together with your hands to form one ball. On a floured cutting board roll the dough out into one large circle. Try to get it at least 13-14 inches in diameter. Line a 10-inch Dutch oven with the crust, taking care not to break it as you fit it to the bottom and sides. Crimp the crust to the top of the DO. Pour the cranberries into the pie shell along with all but 1/4 cup of the sugar or honey. Set the 10-inch DO inside a Deep 12-inch DO with three brass canning rings on the bottom. Bake the crust and berries for about 15 minutes or until the crust just begins to brown with 12-14 briquets underneath and 25 on the lid. While waiting for the crust to brown, cream the 1/4 cup sugar and flour with the cream cheese. Slowly add the eggnog while vigorously mixing with a wire whisk. To this, add the well beaten eggs and mix well again with the whisk. When the edge of the crust has lightly browned, pour the eggnog mixture on top of the cranberries. Continue baking for about 50 minutes or until filling sets. Serve well chilled!

1/4 teaspoon salt
1/4 cup margarine

1 1/2 cups sharp cheddar cheese, shredded

1/3 cup flour
1/2 teaspoon cinnamon
6 cups apples, peeled and sliced thin
2 cups cranberries
1 tablespoon margarine

Steps:

  • Combine flour, baking powder, and salt
  • Cut in margarine until mixture resembles coarse crumbs.
  • Add combined egg and milk to flour mixture.
  • Stir in cheese.
  • Form into a ball.
  • Roll 2/3 of dough into a 15 inch square on a lightly flourd surface.
  • Line an 8 inch square baking dish with dough.
  • Flute edges
  • Combine flour, sugar, and cinnamon.
  • Toss with apples and cranberries.
  • Spoon into pastry dough shell.
  • Dot with margarine.
  • Roll out remaining dough to a 12 inch square.
  • Cut into 1/2 inch strips.
  • Place on top of fruit in a lattice pattern.
  • Press to seal edges.
  • Bake at 400* for 30 min.
