1 cup shredded lettuce
1 plum tomato, chopped
1/4 cup KRAFT 2% Milk Shredded Cheddar Cheese
3 slices cooked OSCAR MAYER Selects Uncured Turkey Bacon, chopped
1/2 cup chopped OSCAR MAYER Natural Applewood Smoked Turkey Breast
1 avocado, chopped

Steps:

  • Mix Neufchatel and dressing until blended; spread onto large plate.
  • Top with remaining ingredients.
  • Refrigerate 1 hour.

1 whole bone-in turkey breast (6 1/2 to 7 pounds)
3 turkey drumsticks (about 2 1/4 pounds total)
2 turkey thighs (about 1 1/2 pounds total)
Kosher salt
1/4 cup honey
1 head garlic, cut in half (do not peel)
2 bay leaves
4 sprigs thyme
4 large sprigs sage, plus more for garnish
2 teaspoons whole black peppercorns
2 teaspoons whole allspice
1/4 cup fresh celery leaves (from 1 bunch)
3 tablespoons unsalted butter, melted

Steps:

  • For the Gravy:
  • 2 to 3 cups low-sodium chicken broth
  • 4 tablespoons unsalted butter
  • cup all-purpose flour
  • Kosher salt and freshly ground pepper
  • Brine the turkey:
  • Rinse the turkey parts and place in doubled 21/2-gallon resealable plastic bags (or a large stockpot). Add 1/4 cup salt, the honey, garlic, bay leaves, thyme, 2 sprigs sage, the peppercorns, allspice and celery leaves. Add enough cold water to cover the turkey (about 3 quarts). Press out the air, close the bags and place in a large bowl or other container to protect against any leaks. Refrigerate at least 6 hours or overnight. Roast the turkey: Position racks in the upper and lower thirds of the oven and preheat to 425.
  • Remove the turkey parts from the brine and pat dry with paper towels. Place skin-side up on racks set in 2 medium roasting pans (be sure to leave space between the turkey parts to allow air to circulate). Pour 1 cup water into each pan. Drizzle the turkey parts with melted butter and scatter with the leaves from the remaining 2 sage sprigs. Place 1 pan on each oven rack and roast until the turkey begins to brown, about 30 minutes.
  • Lower the oven temperature to 400. Switch the positions of the pans and rotate from front to back. Continue roasting until a thermometer inserted into the thickest part of the breast (avoiding bone) registers 165degrees, 1 hour to 1 hour, 15 minutes. Transfer the turkey parts to a platter and tent with foil.
  • Make the gravy: Pour the pan juices into a 4-cup glass measuring cup and let rest until the fat rises to the top, 2 to 3 minutes. Skim off and reserve the fat. Set 1 roasting pan across 2 burners, add 2 cups chicken broth and bring to a simmer over medium-high heat, scraping up any browned bits. Add the simmering broth to the pan juices in the measuring cup, then add the additional chicken broth, if needed, to equal 4 cups liquid.
  • Melt the butter in a medium saucepan over medium-low heat. Whisk in the flour and cook, whisking constantly, until smooth, about 2 minutes. Gradually whisk in the broth mixture and any collected juices from the platter. Increase the heat to medium high and boil, uncovered, until thickened, about 8 minutes. Season with salt and pepper.
  • Carve the turkey pieces and garnish with sage. Serve with the gravy.

  • Mix cream cheese and dressing until blended; spread onto bottom of pie plate.

4 large eggs
1 1/8 teaspoons smoked paprika
Kosher salt and freshly ground pepper
1 1/2 pounds turkey cutlets
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 pint cherry tomatoes, halved
2 romaine lettuce hearts, chopped
1/2 avocado, peeled and chopped
1/4 cup crumbled blue cheese (about 1 ounce)

Steps:

  • Put the eggs in a medium saucepan and cover with water by 2 inches; bring to a boil, then remove from the heat, cover and let stand 10 minutes. Transfer to a bowl of ice water to cool.
  • Meanwhile, preheat the broiler. Combine 1 teaspoon paprika, 1/4 teaspoon salt, and pepper to taste in a small bowl. Arrange the turkey cutlets on a baking sheet and sprinkle both sides with the paprika mixture. Broil until just cooked through, about 3 minutes per side. Transfer to a plate and set aside while you make the dressing.
  • Combine the vinegar, the remaining 1/8 teaspoon paprika, 1/2 teaspoon salt, and pepper to taste in a large bowl. Whisk in the olive oil along with any collected juices from the turkey. Finely chop 1/4 cup of the tomatoes and add to the dressing.
  • Peel and halve the hard-boiled eggs. Discard the yolks or save for another use. Chop the egg whites and add to the bowl with the dressing, along with the lettuce, avocado and the remaining 1 3/4 cups tomatoes. Chop the turkey, add to the bowl and toss. Divide the salad among bowls and sprinkle with the blue cheese.

6 large eggs
50g (about 7) thin slices pancetta
50ml rapeseed oil
3 tbsp cider vinegar
1⁄2 tbsp Dijon mustard
1 tbsp finely chopped parsley
1 small garlic clove , finely grated
500g cooked turkey breast, sliced
3 heads of mixed chicory , leaves separated
2 medium avocados , peeled, stoned and sliced
4 medium tomatoes , quartered
2 tbsp mixed seeds

Steps:

  • Cook the eggs in a large pan of boiling water for 8 mins. Drain, transfer to a bowl of cold water and leave to cool.
  • Heat the grill to high. Put the pancetta on a baking sheet lined with foil and grill for 3-4 mins, or until crisp. Pat with kitchen paper to remove any excess oil and leave to cool.
  • Whisk the oil, vinegar, mustard, parsley and garlic together. Peel and halve the eggs.
  • Arrange the turkey, chicory, avocado, tomatoes, pancetta and eggs on a large platter. Drizzle over the dressing, season and serve with the seeds on the side for sprinkling over.

I recently went to a gathering and this was served there. I came home and tried my hand at making a similar dip. This has all the flavors of a Cobb salad in the form of a dip. Serve with chips, crackers, saltines, or crusty bread.

1 (8 ounce) package Neufchatel cheese, softened
⅓ cup blue cheese dressing (such as Bob's Big Boy®)
4 slices bacon
1 cup finely chopped lettuce
2 hard-boiled eggs, crumbled
1 avocado, diced
½ cup diced turkey breast
½ cup diced tomatoes
⅓ cup blue cheese crumbles
¼ cup sliced green onions, green part only

Steps:

  • Combine Neufchatel cheese and blue cheese dressing. Spread onto a 9-inch pie plate and place in the refrigerator.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool. Crumble and set aside.
  • Layer chopped lettuce over Neufchatel cheese mixture. Top with bacon, eggs, avocado, turkey breast, tomatoes, blue cheese crumbles, and green onions.
