DECADENT LOW-CARB REDUCED-FAT VANILLA ICE CREAM
Another great, low-carb, reduced-fat dessert recipe! Awesome at the beginning of summer, when you're still trying to lose that holiday weight, but you really want to indulge yourself with a rich and satisfying *chilly* dessert! Steps:
- Blend cream, half and half, Splenda, and vanilla until well incorporated.
- Follow preparation instructions for your particular ice cream maker.
- Note: If the mixture is left in the freezer for a significant period of time, it will become rock hard. Place in the microwave for a few seconds to soften before serving.
- Try adding 1/4 cup creamy peanut butter, or fresh fruit.
- Delicious!

Steps:
- Heat heavy cream over low heat being careful not to let it come to a boil.
- Whisk in one egg yolk at a time and heat, stirring constantly until mixture starts to thicken.
- Remove from heat and cool to room temperature.
- Whisk in sugar-free sweetener, vanilla and pudding mix.
- Place into ice cream freezer and finish as usual.

NO FAT VANILLA ICE CREAM
Recipe by Family Health Network. Have not tried but will be soon. Sounds delicious, and better for you than regular ice cream.

Steps:
- Mix gelatin with boiling water and stir until it dissolves.
- Dissolve sugar in skim milk over a medium heat without letting the mixture boil.
- Remove from the heat and add the gelatin mixture.
- Stir in vanilla.
- Pour into a shallow container and freeze until the mixture has set but not frozen solid. (or use your ice cream machine).
- Mix with an electric beater until the mixture is white and fluffy. It should be at least double it's original volume.
- Freeze until solid.

Steps:
- Heat cream in a heavy saucepan over low heat. Whisk in egg yolks, one at a time. Cook over low heat, stirring constantly until the mixture coats the back of a spoon. DO NOT LET BOIL. Remove from heat.
- Whisk in remaining ingredients. Cool to room temperature. I usually place mine in the refrigerator or freezer if needed sooner. (Don't forget it in the freezer or it will freeze over, you just want to cool it).
- Pour into ice cream maker and freeze according to your machine.
