DECADENT, PEAS WITH BABY ONIONS AND CREAM
A rich side dish, ideally prepared with fresh peas and baby onions. Creamy with a lemony tang, a wonderful side dish, nice enough to eat by themselves! From The Inspired Vegetarian

Steps:
- Peel the onions, and halve them if necessary. (If quite large).
- Melt the butter in a heavy frying pan, and fry the onions for 5 - 6 minutes over a moderate heat, until they begin to be flecked with brown.
- Add the peas, and stirfry for a few minutes.
- Add 1/4 cup water, and bring to the boil.
- Partially cover, and simmer for about 10 minutes, until both the peas and the onions are tender.
- (Frozen peas will cook more quickly).
- There should be a thin layer of water on the base of the pan, add a little more water if necessary, or if there is too much liquid, remove the lid, and increase the heat until the liquid is reduced.
- Using a small whisk, blend the cream with the flour.
- Remove the pan from the heat, and stir in the combined cream and flour, parsley, and seasoning to taste.
- Cook over a gentle heat for about 3 - 4 minutes, until the sauce is thick.
- Taste and adjust the seasoning, add the lemon juice to sharpen, if liked.

PEAS AND ONIONS
One of my favorites! I have been eating this since I can remember! Please don't use canned peas -- the taste is all wrong with those!

Steps:
- Slice onion into thin rings, but not super thin, a little thicker than you would put on a sandwich!
- In a large frying pan melt the butter over medium high heat until slightly sizzling and browning.
- Saute onion rings in the butter, when close to being brown and caramalized, add the peas, and continue to cook for about 8-10 minutes until the peas are done but not mushy!
- Salt and pepper to taste!

- In a large skillet over low heat, stir together the butter and flour. Cook until flour is evenly coated.
- Over medium heat, stir in approximately 1/2 cup of milk at a time until thick.
- Add the peas and onions and cook until hot. Season with salt and pepper.

EASY CREAMED ONIONS
My great-grandma's recipe. Always a favorite at Thanksgiving dinner. Worth using fresh onions instead of frozen.

Steps:
- Bring water and salt to a boil in a small saucepan; cook onions in the boiling water until just tender, 5 to 10 minutes. Drain, reserving 1/2 cup water in saucepan, and return onions to pan. Add butter to onions.
- Mix milk and quick-mixing flour together in a bowl; add to onion mixture. Cook and stir over medium-low heat until thickened, 10 to 15 minutes. Stir in more quick-mixing flour if mixture is too thin.

- Start water boiling in two medium-large saucepans on your stovetop. Add peas to boiling water. Don't salt, but add a pinch of sugar to the water. Cook until just tender, 3-5 minutes. Drain and set aside. Unless potatoes are really tiny, cut in half. Cook in salted boiling water until tender, about 10 minutes (test with a knife). Drain and set aside.
- In a large skillet over medium heat, melt butter. Add onion and cook, stirring, until onion is softened. Add flour and cook, stirring constantly, for about 1 minute. Slowly begin adding milk, stirring continuously, until well combined. Add cooked peas and potatoes and salt and pepper. Reduce heat slightly and allow sauce to simmer until thickened to a creamy sauce. Taste and add more salt and pepper, if needed (should not taste bland). Remove to a serving dish.

- Bring a large pot of water to a boil. In a large, deep skillet, heat the oil. Add the garlic and cook over moderate heat until golden, about 3 minutes. Discard the garlic. Add the pancetta to the skillet and cook over moderately high heat, stirring occasionally, until golden and crisp and the fat has been rendered, about 5 minutes. Using a slotted spoon, transfer the pancetta to a bowl.
- Pour off all but 2 tablespoons of the fat from the skillet. Add the cream and scrape up any browned bits from the bottom of the skillet, then pour into a medium bowl. Whisk in the egg yolks and 1/3 cup of the Parmesan cheese.
- Add salt to the pot of boiling water. Add the baby peas and cook just until tender, about 1 minute. Using a slotted spoon, transfer the cooked peas to a bowl.
- Add the spaghetti to the boiling water and cook until al dente; drain. Return the pasta to the pot and add the cream mixture, pancetta and peas. Season with salt and pepper and toss until the sauce coats the spaghetti. Transfer to bowls and serve immediately with the remaining Parmesan.
