Bake for 1 1/4 to 1 1/2 hours at 300 degrees F. Check with a skewer to be sure the cake is cooked through. Cool the cake for 20 minutes before removing it from the pan. Cook's Notes: The recipe can be frozen, triple-wrapped, for up to three months. Adding 1/2 to 1 cup of roughly chopped toasted walnuts or pecans can also add punch and a change of pace to the recipe. Serving suggestions: The cake may be iced with chocolate butter frosting or alternatively simply sift confectioners' sugar 'snow' onto the cake top after cooling or place a slice of cake into a pool of commercial raspberry puree then for decoration add whole fresh raspberries. Top with a dollop of whipped heavy cream.
  • Barely melt the chocolate in a double boiler over gentle heat. Remove from the heat source and pour into a large mixing bowl then cool for five minutes. Add the butter, cream, vanilla, coffee-flavored liqueur, and mix on medium speed until the mixture thickens. FANCY DIRT CAKE

Fancy Dirt Cake image

Recipes for this childhood favorite typically call for purchased cookies, boxed pudding, and imitation whipped cream; in this updated version, everything is made from scratch. (Well-not the gummy worms. But everything else.) The classic presentation is in a flower pot, but a trifle bowl would look nice too.

Provided by Sam Worley

Categories     Birthday     Cake     Kid-Friendly     Custard     Dessert     Back to School     Small Plates

Yield Serves 12

Number Of Ingredients 13

1 batch chocolate shortbread cookies
1 quart whole milk
1 vanilla bean, split lengthwise
4 large eggs
1 cup sugar
1/2 cup cornstarch
1/2 teaspoon kosher salt
1 cup unsalted butter (2 sticks), room temperature, divided
12 ounces cream cheese, room temperature
1 cup heavy cream
Gummy worms and flowers (for decorating)
Special Equipment
A 3.5-quart (or 8-inch) clean plastic or terra cotta flower pot or trifle bowl

Steps:

  • Pulse cookies in a food processor until coarse crumbs form (or place in a plastic bag and pound with a rolling pin); set aside.
  • Pour milk into a medium saucepan; scrape in vanilla seeds and add pod. Heat over medium until just before boiling.
  • Whisk eggs, sugar, cornstarch, and salt in a large bowl. Whisking constantly, pour half of milk mixture into egg mixture. (Putting a wet towel underneath bowl will help stabilize it.) Add egg and milk mixture to remaining milk mixture in saucepan. Cook over medium heat, whisking constantly, until custard is thick and bubbles just a bit, about 7 minutes, then continue to cook 1 minute more.
  • Strain custard through a fine-mesh sieve into a clean bowl; discard vanilla pod. Add 1/4 cup butter and whisk to combine. Cover with plastic wrap, pressing directly on surface of custard, and chill until cold, about 3 hours.
  • Using an electric mixer on medium-high speed, beat cream cheese and remaining 3/4 cup butter in a large bowl until smooth. Add chilled custard and beat until combined.
  • Using electric mixer on medium-high speed, whip cream in a medium bowl until medium peaks form. Using a rubber spatula, gently fold whipped cream into custard to combine.
  • Layer custard and cookie crumbs alternately in flower pot, inserting gummy worms at random, ending with crumbs. Stick a flower or two into cake to decorate, adding more worms on top of "soil" if desired.
  • Do Ahead
  • Custard can be made 1 day ahead; keep chilled.

STUFFED DIRT CAKE

Stuffed Dirt Cake image

What's beneath the field of pretty edible flowers is a surprise that will make just about anyone squeal with delight - cut into the chocolate cake and gummy worms come spilling out.

Provided by Food Network Kitchen

Categories     dessert

Time 50m

Yield 8 to 10 servings

Number Of Ingredients 9

Two 9-inch round chocolate cakes
4 cups chocolate frosting
2 cups gummy worms
32 chocolate wafer cookies, finely crushed (about 2 cups)
2 1/2 cups sweetened shredded coconut
Green food coloring, for decoration
White and yellow royal icings, for decoration
Vanilla wafer cookies, for decoration
Mini marshmallows, for decoration

Steps:

  • Cut a 4-inch circle out of the center of each cake (reserve the small cut-out cake rounds). Put 1 of the cake rings on a cake stand or serving platter and frost with about 1 cup of frosting. Put the other cake ring on top and push down slightly. Fill the hole with gummy worms and 1/2 cup crushed chocolate wafer cookie "dirt". Now cut 1 of the small cake rounds in half horizontally to make two thinner rounds. Use one to fill the hole on the top of the cake. Frost the top and sides of the cake with the remaining frosting.
  • Dye the coconut: Have ready resealable plastic bags or plastic containers. Add the coconut to the bag along with 20 to 25 drops of food coloring. Seal and shake vigorously until the coconut is evenly dyed. Add more food coloring, one drop at a time, as needed to get bright, vibrant colors.
  • Fill the piping bags or resealable bags with royal icing. Pipe small flower petals or flower outlines onto the vanilla wafer cookies with white royal icing, then pipe circles of yellow royal icing in the centers of the flowers to create daisies. Let dry thoroughly before using. Press the remaining 1 1/2 cups crushed chocolate wafer cookie "dirt" onto the sides of the cake to evenly coat. (It's alright if some of the chocolate frosting shows through.) Sprinkle the top only with the dyed coconut so that it looks like grass. Place the decorated vanilla wafer cookies on top of the cake to look like a field of flowers. Use mini marshmallows to prop some of the cookies up at a slight angle.

CHEF JOHN'S CHOCOLATE DECADENCE

Chef John's Chocolate Decadence image

This 'flourless' chocolate cake was all the rage in the 1980s. As I vaguely remember, the decade celebrated decadent overindulgence and this dessert is that and more. By modern standards, this cake is ridiculously rich. In fact, some of you may find it too intense, but most true chocolate fiends will be in heaven. Serve with ice-cold fresh raspberry sauce.

Categories     Desserts     Cakes     Holiday Cake Recipes

Time 2h

Yield 12

Number Of Ingredients 7

18 ounces semisweet chocolate, chopped
10 tablespoons unsalted butter
5 large eggs, at room temperature
4 teaspoons white sugar
4 teaspoons all-purpose flour
1 pinch cayenne pepper
1 pinch salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Butter and flour a 9-inch cake pan.
  • Melt semisweet chocolate and unsalted butter together in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula, until chocolate and butter are completely melted and combined. Remove from heat.
  • Beat eggs and sugar together in a bowl with a whisk or an electric mixer until pale and very thick, 5 to 10 minutes. Sift in flour, cayenne, and salt; whisk to combine.
  • Pour 1/4 of the egg mixture into chocolate mixture; stir to combine. Pour chocolate mixture into remaining egg mixture and stir until cake batter is combined. Pour batter into prepared cake pan.
  • Bake in the preheated oven until just barely set, with a jiggle below the surface, 14 to 15 minutes. Cool to room temperature, wrap in aluminum foil, and refrigerate until chilled, at least 1 hour.
