This recipe was suggested by a key lime pie recipe that Emeril Lagasse has published. Note: This recipe is really sweet. Serve small slices.

Number Of Ingredients 6

2 (14 ounce) cans sweetened condensed milk
3 bakers unsweetened chocolate squares
3 bakers semi-sweet chocolate baking squares
1 egg
1 graham cracker pie crust
whipped cream, for topping

Steps:

  • Heat oven to 350°F.
  • Put milk into a sauce pan or dounle boiler. Add chocolate and beaten egg.
  • Heat gently until chocolate is melted, stirring constantly.
  • Pour into Graham Cracker crust.
  • Bake 15 minutes.
  • Cool and then chill for at least 2 hours.
  • Slice and top each slice with whipped cream.

3 1/2 cups half-and-half
2/3 cup plus 2 tbsp. sugar
1/4 cup cornstarch
9 egg yolks
9 oz. semisweet chocolate,
finely chopped
2 oz. unsweetened chocolate,
finely chopped
2 1/2 tsp. vanilla extract
2 c whipping cream for topping

Steps:

  • Whisk together the eggs, sugar, and cornstarch until blended in a microwave safe bowl. Stir in half-and-half. Cook in microwave 1 minute at a time. Stir well and continue at 1 minute intervals until the mixture becomes thick. This will take approximately 3-4 minutes. Immediately pour through a fine strainer to remove any lumps. Stir in the chocolate and the butter cut into small pieces into the mixture until the chocolate and butter has melted. Cover with saran wrap to prevent skin. Cool in refrigerator for 3-4 hours. Scoop into favorite pie crust and top with sweetened whipped cream and chocolate shavings.

1 (9 inch) pie crust, baked
3 egg yolks, beaten
1 ½ cups white sugar
3 tablespoons cornstarch
½ cup unsweetened cocoa powder
½ teaspoon salt
3 cups milk
1 tablespoon butter
1 ½ teaspoons vanilla extract
1 cup frozen whipped topping, thawed

Steps:

  • In a large mixing bowl, cream together egg yolks and sugar. Mix in cornstarch, cocoa powder, and salt. Add milk and stir gently.
  • Pour mixture into a large saucepan and cook over medium heat, stirring constantly, until boiling. Remove from heat. Stir in butter or margarine and vanilla extract. Cool slightly, then pour mixture into pastry shell. Chill before serving. Garnish with whipped topping.
