1/2 cup unsweetened Dutch-process cocoa (spooned and leveled), plus more for pans
2 cups all-purpose flour (spooned and leveled)

1/2 teaspoon salt
1 1/2 cups packed light-brown sugar
2 large eggs plus 2 large egg yolks, room temperature
6 ounces bittersweet chocolate, melted
1 teaspoon pure vanilla extract
1 cup low-fat buttermilk
Dark-Chocolate Ganache

Steps:

  • Preheat oven to 350 degrees. Butter two 8-inch round cake pans; dust with cocoa, tapping out excess. Line bottom of each pan with a round of parchment paper; set aside. In a medium bowl, whisk together flour, cocoa, baking powder, baking soda, and salt; set aside.
  • In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition; beat in chocolate and vanilla. With mixer on low, alternately add flour mixture in three parts and buttermilk in two, beginning and ending with flour mixture.
  • Divide batter between prepared pans; smooth tops. Bake until a toothpick inserted in center of a cake comes out clean, 40 to 45 minutes. Cool in pans 15 minutes; run a knife around edge of each pan, and invert cakes onto a wire rack to cool completely.
  • Set a rimmed baking sheet upside down on a work surface. Place one cake on sheet, and spread top with 1/3 of ganache. Place second cake on top, and spread remaining ganache over top and sides of cake. Using two wide metal spatulas, carefully transfer frosted cake to a serving platter.

250 grams butter (at room temperature)
345 grams sugar (fine granulated, approximately 435 ml or 1 ¾ cups)
4 large eggs
1 tsp vanilla extract
325 grams cake flour (approximately 585 ml or 2 1/3 cups cake flour, sifted)
25 ml baking powder (approximately 5 level teaspoons)
65 grams cocoa powder (approximately 165 ml or 2/3 cup)
125 ml hot water (approximately ½ cup)
125 ml milk (approximately ½ cup)
2 Mars chocolate bars (or Two Bar one bars)
100 grams 70% cocoa chocolate
160 grams Nestle dessert cream (1 small can)
1 tbsp Maple syrup or honey
1 tsp butter
125 ml Nestle caramel or dulce de leche
250 ml fresh cream (whipped until stiff peaks)
2 bananas (sliced and splashed with lemon juice to prevent browning)
200 grams Raspberries or any other berries for decoration (approximately 1 cup)
125 ml flaked almonds (approximately ½ cup)

Steps:

  • Pre-heat the oven to 180 degrees Celcius or 160 fan / 350 F / Gas mark 4.
  • Beat together the butter and sugar until the sugar is dissolved and the mixture is light and creamy. This may take between 5-10 minutes depending on the type of cake mixer you are using.
  • Mix the cocoa powder and 125 ml hot water to form a thick paste. Add the milk and work out any lumps and leave to cool until required.
  • Add the eggs to the butter and sugar mixture one at a time and beat thoroughly between each addition.
  • Add the vanilla extract and ensure that you scrape the sides of the bowl to mix in all the butter and sugar at the bottom and sides.
  • Fold the flour and baking powder into the butter mixture in three batches, alternating with the cocoa and milk mixture.
  • Spoon into a greased baking tin and bake for 40-45 minutes. It may require a shorter baking time if you are using a fan assisted oven.
  • You may use the same batter for cupcakes and they will take about 12 - 15 minutes.

4 extra-large eggs at room temperature
1 1/3 cups Hershey's chocolate syrup
1 tablespoon pure vanilla extract
1 cup all-purpose flour
1/2 cup heavy cream
8 ounces good semisweet chocolate chips
1 teaspoon instant coffee granules
Candied violets or edible gold leaf, for decoration (optional)

Steps:

  • Preheat the oven to 325 degrees. Butter and flour an 8-inch round cake pan, then line the bottom with parchment paper.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. Add the eggs, one at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat, or the cake will be tough.
  • Pour the batter into the pan and bake for 40 to 45 minutes, or until just set in the middle. Don't overbake! Let cool thoroughly in the pan.
  • For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
  • Place the cake upside down on a wire rack and pour the glaze evenly over the top, making sure to cover the entire cake and sides. You can tilt the rack to smooth the glaze. Decorate with candied violets, if desired, or gently crumble the gold leaf and place it on the center of the cake. Do not refrigerate.

Steps:

  • Preheat oven to 350°. Line bottoms of 3 greased 9-in. round baking pans with parchment; grease paper. In a large bowl, whisk flour, sugar, cocoa and baking soda. Beat in mayonnaise, coffee and vanilla. Transfer batter to prepared pans. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For filling, in a small heavy saucepan, mix sugar and cornstarch. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat; stir in vanilla. Cool completely. In a large bowl, cream butter. Gradually beat in cooled mixture. Stir in chocolate chips., For ganache, place chocolate in a large bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; let stand 5 minutes. Stir with a whisk until smooth. Stir in vanilla. Cool to room temperature, stirring occasionally. Refrigerate, covered, until cold. Beat ganache just until soft peaks form, 15-30 seconds (do not overbeat)., Place 1 cake layer on a serving plate; spread with half of the filling. Repeat layers. Top with remaining cake layer. Frost top and sides of cake with ganache. In a microwave-safe bowl, combine chocolate, cream and butter. Microwave at 50% power for 1-2 minutes or until smooth, stirring twice. Cool slightly, stirring occasionally. Drizzle over cake, allowing some to flow over sides. Refrigerate at least 2 hours before serving.

3/4 cup cocoa powder
1 1/2 teaspoons baking soda

1 (12 ounce) package chocolate chips

Steps:

  • grease and flour pans. Combine dry ingredients. Add eggs, milk, oil and vanilla. Beat on medium for 2 minutes. Stir in 1 Cup boiling water. (batter will be thin) Pour into pans. Bake 30 minutes at about 350. cool and freeze cake.
  • For the chocolate ganache frosting: combine chocolate chips and heated whipping cream and stir until smooth. Put over the frozen cake and the ganache will set faster. Store in the fridge.

½ cup Dutch-process cocoa powder, sifted
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon fine sea salt
⅓ cup full fat sour cream
¼ cup vegetable oil
1 jumbo egg, room temperature
2 teaspoons vanilla extract
½ cup hot water
⅓ cup heavy cream
¼ cup unsalted butter, cut into chunks
2 oz good quality dark chocolate (60-70%), finely chopped
⅓ cup granulated sugar
⅓ cup Dutch-process cocoa powder, sifted
1/3 cup sour cream, room temperature
1 teaspoon vanilla extract
pinch fine sea salt

Steps:

  • Preheat oven to 325 degrees F. Lightly butter or grease the bottom and sides of an 8-inch round baking pan; line the bottom with a round of parchment paper.
  • In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt.
  • In another bowl or 2-cup glass measuring cup, whisk together sour cream, oil, eggs, and vanilla until evenly incorporated. Make a well in the center of the dry ingredients and pour in sour cream mixture. Stir until nearly combined and just a few streaks of dry ingredients remain.
  • Pour in hot coffee or water and stir until smooth (it will start off very sloppy, but will incorporate eventually. Use a whisk if you're having trouble.)
  • Pour batter into prepared pan, spreading the batter into an even layer.
  • Bake for 35 to 40 minutes or until center is springy and a toothpick inserted near the center comes out with just a few moist crumbs attached (no gooey batter). Remove from oven and let cool on a wire rack until pan is cool enough to touch, then invert on a wire rack to cool completely.
  • Combine cream and butter in a small saucepan. Stir gently over medium heat until butter is melted.
  • Remove from heat and stir in chopped chocolate. Gently stir until completely melted (if the residual heat isn't quite enough to melt the chocolate, return to a low burner for 30 seconds, then remove from heat and continue stirring).
  • Add sugar, cocoa powder, and salt and whisk until incorporated; it will look like a slightly grainy brownie batter at this point.
  • Add sour cream and vanilla and whisk until smooth and shiny. Set aside and let cool until slightly thickened and spreadable, about 15 to 30 minutes depending on the temperature of your kitchen, stirring occasionally to ensure even cooling.
  • Generously spread frosting onto cooled cake, swirling with the back of a spoon or an offset spatula.
  • Slice, serve, and enjoy! Cake will hold at cool room temperature for a few hours, otherwise refrigerate until ready to serve. Store leftovers in an airtight container in the refrigerator for up to 5 days.

  • Top with third layer, frost top and sides of cake.

1 package two layer devil's food cake mix
1 1/3 cups water
1/2 cup vegetable oil
3 eggs
16 ounces good quality semisweet chocolate, chopped (can use good quality choc. chips)
1 1/3 cups heavy cream
1/4 cup unsalted butter

Steps:

  • Prepare cake mix as directed on package, using water, oil and egg measurements above.
  • Bake in two greased and floured 8" round pans at 350 degrees for 35-45 minutes.
  • Cool in pans 10 minutes, remove from pans and cool completely on wire racks.
  • Melt chocolate in medium saucepan over low heat.
  • Heat cream and butter together in a large saucepan until it boils.
  • Pour cream over chocolate and beat with wire whisk until smooth. Cool 20 minutes.
  • Line 9" springform pan with waxed paper. Cut cooled cake into cubes. Place cake cubes in large mixer bowl.
  • Pour 1-1/3 cups ganache over the cake cubes and mix on low speed with an electric mixture until texture is like thick fudge. Spread and press evenly in prepared pan, smoothing top. Freeze for one hour.
  • Unmold cake, place on serving plate, remove waxed paper, and coat cake on the top and sides with remaining chocolate ganache. Store in refrigerator. 16-20 servings.

1 cup unbleached white flour
1 cup pastry flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 cup sweetened cocoa powder
1 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/2 cup sugar (I use turbinado sugar)
1 cup original soymilk
1 cup pure maple syrup
1/2 cup safflower oil
2 teaspoons apple cider vinegar (Braggs)
1 teaspoon vanilla extract
1/2 teaspoon almond extract
4 cups non-dairy chocolate chips (I use Sunspire organic semi-sweet)
1 cup vanilla-flavored soymilk
1 tablespoon brewed coffee
1/4 cup pure maple syrup

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix flours, baking soda, baking powder, cocoa, salt, cinnamon, and sugar. In another bowl, mix 1/2 cup water, original soymilk, maple syrup, vinegar, vanilla extract, and almond extract. Pour wet ingredients slowly into dry, combining as you pour. Mix well to combine.
  • Line two 9-inch cake pans with parchment paper, or waxed paper. Divide batter evenly into both cake pans. Bake 40 to 45 minutes, or until tester comes out clean. Remove from oven and let cool on wire racks about 30 minutes.
  • To prepare frosting, put chocolate chips, vanilla soymilk, coffee, and syrup into a double boiler. Heat until chocolate chips melt, blend all ingredients. Set aside to cool, immersion blend about 1 minute. Cool in refrigerator about 1 hour. Warm slightly before frosting cake.
  • (Also, the frosting recipe yields enough to frost 2 layer cakes. So, you'll definitely have more than enough. It's also really good melted as a topping on soy ice cream).
