GERMAN APPLE DAPPLE CAKE
More apples than cake! Topped with a rich caramel sauce.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan, or a 10 inch tube pan. Stir the flour, baking soda and salt together and set aside.
- In a large bowl, cream the oil, eggs, 1 cup brown sugar and 2 teaspoons vanilla. Add the flour mixture and mix well. Stir in the chopped apples and nuts.
- Pour batter into prepared pan. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- For the Topping: In a saucepan, combine 1 cup brown sugar, 1/2 cup butter and 1/4 cup cream. Bring to a boil, and continue boiling for 3 minutes. Cool slightly and pour over warm cake.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
- Combine oil, butter or margarine, and sugar together. Beat well with a mixer. Add eggs, flour, baking soda, salt, and vanilla; mix well. Stir in apples, coconut, raisins, and walnuts. Pour batter in prepared pan.
- Bake for 90 minutes. Remove cake from oven. Let it cool in the pan for a few minutes, and then remove from pan.
- If desired, make glaze. In a small saucepan, heat brown sugar, butter or margarine, and milk. Bring mixture to boil, and stir for 1 minute. Pour over warm cake.

APPLE DAPPLE CAKE
This recipe was posted in our newspaper. It was made by my friend and also grandmother to 2 of my grandchildren. Her name is Glenda Strouse she told me she got this recipe 30 years ago and she actually served this to Tom Coughlin (now the Giants coach) when he came to her house in the early 80s to recrute her son Tommy to play for Boston College. I thought it was fitting to make it for the Super Bowl this year.

- Mix all dry ingredients together and set aside.
- Put the wet ingredients, not the apples, in your stand up mixer or a mixing bowl and mix until blended. Gradually add the dry ingredients to the wet. Batter will be stiff. Fold in apples.
- Smooth batter into a greased 13 x 9 pan and bake in a preheated oven, 350°, for 30 to 40 minutes. I baked mine to 35 minutes.
- 5 to 8 minutes before the cake is done baking, 35 minutes, bring to a boil for a few minutes about 4 minutes, 1 cup of brown sugar, 1/4 cup milk and one stick of butter. Turn off heat and add nuts, stir and pour over cake. Place cake back in oven for about 5 minutes more or until the top is bubbly and browned.
- I made this recipe according to her instructions but I am sure you can substitute applesauce for the oil and use splenda. The cake is very moist, good and honestly isn't overly sweet, as I thought it would be.

- Sift dry ingredients: flour, salt, soda, cinnamon and cloves.
- Add 1/3 cup dry mixture to egg mixture then 1/2 cup buttermilk then.
- add another 1/3 cup dry mixture and another 1/2 cup buttermilk.
- ending with 1/3 cup dry mixture. Mix just until all flour is incorporated (do not overmix).
- Stir in vanilla, nuts and apples.

- Pour glaze over hot cake.
- Let cool in pan for 1 hour.
