- In a large serving bowl, combine the first six ingredients. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Just before serving, shake dressing and pour over salad; toss to coat.

DEAN & DELUCA GRAIN AND CRANBERRY SALAD
Steps:
- Cook grains individually. As they are cooling in a large bowl, drizzle on about a tsp of olive oil for each cup of grain, just to moisten and separate.Add fruits and nuts , etc when cool. Dress with olive oil, juice of the oranges, 1 T. vinegar, salt and pepper. Can add chopped fresh Italian flat parsley, too, or fiely chopped red and yellow sweet peppers, or a little onion.
CRANBERRY BEAN SALAD
Cranberry beans, cucumber, and tomatoes come together in this light and refreshing salad that is perfect for summertime cookouts. For best results, make this a day ahead of time to allow the ingredients a chance to get acquainted.

Steps:
- Sort and rinse cranberry beans. Place in a pot with water over medium-high heat; cover and bring to a boil. Reduce heat to medium-low and simmer until beans are tender, about 1 hour. Make sure beans are covered with water during the entire cooking process. Drain and set aside.
- Whisk together olive oil, vinegar, parsley, dill, salt, and pepper in a bowl. Add cucumber, red onion, and tomatoes; stir to combine. Gently fold in cooked cranberry beans. Cover and refrigerate for at least 30 minutes. Season with salt and pepper.

CRANBERRY PECAN SALAD
A sweet but zesty salad with a unique twist of carmelized pecans. Try serving for brunch along with "Baked French Toast" and "Bacon and Onion Quiche"

Steps:
- Start by carmelizing pecans.
- Melt butter in pan.
- Add brown sugar and stir unti mixture bubbles and doesn't appear to greasy or too dry.
- Add pecans, stir and cook until well coated.
- Place on cookie sheet to dry and cool.
- Prepare the salad dressing.
- Mix balsamic vinegar and olive oil.
- Add jam, orange juice and ginger.
- Put greens, cranberries, cheese and carmelized pecans in a salad bowl.
- Toss with salad dressing and serve immediately.
- Try serving for brunch along with"Baked French Toast" and"Bacon and Onion Quiche".
