Steps:
- Preheat the oven to 400º F. Lightly butter a 9x13 baking dish or spray with nonstick cooking spray.
- Stir together the diced potatoes, half of the cheddar cheese, cream of chicken soup, sour cream, melted butter, onion, salt, pepper, and garlic in a large mixing bowl. Spread into the prepared baking dish.
- Bake until the potatoes are fork tender, about 30 minutes and then top the hashbrown casserole with the remaining cheddar cheese. Return the hashbrown casserole to the oven until the cheese has melted.
- Serve warm.

Steps:
- Bring a large pot of salted water to a boil. Drop in potatoes, and cook until tender but still firm, about 15 minutes.
- Transfer potatoes to a large bowl, and mash until smooth. Mix in the cream cheese, sour cream, onion powder, salt, pepper and butter. Cover, and refrigerate 8 hours, or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Spread potato mixture into the prepared baking dish, and bake in the preheated oven about 30 minutes.

- Butter a 9 x 13 x 2 inch casserole dish.
- In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
- In large bowl, whisk together eggs, milk, and salt until thoroughly combined.
- Evenly distribute half the bread into the prepared casserole dish. Sprinkle with half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat layers.
- Pour egg mixture evenly over casserole.
- Cover and refrigerate overnight, or bake immediately.
- When you're ready to bake the casserole, preheat oven to 325 F. Bake uncovered for 55-60 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.
- If desired, sprinkle the casserole with sliced green onions. Serve warm.
