BAKED CORN CASSEROLE
A Southwestern twist on the usual corn casserole.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish.
- Heat oil in a small skillet over medium heat. Saute onion until translucent.
- In a large bowl combine butter and cream cheese. Stir in whole kernel corn, creamed corn, chile peppers, and onions. Pour into prepared dish.
- Bake in preheated oven for 15 minutes. Remove from oven and stir in half of the fried onions; sprinkle remaining onions on top. Bake 15 minutes more.

SCALLOPED SWEET CORN CASSEROLE

- Preheat oven to 350°. In a small bowl, mix cornstarch and water until smooth. In a large saucepan, heat butter over medium heat. Stir in corn, evaporated milk, 3/4 teaspoon sugar and 1/2 teaspoon salt; bring just to a boil. Stir in cornstarch mixture; return to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened; cool slightly., In a large bowl, whisk eggs, milk, pepper and the remaining sugar and salt until blended. Stir in bread, onion and corn mixture. Transfer to a greased 8-in. square or 1-1/2-qt. baking dish., Bake, uncovered, 40 minutes. In a small bowl, toss Rice Krispies with melted butter; sprinkle over casserole. Bake 10-15 minutes longer or until golden brown. Freeze option: Cool unbaked casserole, reserving Rice Krispies topping for baking; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

- 1. NOTE: Without actually making this recipe for posting, I've found some pictures from the net. I make this many different ways and now tow are the same. Sometimes I just use corn, rice and cream of mushroom soup. Others I add broccoli with extra mushrooms and chicken. Yes It's ALL GOOD! So please mix and match, make it your own! Share your favorite way to make this with others in the comment section. In a large bowl (or in your baking dish) mix corn, rice, broccoli, cut up Velveeta, mushrooms and if you choose chicken cubes, onions etc. Some like to use Cheez Whiz instead of Velveeta, or even use shredded cheddar or Colby instead) If so I would add the Cheez Whiz after this is mixed, along with the mushroom soup. Use whatever rice you wish for this dish. White, yellow or brown rice. It's all good.
- 2. Once this is mixed add your seasoning, I like to sprinkle it over the top as to spread it out a bit. Seasoning can be cayenne, black pepper etc. NOTE: I do not add salt due to the salt content of both the cheese and the cream of mushroom soup. Now add the mushroom soup and mix well.
- 3. Spread evenly in a backing dish all of the contents you mixed in the bowl. Sprinkle shredded cheddar cheese (or Colby or whatever your cheese choice is) over the top.
- 4. Bake in oven at 350 degrees for 30-40 minutes. Some ovens cook differently and what you are looking for is for the cheese on top to get a little golden color to it.

IOWA CORN CASSEROLE
I only wish I knew how many times I've made this dish for reunions and other get-togethers during the past 40 years. It seems no matter how much I make, there are never any leftovers. I've even gotten long-distance recipe requests from people who've moved away and miss my corn casserole.

- In a skillet, fry the bacon until lightly browned. Remove and set aside. Pour 1/8 to 1/4 cup of bacon drippings over bread crumbs; set aside. Reserve 2 tablespoons drippings; saute green pepper and onion in reserved drippings until tender. Stir in the corn, bacon and half of bread crumbs. , Spoon into a 1-qt. baking dish; sprinkle with remaining crumbs. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

BAKED CORN CASSEROLE
Steps:
- In a medium sized bowl beat eggs then add sugar and flour and mix well.
- Stir in creamed corn and drained corn then carefully mix in milk until well blended.
- Pour into a buttered 2 qt casserole dish and dot top with cut butter.
- Bake at 350 degrees for 75 minutes or until casserole is set.
- Allow to cool for 5 minutes before serving.
SWEET CORN CASSEROLE
This is definately an EASY "comfort dish". I got this recipe from my MIL soon after my husband and I began dating. She got this recipe from one of her many fellow military wives, during their time as a military family (my FIL was in the Air Force). It is quite sweet but has no added sugar! My hubby loves this!!!
