CHILLED BERRY SOUP
I sampled a cool strawberry soup while visiting Walt Disney World. I enjoyed it so much that the restaurant game me the recipe, but I eventually found this combination, which I like even better. The ginger ale adds a special zing. -Lisa Watson Sparta, Michigan

- Place strawberries in a food processor; cover and process until pureed. Add the ginger ale, milk, sugar, lemon juice and vanilla; cover and process until blended. , Pour into a large bowl; whisk in sour cream until smooth. Cover and refrigerate until thoroughly chilled, about 2 hours.

- 1. 1. Bring water to a boil and stir in sugar until dissolved add orange juice to a boil. 2. Add pitted cherries, peaches, maraschino cherries,mandarin oranges with syrup, raisins and lemon juice. 3. Return to boil, reduce heat and barely simmer while completing remaining procedure. 5. Blend cornstarch and cold water, beating lightly until dissolved. 6. Combine with first mixture and blend well, being careful not to mash or break fruit. 7. Bring just to a boil until thicken and remove from fire. 8. Pour into a clean container, and when partially cooled, refrigerate. Serve in chilled bouillon cups.
COLD FRUIT SOUP
Fruit + soup = excellent combination! This could easily be made with frozen fruits. Time does not include chilling.

- Put the water, cinnamon, lemon juice, bread crumbs, and the lemon rind in large pot.
- Bring to a boil, then add the fruits, reduce heat, and simmer for 25 minutes.
- Puree this mixture in a blender then add the jam, wine, & cranberry juice.
- Mix well then refrigerate.
- Serve when well chilled.

- 1. Rub the strawberries through a fine sieve, or puree them in a blender or food processor. Place them into a large cooking pot.
- 2. Add the sugar, then the sour cream, and mix well. Add the water and wine and heat very slowly over low heat, stirring with a WOODEN SPOON. Do not boil. Serve warm or cold.
- 3. When serving cold, you may garnish with a few whole berries. Can also make this soup using raspberries either alone or with strawberries.

Steps:
- Bring water to a boil; add sugar and salt.
- Make a paste of the cornstarch and a little water; add to boiling mixture, stirring constantly. Mixture will start to thicken in a minute or two.
- Reduce heat to medium-low; add fruits, tapioca, and cinnamon stocks and boil slowly for 1 hour.
- Remove cinnamon sticks.
- Serve hot or cold.
