DATES AND BLUE CHEESE

Dates and Blue Cheese image

Next time you're hosting a few friends, make some magic: Put out a plate of these simple hors d'oeuvres--at once salty and sweet, creamy and crunchy--and watch them disappear.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Time 10m

Yield Makes 12 dates

Number Of Ingredients 4

12 dates, pitted
2 ounces semifirm blue cheese, preferably Gorgonzola piccante or Spanish Valdeon
1 tablespoon sliced almonds, toasted
Honey, for drizzling

Steps:

  • Using a sharp paring knife, cut a slit into each date (remove pits, if needed); stuff with blue cheese. Arrange on a serving platter and sprinkle the almonds on top. Drizzle with honey.

WARM DATES STUFFED WITH BLUE CHEESE AND PECANS

Warm Dates Stuffed With Blue Cheese and Pecans image

Try this as an appetizer at your next bbq. Recipe from Weber's Time to Grill™ by Jamie Purviance.

Categories     < 30 Mins

Time 21m

Yield 6 serving(s)

Number Of Ingredients 6

1 cup balsamic vinegar
1/2 cup granulated sugar
3 ounces soft blue cheese
1/2 cup finely chopped pecans or 2 ounces pecans
24 medjool dates or 1 lb medjool dates
canola oil cooking spray

Steps:

  • If using bamboo skewers, soak in water for at least 30 minutes.
  • Prepare the grill for direct cooking over medium heat (350° to 450°F).
  • In a small saucepan combine the vinegar and sugar. Bring to a simmer and cook until the mixture coats the back of a spoon, about 10 minutes, stirring occasionally. Set aside.
  • In a small bowl mash the blue cheese and pecans together with a fork. Make a small slice the length of each date and pull out the pit. Stuff each date with about 1 teaspoon of the cheese mixture, pressing it closed as much as possible. Thread two dates on each skewer so that the skewer goes through both halves of each date. Lightly spray with the canola oil.
  • Brush the cooking grates clean. Grill the dates over direct medium heat, with the lid closed, until heated through, about 1 minute.
  • Arrange the dates on a platter and let cool for 10 minutes. Serve the dates warm with the glaze.

BACON WRAPPED DATES WITH ALMONDS

Bacon Wrapped Dates With Almonds image

Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

  • Using your preferred method to cook bacon, partially cook the bacon. Make sure it is still pliable when you remove it from heat. Transfer to a plate lined with paper towel and set aside to cool.
  • Using a paring knife, cut a slit into each date. Into each date, stuff a ball of blue cheese and one almond.
  • Hold a stuffed date up to a slice of bacon to assess how to cut the bacon for wrapping. For large slices, cut in half width-wise, then cut each half into thirds. For smaller pieces, cut each slice of bacon into thirds.
