Steps:
- If using bamboo skewers, soak in water for at least 30 minutes.
- Prepare the grill for direct cooking over medium heat (350° to 450°F).
- In a small saucepan combine the vinegar and sugar. Bring to a simmer and cook until the mixture coats the back of a spoon, about 10 minutes, stirring occasionally. Set aside.
- In a small bowl mash the blue cheese and pecans together with a fork. Make a small slice the length of each date and pull out the pit. Stuff each date with about 1 teaspoon of the cheese mixture, pressing it closed as much as possible. Thread two dates on each skewer so that the skewer goes through both halves of each date. Lightly spray with the canola oil.
- Brush the cooking grates clean. Grill the dates over direct medium heat, with the lid closed, until heated through, about 1 minute.
- Arrange the dates on a platter and let cool for 10 minutes. Serve the dates warm with the glaze.

BACON WRAPPED DATES WITH ALMONDS
Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

- Using your preferred method to cook bacon, partially cook the bacon. Make sure it is still pliable when you remove it from heat. Transfer to a plate lined with paper towel and set aside to cool.
- Using a paring knife, cut a slit into each date. Into each date, stuff a ball of blue cheese and one almond.
- Hold a stuffed date up to a slice of bacon to assess how to cut the bacon for wrapping. For large slices, cut in half width-wise, then cut each half into thirds. For smaller pieces, cut each slice of bacon into thirds.
- Wrap dates with bacon pieces. Place stuffed, wrapped dates onto a baking sheet with the seam side down.
