Number Of Ingredients 6

4 cups sugar
1 cup milk
1 pound dates
1 cup chopped nut meats (English walnuts preferred)
1 teaspoons vanilla
1 tablespoon butter

Steps:

  • Combine all ingredients into a large kettle and boil 8 minutes.
  • Let cool, shape into loaf or rolls and wrap in wax paper.
  • May be stored in refrigerator.
  • Put pecans on the outside.

Handed down from my great-grandmother, and one of my father's all-time favorite holiday treats. Store in the refrigerator (rolled in the cloth), and it will keep for weeks. Otherwise, it becomes hard and sugary.

2 cups white sugar
1 cup milk
¼ cup butter
1 cup chopped dates
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Stir sugar, milk, and butter together in a saucepan; bring to a boil without stirring once the boiling begins. Heat until a small amount of syrup dropped into cold water forms a rigid ball or until the mixture reaches 250 degrees F (120 degrees C), about 20 minutes. Immediately remove saucepan from heat and stir dates, pecans, and vanilla into the milk mixture.
  • Thoroughly wet a piece of cheesecloth and lay out onto a flat work surface. Pour the candy mixture into the middle of the cloth and roll the cloth around it to shape into a log.
  • Refrigerate until hard, 8 hours to overnight. Remove log from cloth and slice.

1/4 teaspoon almond extract
7 1/2 ounces marshmallow cream
3 1/2 cups powdered sugar
1 1/2 lbs caramels
2 tablespoons water
1 lb pecans, broken, chopped

Steps:

  • Mix extracts with marshmallow cream and add powdered sugar and knead well.
  • Using your hands to form small rolls.
  • Dip rolls in melted caramel and roll in pecans or peanuts.
  • Chill and wrap in plastic wrap.

1/2 cup raisins
1 cup chopped pecans
1/2 cup flaked coconut

Steps:

  • Position knife blade in food processor bowl; slowly drop half each of dates and raisins through food chute with processor running.
  • Remove date mixture; repeat procedure with remaining dates and raisins.
  • Turn date mixture out onto wax paper; knead in pecans.
  • Shape into a 12-inch log, and roll in coconut.
  • Chill and thinly slice.
  • Yield: one 12-inch log.

2 teaspoons plus 1/2 cup butter, softened, divided
3-3/4 cups confectioners' sugar
1/2 cup nonfat dry milk powder
1/2 cup sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 package (14 ounces) caramels
1 tablespoon milk or half-and-half cream
2 cups chopped pecans

Steps:

  • Butter an 8-in. square pan with 2 teaspoons butter; set aside. Combine confectioners sugar and milk powder; set aside. In a heavy saucepan, combine 1/2 cup butter, sugar and corn syrup; cook and stir until sugar is dissolved and mixture comes to a boil. Stir in confectioners' sugar mixture, about a third at a time, until blended. , Remove from the heat; stir in vanilla. Continue stirring until the mixture mounds slightly when dropped from a spoon. Spread into prepared pan. Cool. , Cut candy into four strips; cut each strip in half. Shape each into a log; wrap in waxed paper and twist ends. Freeze or refrigerate until firm. , Meanwhile, in a microwave, melt caramels with milk, stirring often. Roll logs in caramel mixture, then in pecans. Wrap in waxed paper. Store at room temperature in airtight containers. Cut into slices with a serrated knife.

Another recipe that my wonderful mom made every year for the holidays. I remember a long object rolled up in a kitchen towel, hanging from the clothes line, and this year I found out it was the date nut roll, hung out to dry. I guess it's part of the process. So this year mom came for Thanksgiving and I documented the recipe, of course adjusting for those without a closeline.

3 cups sugar
1 cup milk
1 lb dates, roughly chopped
1 cup walnuts, chopped
2 teaspoons vanilla
1/4 cup margarine

Steps:

  • Mix the sugar and vanilla in a medium saucepan on medium heat.
  • Boil gently until mixture reaches 240 degrees.
  • Take off the heat, and add rest of ingredients, stir well.
  • The mixture will thicken as it cools.
  • Pour onto dampened cloth or waxed paper forming a log.
  • Allow to cool or refrigerate.
  • If desired, coat with chopped nuts or powdered sugar and slice.
