OLD-FASHIONED DATE BARS
Steps:
- Grease 8-inch square baking pan; set aside.
- Combine water, 1/4 cup brown sugar and dates in 1-quart saucepan. Cook over medium-high heat, stirring occasionally, 4-5 minutes or until mixture thickens and comes to a boil. Cool at least 30 minutes.
- Heat oven to 350°F.
- Combine all crust ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Reserve 1 cup.
- Press remaining crumbs into prepared pan. Spoon filling over crust; sprinkle with reserved crumbs. Bake 30-35 minutes or until lightly browned. Cool completely. Cut into bars.

A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

DATE BAR RECIPE
Steps:
- Place the dates and water in a medium saucepan and bring to a boil over medium heat. Once the water starts to boil, reduce the heat and bring to a simmer, stirring occasionally until the water has thickened and the liquid is absorbed, about 20 minutes.
- Preheat the oven to 350 degrees F. Line a 13 x 9 inch baking dish with parchment paper and lightly grease. Set aside.
- In the bowl of a food processor, pulse together the flour, brown sugar, cinnamon, salt and baking soda until combined. Add the butter and continue to process until the mixture resembles coarse sand. Add in the oats and water and pulse until combined.
- Press half of the oat mixture onto the bottom of the prepared baking dish with a spatula or your hands. Bake for 10 minutes or until lightly browned.
- Spread the date mixture over the partially baked crust and then sprinkle the remainder oat mixture over the dates. Lightly press down. Bake for 30-35 minutes or until the tops of the crust is a light golden brown. Let cool completely and then slice into bars or squares. Enjoy!

- In a sauce pan, add dates, water and sugar. Bring to a boil and cook until mixture thickens (about 5 minutes). Remove from heat and stir in vanilla.

- Press half of the flour mixture into the prepared baking pan. Pour filling over the top. Then press the remaining flour mixture over the top of the filling

- Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
- Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
- Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

- Line an 8x8 baking dish with parchment paper and set aside.
- In a food processor, pulse the oats, coconut and salt a few times until combined.
- Add in the nut butter and pitted dates and process until everything is broken down into a crumbly mixture.
- Run the food processor again and stream in the coconut oil 1 tablespoon at a time until a sticky dough forms. It should be able to hold together when pressed between your fingers. You should have to use between 4-6 tablespoons.
- Press the mixture firmly into a lined 8x8 baking dish. The mixture may feel a little oily, but the bars won't taste oily. They will just hold together really well!
- Place the pan in the fridge for about 1 hour until the dough has set. Cut the dough into rectangles or squares. I get about 24 small rectangles.
- Store the bars in an airtight container in the fridge for up to 2 weeks.

- Place oats in a food processor, cover and process until finely ground; set aside. In a large bowl, cream shortening and sugar until light and fluffy. Combine the oats, flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Divide in half.
