GRAMMA'S DATE SQUARES
A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

Delightfully different and studded with dates and walnuts, these quick muffins from Judy Cunningham in Max, North Dakota round out any autumn meal and are also great with coffee or as a snack. TIP: FROZEN MUFFINS STAY DELICIOUS FOR UP TO 3 MONTHS.

- Place dates in a small bowl and add boiling water; let stand for 10 minutes (do not drain). Meanwhile, in a small bowl, beat shortening and sugar until crumbly, about 2 minutes. Beat in egg. , Add dates; beat on low speed until blended. Combine the flour, baking powder, baking soda and cinnamon; stir into date mixture with a wooden spoon just until blended. Stir in walnuts., Fill paper-lined muffin cups two-thirds full. Bake at 350° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Muffins may be frozen for up to 3 months.

Steps:
- Crumble Mixture.
- Mix and then rub together the first 6 ingredients.
- Date Mixture.
- Cut up the dates and cover with water.
- Add sugar and salt.
- Cook until the dates are not lumpy.
- Add Vanilla.
- Assemble in Glass Pan.
- Put in half the crumble mixture in a oblong glass baking pan.
- Gently spread the date mixture over the crumble mixture.
- Spread the rest of the crumble mixture over the date mixture.
- Bake in 350F oven until the top and the bottom are golden brown.
- Cut into bars and serve warm or cold.

- Preheat oven to 355 degrees F (180 degrees C). Grease a 9-inch square baking dish.
- Combine dates, water, 2 tablespoons sugar, and vanilla extract in a saucepan; cook and stir over medium heat until filling mixture forms a paste, about 5 minutes. Add more water if filling gets too thick. Remove saucepan from heat and cool.
- Place flour in a bowl and rub margarine into flour using your hands until mixture resembles bread crumbs; stir in oats and 3/4 cup sugar. Press 1/2 of the mixture into the prepared baking dish. Spoon filling over over crust, smoothing with the back of the spoon, leaving a thin border between the filling and the edge of the dish. Sprinkle the remaining crumble mixture over filling.
- Bake in the preheated oven until top is golden brown, 40 to 45 minutes.

- Preheat the oven to 400 degrees F (200 degrees C). Grease or line 10 cups of a muffin tin.
- Whisk flour, sugar, baking powder, salt, and baking soda together in a bowl. Add dates, separating the pieces as you drop them into the flour mixture. Mix to coat.
- Whisk buttermilk, egg, and butter together in a small bowl. Fold buttermilk mixture into flour mixture until just combined.
- Spoon batter into prepared muffin tin.
- Bake in the preheated oven until a toothpick inserted in the largest muffin comes out clean, about 15 minutes.

- Preheat oven to 425 degrees.
- Combine first 5 ingredients in saucepan. Bring to a boil set aside
- Combine butter and dry ingredients in bowl until crumbly
- Pat half the crumb mixture into a 8 by 13 inch baking pan.
- Pour dates mixture over crumbs spreading evenly to edges.
- Pat remaining crumb mixture over top.

- Preheat oven to 400 degrees. Line two 12-cup muffin tins with paper liners.
- Bring coffee to simmer in small saucepan. Add dates, remove from heat, and cool to room temperature. Drain and chop dates. Reserve liquid for another use.
- In a large bowl, whisk together flours, salt, and baking soda. In a separate bowl, whisk together eggs, honey, sugar, oil, and milk.
- Whisk wet ingredients into dry ingredients. Fold in dates and walnuts. Fill muffin cups three-quarters full.
- Bake 20 minutes, or until golden brown and toothpick inserted into center of muffin comes out clean.
- Cool 5 minutes in pan before removing.
